3. No chill, no fuss. Many recipes make you chill for 2 hours. Who has time for that when the cookie craving hits? This dough is thick enough to scoop right away.

Ingredients

No weird stuff. Just pantry basics.

For the cookies:

  • All-purpose flour – 2 cups (250g) – spooned and leveled
  • Baking soda – 1/2 tsp + Baking powder – 1/2 tsp – combo gives lift + chew
  • Fine sea salt – 1/2 tsp
  • Ground cinnamon – 1 1/2 tsp
  • Ground nutmeg – 1/2 tsp
  • Ground ginger – 1/4 tsp + Ground cloves – pinch
  • Unsalted butter – 3/4 cup (170g), melted and slightly cooled – melted = chewy
  • Light brown sugar – 3/4 cup (150g), packed
  • Granulated sugar – 1/2 cup (100g)
  • Canned pumpkin puree – 1/2 cup (120g), blotted dry – 100% pumpkin, not pie filling!
  • Large egg yolk – 1 – just yolk keeps them fudgy, not cakey
  • Pure vanilla extract – 2 tsp
  • Optional for rolling: 1/4 cup sugar + 1/2 tsp cinnamon

Pumpkin tip: Scoop 1/2 cup pumpkin onto 2-3 paper towels, press and fold. You’ll be shocked how much water comes out. That’s the secret to chewy, not puffy cookies.

How to Make Pumpkin Cookies – Quick & Easy

Okay, this is embarrassingly easy.

STEP 1: Blot pumpkin & mix dry

Preheat oven to 350°F (175°C). Line baking sheets with parchment.

Blot your pumpkin puree with paper towels as described above. In a medium bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, cloves.

STEP 2: Mix wet

In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Add blotted pumpkin, egg yolk, and vanilla. Whisk until combined. It will look thick and orange and smell amazing.

Pour dry into wet and fold with spatula until just combined. Don’t overmix! Dough will be soft and sticky, like thick muffin batter. That’s normal.

STEP 3: Scoop

Scoop 1.5 tbsp balls (I use a cookie scoop, it’s my favorite kitchen tool that costs like $8). If you want extra pretty, roll each ball in cinnamon-sugar.

Place 2 inches apart – they spread a little. You’ll get about 24 cookies.

STEP 4: Bake

Bake 10-12 minutes. They will look slightly underdone in the center when you pull them out – that’s perfect! They set as they cool and stay soft. If you bake till they look fully done, they’ll be dry. 10 minutes = super soft, 12 = a bit firmer.

Let cool on baking sheet 5 minutes, then move to wire rack. Try not to eat 3 while they’re still hot. I fail at this every time.

STEP 5: The best part

Look at that! Soft, chewy, slightly crackly top, orange inside. Perfect with coffee. Or milk. Or straight off the cooling rack standing in your kitchen at 10pm. Not that I do that.

My 3 Rules for Soft Pumpkin Cookies (Not Cakey)

1. Blot the pumpkin. I know I keep saying it, but it’s the #1 difference between chewy and cakey. 30 seconds with paper towels.

2. Use yolk only. Whole egg adds too much water and protein, making them puffy like cake. One yolk = rich and chewy.

3. Underbake by 1 minute. They firm up as they cool. Pull them when centers still look soft. Trust the process.

Variations You’ll Love

Pumpkin Chocolate Chip Cookies: Add 1 cup semi-sweet chocolate chips. Pumpkin + chocolate = you’re welcome.

Pumpkin Snickerdoodles: Roll dough balls in cinnamon-sugar (1/4 cup sugar + 1 tsp cinnamon) before baking. Crackly, sugary top.

Pumpkin Cream Cheese Frosted Cookies: Make a quick frosting like I use for my pumpkin bars with cream cheese frosting – 4 oz cream cheese + 2 tbsp butter + 1 cup powdered sugar + vanilla. Spread on cooled cookies. Insane.

Healthy-ish: Swap half flour for whole wheat, use 1/2 cup coconut sugar, add 1/2 cup oats. Still soft, a bit heartier.

Storage & Freezing (Because You’ll Want to Make Extra)

Room temp: Store in airtight container 4 days. They actually get softer and chewier day 2. Add a slice of bread in container to keep extra soft.

Freezer – dough: Scoop dough balls, freeze on tray 1 hour, then bag. Freeze 3 months. Bake from frozen, add 2 minutes.

Freezer – baked: Freeze baked cookies in bag up to 2 months. Thaw 20 minutes or microwave 10 seconds for warm cookie emergency.

Don’t refrigerate – they dry out.

Mistakes That Make Cakey Cookies

  • Not blotting pumpkin: Biggest culprit. Water = cakey.
