Homemade Ice Cream – No Machine Ice Cream Recipe (2 Ingredients!)

Homemade Ice Cream

You donโ€™t need an ice cream machine. You donโ€™t need to churn for an hour. You donโ€™t need to pay $8 for a pint thatโ€™s half air.

You need 2 ingredients, 5 minutes, and a freezer. Thatโ€™s it. This homemade ice cream no machine recipe is creamy, scoopable, rich, and tastes like real ice cream shop ice cream – because it basically is, just without the fancy machine.

I learned this trick from my uncle who makes ice cream for family BBQs. He laughed when I asked about his machine. โ€œMachine? I use a bowl and a whisk and the freezer does the work.โ€ He was right. Iโ€™ve been making no-churn ice cream ever since, and my kids think Iโ€™m a wizard now.

And yes, it works. No ice crystals, no weird texture, just creamy homemade ice cream.

Why This No Machine Ice Cream Works

1. Only 2 ingredients for base. Heavy cream + sweetened condensed milk. Thatโ€™s the magic. Condensed milk sweetens AND keeps it soft and scoopable in freezer without churning. No eggs, no cooking, no thermometer.

2. No machine, no churn, no babysitting. Whip cream, fold in condensed milk, freeze. The freezer does all the work. Unlike my sheet pan pancakes easy weekend breakfast which needs oven, this needs only freezer.

3. Customizable like crazy. Vanilla base = blank canvas. Add chocolate, peanut butter, cookie dough, fruit, whatever. Iโ€™ll give you 5 variations below. If you loved my cottage cheese chocolate mousse high protein for easy no-bake dessert, youโ€™ll love this even more - same no-bake ease, but frozen.

If you want homemade ice cream without buying a machine youโ€™ll use twice, this is it.

Ingredients

2 ingredients + vanilla. Thatโ€™s literally it.

For the base (makes about 1.5 quarts / 6 servings):

  • Heavy whipping cream - 2 cups (480ml), cold - must be cold, straight from fridge, 36% fat or higher
  • Sweetened condensed milk - 1 can (14 oz / 397g), cold - not evaporated milk! Sweetened condensed.
  • Pure vanilla extract - 2 tsp
  • Fine sea salt - pinch

Optional mix-ins (pick one or two):

  • Chocolate chips, crushed cookies, brownie chunks, peanut butter swirl, caramel, fresh fruit, sprinkles

Dairy-free? Use 2 cans chilled full-fat coconut cream (scoop solid part only) + 1 can sweetened condensed coconut milk. Works amazing!

Equipment

  • Large mixing bowl (cold bowl helps - pop in freezer 10 min if you remember)
  • Electric hand mixer or stand mixer (or whisk and strong arm + 5 extra minutes)
  • Spatula
  • 9x5 loaf pan or freezer-safe container + plastic wrap or lid

How to Make Homemade Ice Cream Without a Machine

STEP 1: Whip cream

Pour cold heavy cream into large cold bowl. Add vanilla and salt.

Whip with electric mixer on medium-high 2-3 minutes until stiff peaks form - when you lift beaters, peaks stand up and donโ€™t flop over. Donโ€™t overwhip to butter! Stop when stiff and fluffy like whipped cream.

STEP 2: Fold in condensed milk

Pour cold sweetened condensed milk over whipped cream.

Fold GENTLY with spatula - cut down middle, scoop up, fold over. Rotate bowl. About 20 folds until no white streaks, but still airy. Donโ€™t stir or whisk or you deflate all that air and ice cream gets dense. Gentle is key.

Batter will be thick, silky, pourable like melted ice cream. Taste it - it already tastes like vanilla ice cream base.

STEP 3: Add mix-ins & freeze

If adding mix-ins, fold them in now gently.

Pour into loaf pan, smooth top. Cover tightly with plastic wrap pressed directly onto surface (prevents ice crystals) + foil or lid.

Freeze at least 6 hours, ideally overnight. Yes, you have to wait. I know. Go make my banana chocolate chip muffins while you wait? Just kidding, use any of my Cookies & Bars recipes.

STEP 4: Scoop!

Scoop with warm ice cream scoop (run under hot water). Look at that creamy texture - no machine, no churn, just smooth, scoopable, homemade ice cream!

Top with chocolate sauce, sprinkles, or eat straight from pan standing in front of freezer. No judgment, I do it too.

3 Rules for Creamy, Not Icy, No-Churn Ice Cream

1. Cold everything. Cold cream, cold condensed milk, cold bowl. Cold whips faster and higher, more air = creamier ice cream.

2. Stiff peaks, but donโ€™t make butter. Whip until peaks stand, then stop. Overwhipped = grainy, buttery texture.

3. Fold, donโ€™t stir. Folding keeps air in. Stirring deflates. Gentle folding = light, creamy, scoopable.

Variations - 5 Flavors From One Base

Chocolate No Machine Ice Cream: Add 1/2 cup cocoa powder to condensed milk before folding + 1/2 cup chocolate chips. Rich like my cottage cheese chocolate mousse but frozen.

Peanut Butter Swirl: After pouring into pan, dollop 1/3 cup peanut butter, swirl with knife. Add chocolate chips for PB cup.

Cookies & Cream: Fold in 1 1/2 cups crushed Oreo cookies. Kidsโ€™ favorite.

Strawberry Cheesecake: Fold in 1 cup diced strawberries + 1/2 cup crushed graham crackers + 2 tbsp cream cheese (softened and whisked into condensed milk first).

Pumpkin Spice (Fall!): Add 1/2 cup pumpkin puree + 1 tsp pumpkin pie spice + 1/2 tsp cinnamon to condensed milk. Tastes like frozen pumpkin pie! If you loved my pumpkin pie cupcakes soft cozy and pumpkin bars with cream cheese frosting, youโ€™ll love this frozen version.

What to Serve With

Great alone, or with warm brownies, pumpkin cookie recipe quick easy cookies crumbled on top, or alongside my high protein pancakes easy recipe for brunch dessert.

Storage & Make-Ahead

Freezer: Covered tightly, 2 weeks best texture, up to 2 months okay. Press plastic wrap directly on surface to prevent ice crystals.

Make-ahead: Perfect make-ahead dessert. Make 2-3 days before party, keep frozen.

Softening: If too hard from deep freezer, let sit on counter 5-10 minutes before scooping.

Common Mistakes

  • Warm cream: Wonโ€™t whip to stiff peaks, flat ice cream. Must be cold.
  • Overmixing after adding condensed milk: Deflates air, icy not creamy. Fold gently.
  • Not covering tightly: Freezer burn and ice crystals. Press plastic wrap onto surface.

FAQ

Can I make without condensed milk?
This specific no-churn method needs condensed milk for soft texture. Without it, you need machine. You can use sweetened condensed coconut milk for dairy-free.

Why is my ice cream icy?
Not whipped enough, or overmixed after adding condensed milk, or not covered tightly. Also freezer too cold? Let soften a bit.

Can I use half-and-half instead of heavy cream?
No, needs 36% fat to whip to stiff peaks. Half-and-half wonโ€™t whip.

Can I add alcohol (like Baileys)?
Yes, 2-3 tbsp Baileys or bourbon keeps it even softer and adds flavor. Donโ€™t add more or it wonโ€™t freeze.

How long to freeze?
Minimum 6 hours, overnight best. I know, waiting is hardest part.
