Protein Cookie Dough – Edible High Protein Cookie Dough (No Eggs)

Protein Cookie Dough

This protein cookie dough is the reason I stopped stealing raw cookie dough from the fridge and feeling guilty about it.

Itโ€™s edible, safe (no eggs, no raw flour โ€” we heat-treat the oat flour), creamy, tastes like real chocolate chip cookie dough, and packs 12g protein per serving. Ready in 5 minutes, one bowl, no baking. You can eat it with a spoon, roll into balls, or freeze for later. Itโ€™s basically dessert that counts as protein.

I made this because I was craving cookie dough at 10pm but also trying to hit protein. My wife said โ€œyou canโ€™t have both.โ€ I said โ€œwatch me.โ€ Now she eats it straight from the bowl while watching TV. We donโ€™t even pretend to save it for after dinner.

If you loved my Creamy 57g Protein Pudding Ready In Just 2 Minutes โ€” same 2-minute high-protein magic โ€” and my Cottage Cheese Chocolate Mousse High Protein, youโ€™ll love this. Same creamy, dessert-but-protein vibe, but cookie dough flavor.

Why This Protein Cookie Dough Tastes Like Real Cookie Dough (Not Chalky)

Science, but yummy science. Regular cookie dough gets flavor from butter, brown sugar, and vanilla. We mimic that with peanut butter (or almond butter) for buttery richness + healthy fat, oat flour for that cookie dough chew and fiber, and a little honey + brown sugar for caramel notes.

Protein powder can taste chalky if you just dump it in. Trick: use whey protein (vanilla) plus Greek yogurt. Greek yogurt adds moisture, tang, and extra protein while keeping dough soft and creamy, not dry and powdery. Oat flour is key โ€” itโ€™s heat-treated (we toast it 1 min in microwave) so safe to eat raw, and it gives that authentic cookie dough texture that almond flour alone canโ€™t.

Mini chocolate chips distribute better than big chips โ€” every bite gets chocolate. Pinch salt makes sweet pop. Together you get creamy, chewy, chocolatey cookie dough that just happens to have protein. No eggy taste, no gritty whey.

  • Prep Time: 5 minutes
  • Chill Time: 10 minutes optional (for firmer balls)
  • Total Time: 5 minutes (15 with chill)
  • Yield: 12 balls or 4 servings

Equipment You Need

No oven, no mixer needed:

  • Large Mixing Bowl + Spoon or Spatula
  • Microwave-Safe Bowl – for heat-treating oat flour (30 sec)
  • Measuring Cups and Spoons
  • Cookie Scoop (1 tbsp) – for even balls

What You Need

For the Protein Cookie Dough Base:

  • Oat flour – 3/4 cup (90g) – store-bought or blend old fashioned oats into flour. Heat-treated for safety
  • Vanilla whey protein powder – 2 scoops (60g), about 40-50g protein total – whey isolate vanilla blends creamiest. I use vanilla
  • Creamy peanut butter – 1/2 cup (130g) – natural or Jif, or almond butter. This is butter substitute
  • Plain Greek yogurt – 1/4 cup (60g), 2% or nonfat – keeps dough soft not dry, adds protein
  • Honey – 2 tbsp (or maple syrup) – plus 1 tbsp brown sugar for cookie flavor
  • Light brown sugar – 1 tbsp (12g) – for that classic cookie dough caramel note
  • Pure vanilla extract – 1 tsp
  • Fine sea salt – 1/4 tsp
  • Milk – 1-3 tbsp, any milk – to adjust texture, almond, skim, etc.

For Mix-ins:

  • Mini chocolate chips – 1/3 cup (60g) – mini = better distribution
  • Optional: chopped pecans or walnuts – 2 tbsp

Protein powder tip: Use whey isolate vanilla you LIKE the taste of โ€” itโ€™s 70% of flavor. Plant protein works but can be gritty, add extra 1 tbsp Greek yogurt + 1 tbsp milk. Check scoop size: 2 scoops should be ~40-50g protein. Oat flour: to heat-treat, microwave oat flour in bowl 60 sec stirring halfway, or toast in dry skillet 2 min โ€” kills bacteria, safe to eat raw.

How to Make Protein Cookie Dough

1. Heat-treat oat flour (30 sec, donโ€™t skip). Place oat flour in microwave-safe bowl, microwave 60 seconds, stirring after 30 sec. It should be warm to touch, not hot. This makes raw flour safe to eat. If no microwave, toast in dry nonstick skillet over medium 2 min stirring. Let cool 2 min.

2. Mix wet.

In large bowl, add peanut butter, Greek yogurt, honey, brown sugar, vanilla, salt. Stir with spoon until creamy and smooth โ€” like thick frosting.

3. Add dry and mix.

Add heat-treated oat flour and whey protein powder to wet. Stir until thick dough forms โ€” it will be thick like real cookie dough, maybe crumbly at first. Add milk 1 tbsp at a time until soft, creamy, scoopable cookie dough texture. I usually need 2 tbsp. Donโ€™t add too much or it becomes batter.

4. Add chocolate chips.

Fold in mini chocolate chips. Try not to eat half the bowl now โ€” I fail every time.

5. Scoop or eat.

Eat straight with spoon (no shame), or scoop 1 tbsp balls onto parchment-lined plate for protein cookie dough bites. Chill 10 min for firmer balls that hold shape. Theyโ€™re soft, chewy, creamy inside with chocolate chips.

Soft, creamy, tastes like real chocolate chip cookie dough, 12g protein per 3 balls. High-protein dessert you actually want to eat.

The Little Details That Keep It Creamy Not Dry

Heat-treat oat flour. Raw flour can have bacteria, not safe raw. 60 sec microwave = safe + slightly toasty flavor. Donโ€™t skip.

Peanut butter + Greek yogurt combo. Peanut butter alone = too dense, oily. Greek yogurt adds moisture and protein, keeps dough soft and creamy not crumbly. Both needed.

Add milk slowly. Protein powder absorbs liquid differently by brand. Start 1 tbsp, add until soft dough. Too much milk = sticky batter, too little = crumbly dry.

Mini chocolate chips. Regular chips are too big, dough falls apart. Mini chips distribute evenly, every bite chocolatey.

Chill 10 min for balls. Warm dough is soft and sticky, hard to roll. 10 min fridge = firmer, easy to scoop and holds shape.

What to Serve With / When to Eat

Anytime you crave cookie dough but want protein.

Post-workout โ€” 12g protein per serving, no shaker. Late-night snack โ€” tastes like dessert, not diet. Lunchbox treat โ€” kids think itโ€™s real cookie dough. Pre-workout energy โ€” carbs + protein.

For a full high-protein dessert spread, serve these balls with my Chocolate Strawberry Greek Yogurt Clusters โ€” one frozen fruity, one creamy cookie dough, both high protein. And for breakfast, pair with my Creamy 57g Protein Pudding โ€” pudding + cookie dough, 69g protein total, dessert for breakfast that hits macros.

Fun Variations (Audience Loves These)

Chocolate Protein Cookie Dough: Use chocolate whey + 1 tbsp cocoa powder + chocolate chips. Brownie batter vibes.

Peanut Butter Cup: Use chocolate whey + add 1 tbsp extra peanut butter + peanut butter chips + mini chocolate chips. Reeseโ€™s cookie dough.

Snickerdoodle: Use vanilla whey + add 1 tsp cinnamon to dough + roll balls in cinnamon sugar (1 tbsp sugar + 1/2 tsp cinnamon). Cinnamon sugar protein dough.

Birthday Cake: Use vanilla whey + fold in 2 tbsp rainbow jimmies sprinkles + white chocolate chips. Like my funfetti muffins but protein dough.

Vegan Protein Cookie Dough: Use pea protein vanilla + almond butter + coconut yogurt + maple syrup + oat flour + dairy-free chocolate chips. Same creamy, plant-based.

Storing and Freezing

Best snack for meal prep.

Fridge: Store dough or balls in airtight container up to 5 days. Gets firmer as it sits โ€” microwave 8 sec or add 1 tsp milk to soften.

Freezer: Freeze balls on parchment tray 1 hour, then bag. Freeze up to 2 months. Eat frozen like cookie dough bites (my favorite) or thaw 10 min at room temp for soft dough. Perfect grab-and-go protein.

Room temp? Keep chilled โ€” has Greek yogurt and peanut butter, donโ€™t leave out more than 2 hours.

Make ahead: Double batch Sunday, fridge for week, freezer for month. High-protein snack ready anytime.

Mistakes That Make Dry or Gritty Dough

Skipping heat-treat. Unsafe and raw flour tastes pasty. 60 sec microwave fixes both.

Too much protein powder. More than 2 scoops = dry, chalky, inedible. 2 scoops is sweet spot for 3/4 cup oat flour.

No Greek yogurt. Without yogurt, dough dry and crumbly. Yogurt adds moisture + protein + keeps soft.

Bad protein powder. If you hate taste in shake, youโ€™ll hate it here. Use vanilla whey you like.

Over-adding milk. Turns dough into batter that wonโ€™t hold balls. Add 1 tbsp at a time until soft but still holds shape.

If you make this protein cookie dough, tell me how many balls you ate before they even made it to fridge. My record is 5. Standing over bowl. No regrets.
