Banana Chocolate Chip Muffins – Moist & Easy Recipe

Banana Chocolate Chip Muffins

You know those sad, dry banana muffins that taste like banana-flavored cardboard? Yeah, these are NOT those.

These banana chocolate chip muffins are ridiculously moist, soft, bakery-style tall, loaded with melty chocolate chips in every bite, and so easy you don’t even need a mixer. One bowl, 10 minutes prep, and your kitchen smells like a bakery.

I make these every time I have 3 spotty bananas on the counter staring at me with guilt. You know the ones – brown, mushy, you were going to make banana bread but… life happened. This is faster than banana bread, more fun to eat, and my kids actually fight over the last one. My son calls them “chocolate chip cupcakes for breakfast” and I’m not correcting him.

Why These Banana Chocolate Chip Muffins Are So Moist

1. Extra bananas + melted butter. Most recipes use 2 bananas. We use 3 large, super ripe ones. More banana = more moisture + natural sweetness. Melted butter (not oil) adds that rich bakery flavor.

2. Brown sugar + a little sour cream trick. Brown sugar keeps them moist for days, and 2 tbsp sour cream (or yogurt) makes crumb ultra-soft. It’s my secret from my pumpkin bars with cream cheese frosting recipe - same moist magic.

3. Don’t overmix, big chocolate chips. Fold gently, and use a mix of mini + regular chocolate chips so you get chocolate in every single bite, not just sinking to bottom.

If you want moist banana muffins that stay soft tomorrow, this is it.

Ingredients

Pantry staples + spotty bananas.

For the muffins (12 muffins):

  • Very ripe bananas - 3 large (about 1 1/2 cups mashed) - black spots = perfect, more spots = sweeter
  • All-purpose flour - 2 cups (250g) - spooned & leveled
  • Baking soda - 1 tsp + Baking powder - 1/2 tsp
  • Fine sea salt - 1/2 tsp
  • Ground cinnamon - 1/2 tsp (optional but amazing)
  • Unsalted butter - 1/2 cup (115g), melted and slightly cooled
  • Light brown sugar - 3/4 cup (150g), packed
  • Granulated sugar - 1/4 cup (50g)
  • Large eggs - 2, room temp
  • Sour cream or Greek yogurt - 2 tbsp - makes them extra moist
  • Pure vanilla extract - 2 tsp
  • Semi-sweet chocolate chips - 1 1/4 cups (210g) - divided, plus more for topping

Bananas not ripe? Bake unpeeled bananas on sheet pan at 300°F 15 min until black. Cool, then mash. Works like a charm!

Equipment

  • 12-cup muffin tin + liners or grease well
  • 2 bowls, fork for mashing, whisk, spatula
  • Ice cream scoop for even muffins

How to Make Banana Chocolate Chip Muffins

One bowl, no mixer, easy weekend baking.

STEP 1: Mash bananas

Preheat oven to 425°F (220°C) - yes, high to start, gives bakery tall tops. Line muffin tin with liners.

In large bowl, mash bananas with fork until mostly smooth - some small lumps okay, adds texture. You should have about 1 1/2 cups.

Add melted butter, brown sugar, granulated sugar, eggs, sour cream, vanilla. Whisk until smooth.

STEP 2: Mix batter

In separate bowl, whisk flour, baking soda, baking powder, salt, cinnamon.

Pour dry into wet and fold gently with spatula until just combined - 12-15 strokes. Batter will be thick and lumpy. Don’t overmix or muffins get tough and dry! Lumps are good.

Fold in 1 cup chocolate chips, reserving 1/4 cup for topping.

STEP 3: Scoop

Divide batter evenly among 12 muffin cups - fill almost to top, about 3/4 full plus a bit more. They need to be full for tall bakery tops.

Sprinkle remaining 1/4 cup chocolate chips on top of each muffin, press lightly. Looks pretty and you get melty chocolate on top.

STEP 4: Bake tall & fluffy

Bake at 425°F for 5 minutes, then WITHOUT opening oven, reduce to 350°F (175°C) and bake another 12-15 minutes until golden, domed, and toothpick in center comes out with moist crumbs but no wet batter.

That initial high heat blast is what gives bakery-style tall domed tops - same trick bakeries use!

Cool in pan 5 minutes, then move to wire rack. Or eat one warm when chocolate is still melty. I highly recommend the second option.

Look at that - moist, fluffy, chocolate in every bite, tall domed top.

3 Rules for Moist, Not Dry, Banana Muffins

1. Use OVER-ripe bananas. Yellow with brown spots minimum, mostly black is best. More ripe = more sugar = more moisture + sweeter. If your bananas are still yellow, wait 2 days. Patience.

2. Melted butter + brown sugar. Butter gives flavor, brown sugar keeps them soft for days (white sugar alone dries out faster). Same combo I use in my pumpkin cookie recipe quick easy.

3. High heat first, then lower. 425°F for 5 min gives big rise, then 350°F finishes baking without drying. If you bake only at 350°F, they stay flat. Science!

Variations

High Protein Banana Muffins: Add 1 scoop vanilla protein powder, reduce flour to 1 3/4 cups, add 2 tbsp extra milk. Or serve with my cottage cheese chocolate mousse high protein for 20g protein dessert after. Also check my high protein pancakes easy recipe for breakfast.

Healthy-ish: Use half whole wheat flour, use 1/2 cup maple syrup instead of sugars (reduce milk by 2 tbsp), use dark chocolate chips.

Nutty: Add 3/4 cup chopped walnuts or pecans with chocolate chips. Banana + walnut + chocolate = classic.

Pumpkin Banana Muffins (Fall Twist): Replace 1/2 cup mashed banana with 1/2 cup pumpkin puree + 1 tsp pumpkin pie spice. If you loved my pumpkin pie cupcakes soft cozy and pumpkin bars, you’ll love this combo.

What to Serve With

Perfect for breakfast, snack, or lunchbox. Serve warm with butter or peanut butter. For weekend brunch, make these muffins plus my sheet pan pancakes easy weekend breakfast - one sweet, one customizable, feeds a crowd with no flipping.

Storage, Freezer & Make-Ahead

Room temp: Airtight container, 3 days. They stay moist! Add paper towel in container to absorb moisture.

Freezer: Freeze baked muffins in zip bag up to 3 months. Thaw overnight or microwave 20-30 sec for warm muffin. Perfect for meal prep and kids’ lunchboxes.

Make-ahead batter: Don’t make batter night before - baking soda loses power. Mash bananas night before, though, and store in fridge.

Common Mistakes

  • Under-ripe bananas: Bland, not sweet, dry muffins. Wait for brown spots.
  • Overmixing: Tough, dense, rubbery. Fold gently, lumps okay.
  • Too much flour: Spoon & level, don’t scoop from bag or you pack too much.

FAQ

Can I make without chocolate chips?
Yes! Still delicious. Add 3/4 cup chopped walnuts or blueberries instead.

Can I make mini muffins?
Yes! Mini tin, bake at 350°F 11-13 min. Makes ~24 minis. Kids love minis.

Can I make gluten-free?
Yes, 1-to-1 gluten-free blend with xanthan gum works. Same amounts.

Why did my muffins sink?
Too much banana or underbaked. Measure mashed banana exactly 1 1/2 cups, and bake till toothpick has moist crumbs.

Can I use frozen bananas?
Yes! Thaw, drain excess liquid, mash. Perfect for this recipe - actually makes them even sweeter.

02How to Cook

01
Mash bananas

Preheat oven to 425°F (220°C) — high heat start gives bakery tall tops. Line a 12-cup muffin tin with liners. In a large bowl mash bananas with a fork until mostly smooth — small lumps okay — you need 1½ cups mashed.

Add melted butter, brown sugar, granulated sugar, eggs, sour cream, and vanilla. Whisk until smooth and glossy.

02
Mix batter

In a separate bowl whisk flour, baking soda, baking powder, salt, and cinnamon. Pour dry into wet and fold gently with a spatula until just combined — 12–15 strokes. Batter will be thick and lumpy — lumps are good!

Fold in 1 cup chocolate chips, reserving ¼ cup for topping. Don’t overmix or muffins get tough and dry.

03
Scoop

Divide batter evenly among 12 muffin cups — fill almost to top, about ¾ full plus a bit more for tall domes. Sprinkle remaining ¼ cup chips on top and press lightly for melty chocolate on every top.

04
Bake tall & fluffy

Bake at 425°F for 5 minutes, then without opening oven reduce to 350°F (175°C) and bake 12–15 minutes until golden, domed, and a toothpick in center comes out with moist crumbs but no wet batter.

That initial blast is the bakery trick for tall domed tops — low heat only = flat muffins. Cool in pan 5 minutes, then move to wire rack. Best warm when chocolate is melty.

03Notes

🍌Use Over-Ripe Bananas

Yellow with brown spots minimum, mostly black is best. More ripe = more sugar = more moisture + sweeter. If still yellow, wait 2 days.

🧈Melted Butter + Brown Sugar

Butter gives bakery flavor, brown sugar keeps them soft for days (white sugar alone dries out faster). Same moist magic as my pumpkin bars.

🔥High Heat First

425°F for 5 min gives big rise, then 350°F finishes baking. If you bake only at 350°F they stay flat. Science!

🥄Don't Overmix

Fold 12–15 strokes until just combined. Tough, dense, rubbery muffins come from overmixing. Thick and lumpy batter is perfect.

⚖️Spoon & Level Flour

Don’t scoop from the bag — you pack too much and get dry muffins. Spoon into cup, level with a knife.

❄️Stay Moist for Days

Store airtight 3 days with a paper towel inside to absorb moisture. Freeze up to 3 months — thaw overnight or microwave 20–30 sec.
