Mini Dutch baby pancakes are the lazy genius of weekend breakfast. Same custardy middle and puffed edges as a skillet Dutch baby, except they bake in a muffin tin, nobody fights over the middle, and you are not standing there flipping pancakes like a short-order cook who did not apply for the job.
Blend a thin batter. Heat the tin until the butter screams. Pour. Bake. They climb the cups like popovers, then slump a little when they hit the air, which is not a fail. That is physics taking a bow. Dust with powdered sugar, pile on berries and lemon. Ten minutes in the oven. No spatula choreography.
I used to make one giant Dutch baby and cut it like pizza while it deflated in real time, which is a very stressful brunch performance. Minis deflate too. They just do it in cute individual portions, so it looks intentional. If you want other โoven does the workโ breakfasts, my Maple Brown Butter Pumpkin Coffee Cake and Homemade Biscuits cover cake and bread. Citrus people, Lemon Blueberry Bread is the loaf cousin of the lemon-sugar topping here.
Why They Puff (and Why They Always Fall a Little)
A Dutch baby is closer to a popover or a Yorkshire pudding than to a diner pancake. Thin batter. Lots of egg. Hot fat. Steam.
Eggs and milk hold water. A ripping-hot muffin cup turns that water into steam, fast. The batter stretches up the sides before the proteins set. That is the puff. Open the oven early and the steam rushes out. The puff collapses while it is still wet. You get sad cups. Leave the door shut.
They still settle after you pull them. The steam cools. The walls thin. Every food blog photo of a sky-high Dutch baby was taken in a 12-second window. Yours will look like a little golden bowl. That bowl is the point. It holds berries. It holds maple. It holds your dignity.
A few details that actually change the height:
Room-temp eggs and milk. Cold batter hits hot butter and seizes. You get dense bottoms. 20 minutes on the counter, or a quick warm-water bath for the eggs.
Rest the batter 15 minutes. Flour hydrates. Tiny lumps disappear. Gluten relaxes so the puff is tender, not bouncy.
Hot tin, melted butter in every cup. The fat is the nonstick and the fry on the edges. A cold tin is just a muffin pan with soup in it.
Fill only halfway. These are not muffins. Overfill and they flood into one sheet of pancake. Impressive. Not minis.
- Prep Time: 10 minutes (plus 15 minutes rest)
- Cook Time: 13 minutes
- Total Time: 35 minutes
- Yield: 12 mini Dutch babies (6 servings of 2, or 4 servings of 3)
Muffin Tin
That is the star:
- 12-cup metal muffin tin – dark metal browns faster, check 1โ2 minutes early. Do not use silicone. Silicone does not get hot enough for a real puff.
- Blender – smoothest batter in 20 seconds. Whisk and a bowl work if you beat like you mean it.
- Oven mitts that actually work – the tin is 425ยฐF and full of butter. This is not a drill.
- Microplane – lemon zest, optional, highly recommended
- Small pitcher or measuring cup – pouring into hot cups without a lava splash
No skillet. No flip. If your muffin tin is warped and thin, the butter may burn in the corners. Use a sturdy one.
Batter List
Batter:
- Large eggs – 3, room temp
- Whole milk – 3/4 cup (180ml), room temp
- All-purpose flour – 3/4 cup (95g), spooned and leveled
- Granulated sugar – 2 tbsp
- Pure vanilla extract – 1 tsp
- Fine sea salt – 1/4 tsp
- Lemon zest – 1 tsp – optional, makes them taste like a bakery, not just egg-pancake
For the tin:
- Unsalted butter – 3 tbsp (42g) – about 3/4 tsp per cup
To serve:
- Powdered sugar, lemon wedges, maple syrup, fresh berries, a pinch of cinnamon
Temp tip: Cold milk + cold eggs = flat minis. If you forgot, set the eggs in warm water 5 minutes and microwave the milk 15 seconds. Not hot. Just not fridge-cold. Butter tip: You want sizzling butter, not brown-black. If it smokes hard, the tin sat too long. Pull it, wipe, start that cup again.
Heat, Pour, Bake
1. Blend, then rest.
Eggs, milk, flour, sugar, vanilla, salt, lemon zest. Blend 15โ20 seconds until smooth. A few tiny bubbles are fine. Rest 15โ20 minutes on the counter. This is when you heat the oven and pretend you are patient.
2. Heat the tin like you mean it. Oven to 425ยฐF (220ยฐC). Put the empty muffin tin in for 5 minutes. Carefully pull it out. Drop about 3/4 teaspoon butter in each cup. Return to the oven 1โ2 minutes until the butter is melted and foamy. Every cup needs fat. Dry cups stick and do not puff.
3. Pour fast, door shut.
Working quickly, fill each cup about halfway (2โ3 tablespoons). Batter should sizzle. If it just sits there silently, the tin is not hot enough. Bake immediately. 12โ15 minutes. Do not open the door for the first 12. Peeking is how you get 12 little omelets.
They are done when the edges are deep golden and the centers look set but still custardy, not wet. 16 minutes is usually too far โ dry, eggy, and bitter at the rim.
4. Pull, slump, serve.
They will be tall. Then they will sit down. Run a thin knife around any stubborn edges. Lift out. Powdered sugar while they are hot so it melts into the wrinkles.
Crisp-ish rim, soft eggy middle, lemon, berries. Eat within 10 minutes. These are a now food. Reheated Dutch babies are just sad popovers. I said what I said.
Pile On
Classic: powdered sugar, squeeze of lemon, maple. That is the whole religion.
Berries if you have them. A spoon of yogurt if you want to pretend it is balanced. Cinnamon sugar if lemon is not your thing.
For a full brunch spread, these minis next to Homemade Biscuits means sweet and savory without a second skillet. Maple Brown Butter Pumpkin Coffee Cake can sit on the table for people who want a square they can eat later. Lemon Blueberry Bread is the make-ahead citrus loaf so you are not blending batter at 8am every Saturday.
Bacon on the side is not required. It is also not wrong. I will not be taking questions.
Mini Twists
Cinnamon sugar: 1/2 tsp cinnamon in the batter, more on top with butter. Fair-food energy.
Berry drop: 2โ3 blueberries in each cup after pouring. Do not overload or they will not climb.
Savory herb: Skip the 2 tbsp sugar, add 1/4 tsp extra salt, chopped chives, cheese after baking. Tiny Yorkshire puddings. Soup night.
Orange: Orange zest instead of lemon, maple on top. Brunch-y.
Gluten-free: 1:1 GF baking flour, same grams. Rest 20 minutes. Slightly less puff, still very good.
Cast-iron minis: 6 holes in a mini pie pan or 2 small skillets, same batter split. More dramatic puff, fewer portions. Muffin tin is still faster.

Plain, before maple and berries. Maple is extra and not shy. Three minis is a real breakfast. Two is a side. Twelve is a party and also a cry for help, which I respect.
Eat Soon
These are not meal-prep pancakes.
Best: Straight from the tin, 10 minutes.
Fridge: You can fridge leftovers 1 day. They go rubbery. Reheat 4โ5 minutes at 375ยฐF to recrisp the edges a little. Microwave makes them chewy. I would rather make a half batch.
Batter: You can blend the batter, fridge up to 8 hours, stir, then bake. Let it sit 10 minutes on the counter so it is not ice-cold going into the tin. Slightly less puff. Still worth it for Saturday.
Do not freeze baked minis. They thaw into egg sponges. Nobody at brunch asked for that.
Flat Mini Traps
Cold tin, cold butter. No sizzle, no puff. Heat the pan. Melt the butter in the oven.
Opening the door at minute 6. Steam leaves. Party over.
Overfilling. Pancake sheet. Halfway. You will think it looks like nothing. It is not nothing.
Cold eggs. Dense. Room temp.
Too much flour. Thick batter = muffins, not Dutch babies. 3/4 cup, spooned and leveled, not packed.
Silicone muffin pan. Soft, cool, no crust. Metal.
Leaving them 20 minutes โto stay warm.โ They go limp. Serve. If people are late, they get the slouchy ones and a story about steam.
If you make these mini Dutch baby pancakes, tell me if you ate two before they hit the platter. That is not a question. That is a confession format. I already filled mine out.
Happy puffy, no-flip breakfast!

Notes 03
Closer to popover / Yorkshire pudding than pancake. Thin batter + lots of egg + hot fat = steam lifts batter before proteins set. Open the door early and steam escapes โ flat cups. They always settle after; that golden bowl holds maple.
Cold batter hits hot butter and seizes โ dense bottoms. Eggs + milk at room temp (20 min counter, or warm-water bath) gives the tallest, tenderest puff.
Fill only halfway โ overfill floods into one sheet. And every cup needs ยพ tsp butter foamy. If butter smokes hard, tin sat too long โ wipe that cup and start it again.
Leave the door shut for 12 minutes. Those photos of sky-high Dutch babies were taken in a 12-second window. Yours slumps โ physics taking a bow. Serve anyway.
Best in 10 min. Fridge leftovers 1 day max โ reheats 4โ5 min at 375ยฐF to re-crisp; microwave goes chewy. Batter can wait 8 hr blended in fridge, then 10 min counter before baking. Donโt freeze baked minis.
Cinnamon sugar ยฝ tsp in batter; Berry drop 2โ3 blueberries per cup after pouring; Savory skip 2 tbsp sugar + chives/cheese; GF 1:1 flour same 95g rest 20 min.
