Pumpkin Pie Cupcakes | Soft & Cozy

Leo 2s comments

What if pumpkin pie and a cupcake had a baby? That’s exactly what these pumpkin pie cupcakes are.

Imagine: ultra-soft, moist pumpkin cupcakes that actually taste like pumpkin pie filling – warm cinnamon, nutmeg, a hint of ginger – topped with a swirl of tangy cream cheese frosting and a tiny dusting of cinnamon. They’re cozy, they’re cute, and they don’t require you to wrestle with pie crust at 7am.

I came up with these because I love pumpkin pie but I hate that you need a fork, a plate, and a 2-hour chill. Cupcakes? You can eat them walking around the kitchen while pretending to clean. Much more practical.

And yes, they’re soft. Like, really soft. Like “I meant to save some for tomorrow but oops” soft.

Why You’ll Love These Pumpkin Pie Cupcakes

1. They taste like actual pumpkin pie. Not just pumpkin spice cake. The batter has extra pumpkin, brown sugar, and the same spice blend I use in pie, so each bite is creamy and cozy, not just fluffy.

2. One bowl, no mixer needed for batter. Whisk by hand. No creaming butter for 10 minutes. Perfect when you want quick & easy fall baking.

3. Perfect portion control... sort of. Easier to serve than pie, cuter than bars. If you loved my pumpkin bars with cream cheese frosting, you’ll love these in cupcake form - same cozy vibe, but individual and extra soft.

If you’re looking for that soft & cozy fall cupcake that stays moist for days, this is it.

Ingredients

Simple pantry stuff, nothing fancy.

For the pumpkin pie cupcakes:

  • All-purpose flour - 1 3/4 cups (220g) - spooned & leveled
  • Baking powder - 1 tsp + Baking soda - 1/2 tsp
  • Fine sea salt - 1/2 tsp
  • Ground cinnamon - 1 1/2 tsp
  • Ground nutmeg - 1/2 tsp
  • Ground ginger - 1/2 tsp
  • Ground cloves - 1/8 tsp
  • Granulated sugar - 3/4 cup (150g)
  • Light brown sugar - 1/2 cup (100g), packed - adds that pie-like caramel note
  • Vegetable oil - 1/2 cup (120ml) - keeps them moist like my pumpkin bars
  • Canned pumpkin puree - 1 cup (225g), 100% pumpkin - not pie filling!
  • Large eggs - 2 + 1 yolk - extra yolk = extra soft & rich
  • Pure vanilla extract - 2 tsp
  • Whole milk - 1/4 cup (60ml)

For the cream cheese frosting (my go-to):

  • Full-fat cream cheese - 8 oz (225g), softened
  • Unsalted butter - 4 tbsp (56g), softened
  • Powdered sugar - 2 1/2 cups (300g), sifted
  • Vanilla - 1 tsp + Cinnamon - 1/4 tsp + Pinch salt
  • Heavy cream - 1-2 tbsp if needed

Equipment

  • 12-cup muffin tin + cupcake liners
  • 2 bowls, whisk, spatula
  • Piping bag or zip bag for frosting (or just spread with knife, no judgment)

How to Make Pumpkin Pie Cupcakes

STEP 1: Mix dry & wet

Preheat oven to 350°F (175°C). Line muffin tin with 12 liners.

In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves. In another bowl, whisk both sugars, oil, pumpkin puree, eggs + yolk, vanilla, and milk until smooth and glossy. About 60 seconds.

Pour wet into dry and fold gently 12-15 strokes until no dry streaks. Batter will be thick, smooth, orange-brown. Don’t overmix or cupcakes get tough.

STEP 2: Fill liners

Divide batter evenly among 12 liners - fill 3/4 full. They rise nicely. If you want bakery-tall tops, fill a tiny bit more.

Bake 18-22 minutes. At 18, test with toothpick - you want moist crumbs, not wet batter. They should spring back when lightly touched. They’ll look slightly soft on top - perfect, they set as they cool.

Cool in pan 5 minutes, then move to wire rack to cool completely. Must be fully cool before frosting or frosting slides off (learned that the hard way, twice).

STEP 3: Make frosting & frost

Beat cream cheese and butter 2-3 min until fluffy and smooth. Add powdered sugar in two batches on low, then vanilla, cinnamon, salt. Add cream 1 tsp at a time until pipeable but thick enough to hold swirl.

Pipe or spread onto completely cooled cupcakes. Dust with cinnamon if you’re feeling fancy.

STEP 4: The cozy moment

Look at that crumb - moist, soft, orange, smells like pie. This is the money shot. Soft & cozy indeed.

Serve slightly chilled (my fave, frosting firms up) or at room temp for extra soft.

3 Rules for Pumpkin Pie Texture (Not Just Pumpkin Cake)

1. Extra pumpkin + extra yolk. Most cupcake recipes use 1/2 cup pumpkin. We use 1 full cup + extra yolk. That’s what gives that custardy, pie-like center instead of just spiced cake.

2. Oil, not butter, in batter. Same reason as my pumpkin bars - oil keeps crumb soft and moist for days, especially when refrigerated. Butter firms up.

3. Don’t overbake. Pumpkin cupcakes go from perfect to dry fast. Pull at 18-19 min when toothpick has moist crumbs. They carryover-cook.

Variations

Pumpkin Pie Cupcakes with Graham Crust: Press 1 tsp graham cracker crumbs (crumbs + melted butter) into bottom of each liner before adding batter. Tastes exactly like pie crust!

Chocolate Chip Pumpkin Pie Cupcakes: Add 3/4 cup mini chocolate chips to batter. Kids love this.

Maple Frosting: Swap vanilla in frosting for 1 tbsp pure maple syrup. Pumpkin + maple = fall heaven.

What to Serve With

Coffee, obviously. Or spiced apple cider. For a full fall dessert table, serve these cupcakes alongside my pumpkin bars and pumpkin cookies - you’ll have bars, cookies, and cupcakes, all same warm spice family, something for everyone. Your Cookies & Bars and Cakes & Cupcakes covered in one go.

Storage & Make-Ahead

Fridge: Frosted cupcakes need fridge because cream cheese. Covered container, 4 days. They get even more moist day 2.

Room temp (unfrosted): Unfrosted cupcakes can sit covered at room temp 2 days. Frost day of.

Freezer: Freeze unfrosted cupcakes in bag up to 3 months. Thaw overnight in fridge, frost fresh. You can freeze frosted too, but frosting texture softens a bit.

Common Mistakes

  • Using pie filling: Pie filling has sugar + spices already. Will be too sweet and weird. Need 100% pumpkin.
  • Overmixing: Tough cupcakes. Fold gently.
  • Frosting warm cupcakes: Melty disaster. Cool completely. Seriously.

FAQ

Can I make mini cupcakes?
Yes! Use mini tin, fill 3/4, bake 11-13 min. Makes ~24 minis.

Can I use fresh pumpkin puree?
Yes, but drain well. Fresh is watery. Strain 1-2 hours.

Can I make them gluten-free?
Yes, 1-to-1 gluten-free blend with xanthan gum works great.

Why did my cupcakes sink?
Too much pumpkin or underbaked. Measure pumpkin exactly 1 cup, and don’t open oven early.

Can I skip cream cheese frosting?
You can, but why would you? They’re pumpkin PIE cupcakes - frosting is the whipped cream part! If you must, dust with powdered sugar.

🎃 Why these taste like pie, not just spice cake

Most cupcakes use ½ cup pumpkin. These use a full 1 cup (225g) + an extra yolk — that's the custardy, pie-like center. And oil, not butter keeps them soft for days even when refrigerated.

02How to Cook

01
Mix dry & wet

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners. In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. In another bowl, whisk both sugars, oil, pumpkin purée, eggs + yolk, vanilla, and milk until smooth and glossy — about 60 seconds.

Pour wet into dry and fold gently 12–15 strokes until no dry streaks remain. Batter will be thick, smooth, orange-brown. Don't overmix or cupcakes get tough.

02
Fill & bake

Divide batter evenly among 12 liners — fill ¾ full. They rise nicely; for bakery-tall tops fill a tiny bit more. Bake 18–22 minutes. At 18, test with a toothpick — you want moist crumbs, not wet batter. They should spring back when lightly touched and look slightly soft on top — perfect, they set as they cool.

Cool in pan 5 minutes, then move to a wire rack to cool completely. Must be fully cool before frosting or frosting slides right off.

03
Make frosting & frost

Beat cream cheese and butter 2–3 minutes until fluffy and smooth. Add powdered sugar in two batches on low, then vanilla, cinnamon, and salt. Add heavy cream 1 tsp at a time until pipeable but thick enough to hold a swirl.

Pipe or spread onto completely cooled cupcakes. Dust with cinnamon if you're feeling fancy.

04
The cozy moment

Look at that crumb — moist, soft, orange, smells like pie. Soft & cozy indeed. Serve slightly chilled (my fave — frosting firms up) or at room temp for extra soft. Try not to eat them all while standing at the counter.

03Notes

🎃Extra Pumpkin + Yolk

That custardy pie filling vibe comes from a full cup of pumpkin + an extra yolk. Most recipes use½ cup — we double it for that creamy, cozy center.

🛢️Oil, Not Butter

Same trick as my pumpkin bars — oil stays liquid when cold, so cupcakes stay soft and moist for days in the fridge. Butter firms up and dries them out.

⏱️Don't Overbake

Pumpkin cupcakes go from perfect to dry fast. Pull at 18–19 min when the toothpick shows moist crumbs. They carryover-cook as they cool.

🚫100% Pumpkin Only

Pumpkin pie filling is already sweetened and spiced — your cupcakes will be too sweet and gummy. Need pure 100% pumpkin purée.

🥄Don't Overmix

Fold just 12–15 strokes until no dry flour shows. Overmixing develops gluten and turns that soft crumb tough and chewy in the wrong way.

❄️Cool Before Frosting

Warm cupcakes + cream cheese frosting = melty slide-off disaster. Cool completely — I've learned that one twice the hard way.
