You know that moment in a restaurant when you cut into a chocolate lava cake and that river of molten chocolate pours out? And everyone at the table goes โoooohโ?
You can do that at home. In 20 minutes. With 6 ingredients. And you donโt need to be a pastry chef.
This chocolate lava cake is rich, deeply chocolatey, with crisp edges and a gooey, molten, almost liquid center that oozes like lava when you cut it. Itโs the ultimate date night dessert, the โI need chocolate NOWโ dessert, and the โI want to impress people without trying too hardโ dessert.
I first made these for Valentineโs Day because I thought I needed to be fancy. I was nervous – what if the center doesnโt ooze? What if itโs raw? Turns out, itโs almost impossible to mess up if you know the 1 trick: slightly underbake. Thatโs it. Slightly underbaked = gooey lava. Fully baked = just chocolate cake (still good, but not lava).
Why This Chocolate Lava Cake Works
1. Gooey molten center every time. No guessing. We bake just until edges are set but center is still soft and jiggly. That soft center is the lava. Itโs not raw batter, itโs just barely set chocolate custard that melts when you cut it.
2. Only 6 ingredients, no mixer. Dark chocolate, butter, eggs, sugar, flour, vanilla. Thatโs it. Whisk by hand. Ready in 20 minutes from craving to eating. Faster than my homemade ice cream no machine recipe needs to freeze.
3. Restaurant-style at home. Looks fancy, tastes fancy, but secretly easy. Serve with vanilla ice cream and you have that $12 restaurant dessert for like $2. If you love rich chocolate desserts like my cottage cheese chocolate mousse high protein, youโll love this warm, gooey version.
If you want rich, gooey, easy chocolate lava cake that actually oozes, this is it.
Ingredients
Real chocolate, real butter, real easy.
For the lava cakes (4 ramekins):
- Dark chocolate – 6 oz (170g), chopped – 60-70% dark, good quality, not chocolate chips (they have stabilizers)
- Unsalted butter – 1/2 cup (115g) – plus extra for greasing ramekins
- Large eggs – 2 whole + 2 yolks – yolks make center extra rich and gooey
- Granulated sugar – 1/4 cup (50g)
- Powdered sugar – 2 tbsp for dusting + 1/4 cup for batter (optional, makes it sweeter)
- All-purpose flour – 2 tbsp (16g) – yes, only 2 tbsp! Thatโs why center stays molten
- Unsweetened cocoa powder – 1 tbsp for dusting ramekins
- Pure vanilla extract – 1 tsp
- Fine sea salt – pinch
For serving: Vanilla ice cream, powdered sugar, fresh berries, whipped cream
No ramekins? Use muffin tin – makes 6 smaller lava cakes, bake 8-10 min.
Equipment
- 4 ramekins (6 oz each) or muffin tin
- Heatproof bowl + saucepan for double boiler (or microwave)
- 2 mixing bowls, whisk, spatula
- Baking sheet
How to Make Chocolate Lava Cake
Fancy dessert, not fancy process.
STEP 1: Melt chocolate & butter
Preheat oven to 425ยฐF (220ยฐC). Generously butter 4 ramekins and dust with cocoa powder (tap out excess). This ensures they slide out cleanly. Place ramekins on baking sheet.
Chop chocolate, add to heatproof bowl with butter. Melt over simmering water (double boiler) stirring until smooth and glossy. Or microwave in 20-sec bursts stirring. Let cool 2 minutes.
STEP 2: Whisk eggs & sugar
In large bowl, whisk whole eggs, egg yolks, granulated sugar, and powdered sugar (if using) + vanilla + salt until pale, slightly thickened, and fluffy – about 1 minute vigorous whisking. Should be light yellow and leave trail.
Pour slightly cooled melted chocolate into egg mixture, whisk until smooth and combined. Rich, glossy, smells incredible.
Sprinkle flour over top and fold gently with spatula until just combined – 8-10 folds. Donโt overmix or cakes get tough.
STEP 3: Fill ramekins
Divide batter evenly among 4 prepared ramekins – about 3/4 full. Batter will be thick, shiny, dark chocolate.
You can bake immediately or refrigerate up to 24 hours (add 1-2 min bake time if cold from fridge – great make-ahead for date night!).
STEP 4: Bake – the important part
Bake 12-14 minutes until edges are set and firm, tops look set and slightly cracked, but centers still soft and jiggly when you gently shake ramekin. They should jiggle like Jell-O in center, not slosh like liquid.
12 min = very gooey, almost liquid lava. 14 min = gooey but more like thick fudge. I like 13 minutes – perfect oozing.
Donโt overbake! Overbaked = no lava, just chocolate cake. If you want just cake, bake 16 min. But we want lava.
STEP 5: The oozing moment
Let cool 1 minute only! Then run thin knife around edge, place serving plate on top, invert quickly, tap, lift ramekin. Should slide out. If it doesnโt, run knife again.
Dust with powdered sugar, add scoop of my homemade ice cream no machine recipe or vanilla ice cream, and cut immediately.
Watch that molten center flow… thatโs the money shot. Rich, gooey, warm chocolate lava.
3 Rules for Gooey, Not Raw, Lava Center
1. Good chocolate, chopped. Donโt use chocolate chips – they have wax and donโt melt as smooth. Use baking bar, chopped. 60-70% dark gives rich, not too sweet, perfect lava.
2. Only 2 tbsp flour. Yes, really. Flour sets edges, but little flour keeps center molten. More flour = cake, not lava.
3. Jiggly center = perfect. Edges set, center jiggles like Jell-O when shaken. That jiggly center is NOT raw, itโs molten custard that will be liquid when cut. If center doesnโt jiggle, you overbaked.
Variations
Peanut Butter Lava Cake: Place 1 tbsp peanut butter in center of each ramekin after filling half batter, then top with remaining batter. PB + chocolate lava!
Salted Caramel Lava: Add 1 tbsp salted caramel sauce in center same way. Sweet-salty gooey.
High Protein Lava Cake: Use 2 whole eggs + 1 scoop chocolate protein powder + reduce flour to 1 tbsp + add 2 tbsp cottage cheese blended smooth like my cottage cheese chocolate mousse high protein and high protein pancakes easy recipe. Still gooey, 18g protein!
Pumpkin Spice Lava (Fall): Add 2 tbsp pumpkin puree + 1/2 tsp pumpkin spice to batter. If you loved my pumpkin bars with cream cheese frosting, pumpkin pie cupcakes soft cozy, and pumpkin cookie recipe quick easy, this is your chocolate fall mashup.
What to Serve With
Vanilla ice cream is classic – hot cake + cold ice cream = heaven. Also great with whipped cream and berries, or dust of cocoa.
For brunch dessert, serve after my sheet pan pancakes easy weekend breakfast or Belgian waffles recipe easy crispy golden – sweet breakfast + rich chocolate dessert = perfect weekend.
Storage & Make-Ahead
Make-ahead (best trick): Make batter, fill ramekins, cover, refrigerate up to 24 hours. Bake straight from fridge, add 1-2 min. Perfect for dinner party – prep ahead, bake when guests arrive, serve warm.
Fridge baked: Baked lava cakes can be refrigerated 2 days, but center will set and wonโt ooze as much when reheated. Still tasty chocolate cake, but not lava. Best eaten fresh.
Freezer: Freeze unbaked batter in ramekins (wrapped) up to 1 month. Bake from frozen, add 2-3 min.
Common Mistakes
- Overbaking: #1 killer of lava. 12-14 min max. Jiggly center = good.
- Not greasing ramekins well: Sticks and breaks. Butter + cocoa powder every inch.
- Chocolate chips instead of bar: Chips donโt melt as smooth, can get grainy.
