Frozen peanut butter yogurt bites are Reeseโs cups that started going to the gym and also learned to live in the freezer. Greek yogurt. Real peanut butter. A little honey. Chocolate drizzle if you are feeling fancy, or if it is Tuesday. Mix, spoon, freeze. Two hours later you have a cold, creamy, salty-sweet bite you can eat with two fingers while standing in the freezer door like a raccoon with a 401(k).
No oven. No molds you have to buy unless you want them. Mini muffin liners on a tray work. Silicone mini molds work better if you already own them. I have used an ice cube tray in a moment of weakness. The bites came out square. They still tasted like peanut butter cheesecake that caught a cold. I did not complain.
If high-protein fridge food is already your personality, my Cottage Cheese Chia Pudding is the overnight jar. Protein Cookie Dough is the spoonable stash. When you want peanut butter in dessert form, not snack form, Peanut Butter Mousse with Chocolate Ganache is the cup you eat sitting down.
Why Full-Fat Yogurt Freezes Creamy (and 0% Freezes Into Regret)
Yogurt is water, protein, and fat. Water wants to become ice crystals. Fat and protein get in the way, so the freeze stays creamy instead of crunchy. Fat-free Greek yogurt is mostly water and protein. It freezes like a protein ice cube. You will chip a tooth and blame the recipe. Blame the tub.
2% or full-fat Greek yogurt is the line. Regular (not Greek) yogurt is thinner and icier. Skyr works. Cottage cheese blended smooth also works, but then you are making a different bite and we already have a pudding for that.
Peanut butter is more fat, which is extra insurance against ice. No-stir creamy PB mixes easiest and freezes smoothest. Natural PB is fine if you stir the oil back in until it is one paste. A slick of oil in the bowl makes bites that separate in the freezer โ peanut rock, yogurt ice. Stir the jar first.
Honey or maple does two jobs: sweet, and a slightly softer freeze (sugar lowers the freezing point a little). Two tablespoons for this batch is plenty. A quarter cup and they stay slushy on a hot day. Salt is not optional. Peanut butter plus yogurt plus honey without salt tastes like a diet commercial from 2009.
Chocolate goes on after they are frozen. Warm chocolate on soft yogurt is a swirl soup. Frozen bites make the drizzle set in seconds. That is the whole magic trick.

Frozen List
Bites:
- Plain Greek yogurt – 1 cup (245g) – 2% or full-fat, not 0%
- Creamy peanut butter – 1/3 cup (85g) – stirred if natural
- Honey or maple syrup – 2 tbsp
- Pure vanilla extract – 1 tsp
- Fine sea salt – 1/4 tsp – plus flaky salt on the chocolate, optional and correct
Chocolate drizzle (optional, recommended):
- Dark chocolate – 2 oz (56g), chopped
- Coconut oil – 1 tsp – helps it set with a snap
Yogurt tip: Thick Greek yogurt. If you can pour it like milk, strain it 10 minutes or you will freeze puddles. PB tip: Warm natural peanut butter 10 seconds if it is a brick, then stir. Do not melt it into oil.
Mix, Spoon, Freeze
1. Stir until it looks like thick peanut butter mousse.
Yogurt, peanut butter, honey, vanilla, salt. Mix until there are no dry PB lumps. A few swirls are pretty. Streaks of unmixed peanut butter are chewy surprises, and not in a fun way. Taste it. It should be salty-sweet, a little tangy, a bit too peanut-forward. Freezing mutes flavor. If it tastes shy now, it will taste like cold air later. Extra pinch of salt. Trust the process.
2. Spoon into liners.
About 1 1/2 tablespoons per well, 12 bites. Smooth the tops if you want them tidy. I do not. Freeze 2 hours, or until they pop out without bending.
If your freezer is a disaster zone, set the tin on a small sheet pan first so you are not doing frozen yoga with a muffin pan and a bag of peas.
3. Drizzle on frozen bites.
Melt chocolate and coconut oil in 20-second bursts, stir until smooth. Fork-drizzle over the frozen tops. Flaky salt while the chocolate is wet. It sets in about a minute. If you drizzle soft yogurt, you get marble. Marble is tasty. It is not a bite with a lid.
4. Peel and eat, but wait 2 minutes.
Straight from the freezer they are jaw-breakers. Two minutes on the counter and the center goes creamy, like frozen yogurt that knows peanut butter. That window is the whole snack. I have not always waited. My tooth has opinions.
Snack With
Coffee. Cold brew especially. The bitter vs peanut thing.
These are a 3pm snack, a post-dinner โI need something cold,โ and a lunchbox ice pack that you then eat. For more protein in the fridge, keep Cottage Cheese Chia Pudding for mornings and Protein Cookie Dough for spoon people. When the house wants a sit-down peanut dessert, the Peanut Butter Mousse cups.
Contains peanuts and dairy. Say it before the tray hits the party table. There is no โsurprise peanutโ that is a cute surprise.
Frozen Twists
Swirl, donโt fully mix: Leave PB ribbons. Pretty. Still freeze well.
Crunchy PB: Half creamy, half crunchy. Texture people will thank you.
Banana: 1/4 cup mashed ripe banana in the mix. Softer freeze, more ice cream shop. Eat within a week โ banana gets gray.
Chocolate inside: Mini chips folded in. They freeze into little rocks. I like that. Some people do not. They can pick them out. That is a them problem.
Almond or sunflower: Same amount. Sunflower is the nut-free lunchbox move. Stir well; it can be bitter without extra honey and salt.
PB & jelly: Tiny jam dot in the center before freezing. Do not overfill or it leaks and becomes a sticky ice cube of chaos. One-quarter teaspoon jam. I am serious.

Freezer Life
Freezer: Airtight, up to 2 months. Best in month 1. After that they pick up freezer smells if the bag is weak. Parchment between layers so they do not become one peanut brick.
Do not fridge them as storage. They thaw into yogurt soup. Freeze is the home.
Lunchbox: Frozen in the morning, still cool at noon if the pack is insulated. By 2pm they are a thick dip. Still edible. Pack a spoon and lower your standards, or eat them at 10am like a person with a plan.
Thaw window: 1โ3 minutes on the counter. 10 minutes and you have pudding in a liner. I have eaten that too. No notes.
Icy Bite Traps
0% yogurt. Ice. 2% or full-fat.
Unstirred natural PB. Oil slick, then a peanut rock. Stir the jar.
Too much honey. Slush. Two tablespoons.
Chocolate on soft yogurt. Soup. Freeze first, drizzle second.
Eating at 0:00 from the freezer. Dental event. Two minutes.
Thin regular yogurt. Puddles in the liner, icy shards. Greek, thick.
Skipping salt. Flat. A quarter teaspoon in the mix. Flaky salt on chocolate if you are one of the salt people. I am one of the salt people.
If you make these frozen peanut butter yogurt bites, tell me if you ate one standing in the freezer light. That is not a hypothetical. That is the serving suggestion.
