Peanut butter mousse with chocolate ganache is a Reeseโs cup that went to finishing school. Fluffy peanut butter cream. Dark chocolate lid. Cold from the fridge. Spoon through the ganache so it cracks a little, then you hit the mousse. No oven. No water bath. No โis my custard scrambled.โ
This is the dessert I make when I want something that looks like I tried, and I did try, for about 20 minutes plus chill time. The chill does the cooking. You whip, you fold, you pour, you wait. Waiting is the hard part. I have eaten a test cup before the ganache set and called it โquality control.โ Quality was high. Setting was not.
If no-bake is your whole personality this week, my No-Bake Greek Yogurt Cheesecake Squares are the lighter cousin. If you want peanut butter you can stash in the fridge by the spoon, Protein Cookie Dough is the grab jar. Emergency chocolate with zero patience is still the 1 Minute Microwave Brownie.
Why This Mousse Stays Fluffy (and Why the Ganache Cannot Be Lava)
Peanut butter is fat + protein. Cream cheese is fat + protein with a little tang. Whipped cream is air trapped in fat. Fold them together and you get a mousse that holds a peak without gelatin. No gelatin means it is not rubber. It is spoonable, like a cold peanut butter cloud.
Two peanut butters, two personalities:
No-stir supermarket PB (the kind that does not have a oil slick on top) has emulsifiers. It stays smooth in mousse. This is the easy, pretty cup.
Natural PB (oil on top, stir forever) can make mousse grainy or loose if the oil is not fully mixed in. It tastes more โpeanut.โ If you use it, stir the jar until it is one paste, then measure. If the mousse looks oily, beat in 2 extra ounces of cream cheese.
Ganache is just chocolate + hot cream. The cocoa butter melts, mixes with dairy fat, and sets into a soft lid in the fridge. Ratio here is about 1:1 by volume-ish โ 4 oz chocolate to 1/2 cup cream โ so it pours, then sets sliceable-soft, not fudge-brick.
Temperature is the marriage counselor. Hot ganache on cold mousse = melted peanut puddle with chocolate swirls. Looks rustic. Eats fine. Not the layered cup you wanted. Cool ganache 5โ8 minutes until it is warm, thick, pourable, like chocolate honey. Then pour.
Water is the enemy of melted chocolate. A wet bowl, a steam drip, a splash of mousse in the ganache, and it seizes into a grainy mass. Dry bowl. Dry spatula. Live a careful 30 seconds.

๐ฝ๏ธ Equipment I Need for Peanut Butter Mousse with Chocolate Ganache
Simple dessert gear you likely already own: 5 key tools to whip, layer, and chill individual bakery-style dessert cups.
KitchenAid 5-Speed Ultra Power Hand Mixer
Whips heavy cream into billowy stiff peaks in minutes and blends dense cream cheese and peanut butter into a smooth, lump-free cloud.
Pyrex Essentials 3-Piece Glass Mixing Bowls Set
Two dedicated bowls keep your whipped cream and peanut butter mixture separate until you fold them together for maximum airy volume.
Duralex Picardie Clear Glass Tumblers (Set of 6)
Crystal-clear faceted glasses show off the dramatic contrast between the golden peanut mousse and glossy dark chocolate ganache.
Pyrex 2-Cup Glass Measuring Cup
Heatproof tempered glass gently melts chocolate chips and warm cream in the microwave, with a molded spout for drip-free pouring.
Wilton Angled Frosting Spatula (9-Inch)
Slender angled stainless blade slips easily into individual glasses to level mousse tops so the warm ganache settles into a mirror-smooth layer.
No oven. No springform. If you want one big dish, an 8×8 works. Slice it like a fridge tart. Less cute. Same taste.
Jar & Bowl
Peanut butter mousse:
- Full-fat cream cheese – 8 oz (226g), very soft – brick, not whipped tub
- Creamy peanut butter – 3/4 cup (190g) – no-stir is easiest
- Powdered sugar – 1/2 cup (60g)
- Pure vanilla extract – 1 tsp
- Fine sea salt – 1/4 tsp – plus flaky salt for the top, optional and correct
- Cold heavy cream – 1 cup (240ml)
Chocolate ganache:
- Dark chocolate – 4 oz (113g), chopped – 60โ70% cacao
- Heavy cream – 1/2 cup (120ml)
- Pinch salt
- Unsalted butter – 1 tsp – optional, extra shine
PB tip: Crunchy peanut butter works if you like bits. The mousse will not be as silky. Natural PB: stir the jar like you mean it, then measure. Chocolate tip: Chips have stabilizers and can make ganache dull and thick. A chopped bar melts cleaner. Chips still work in a pinch. Add 1 extra tablespoon cream if it looks pasty.
Whip, Spoon, Pour
1. Beat the peanut base until it is actually smooth. Soft cream cheese, 1 minute alone. Lumps now are lumps forever. Add peanut butter, powdered sugar, vanilla, salt. Beat 1โ2 minutes until it looks like thick frosting. Taste. It should be salty-sweet peanut, a little too intense. Whipped cream will calm it down. If it tastes bland now, it will taste like sadness later. Extra pinch of salt. Trust me.
2. Whip the cream, then fold.
Cold cream, medium-stiff peaks. Soft peaks slump in the cups. Stiff-stiff peaks go grainy. Stop when a peak stands and the tip just nods.
Stir 1/3 of the cream into the peanut base to loosen it. Then fold the rest in with a spatula, big scoops from the bottom. Streaks of white are okay for one more fold. Overfold and you deflate the air you just whipped. Then it is peanut pudding. Still good. Less mousse.
3. Spoon and smooth.
Divide into 6 cups. Leave 1/2 inch at the top for ganache. Smooth the tops. Fridge 20โ30 minutes while you make ganache so the mousse is cold enough to take a warm pour.
4. Ganache: hot cream, wait, stir from the middle. Chop chocolate in a dry bowl. Heat cream until it just simmers around the edges โ not a rolling boil. Pour over chocolate. Do not poke it for 2 minutes. Then stir from the center out until glossy. Salt. Butter if you want shine. If it looks split (oily, grainy), splash in 1 tsp warm cream and stir like you are apologizing. Usually it comes back.
Cool 5โ8 minutes. It should ribbon off the spoon, not run like chocolate milk, not sit like frosting.
5. Pour, chill, try not to hover.
Spoon ganache over each cup. Tilt to cover. Flaky salt on top while it is still tacky if you like that sweet-salty thing. I like that sweet-salty thing.
Fridge 2 hours, covered loosely once the ganache is set (about 30 minutes in, then wrap so it does not eat fridge smells).
Crack the chocolate with a spoon. Fluffy peanut. Cold. Rich. This is not a light yogurt cup. This is dessert. Sit down. Or do not. I eat mine at the counter. The mousse does not judge.
Pair It
Black coffee. The bitterness cuts the peanut and the ganache.
For a no-bake spread, add No-Bake Greek Yogurt Cheesecake Squares so people who want โlighterโ have an exit. Peanut people can also raid Protein Cookie Dough. If someone wants hot chocolate instead of cold, send them to the 1 Minute Microwave Brownie and keep these cups for yourself. Boundaries.
Berries on the side are a nice lie about balance. Pretzels on the side are honest. A tiny pour of cold milk is correct.
Contains peanuts and dairy. If you are cooking for a crowd, say it out loud before people dive in with the communal spoon. There is no communal spoon. Give people their own cup. Civilization.
Cup Twists
Pretzel crunch: 2 tbsp crushed pretzels between mousse and ganache. Salty, loud, excellent.
Banana PB: Thin banana slices on the mousse before ganache. Eat same day. Banana plus fridge overnight is a science fair of brown.
Espresso ganache: 1/2 tsp instant espresso in the hot cream. Mocha lid.
Crunchy PB: Swap half the creamy for crunchy. Texture people will thank you.
Lighter: 4 oz cream cheese + 1/2 cup thick Greek yogurt in the base. Slightly tangier, a little less plush. Still not a diet food.
Big pan: Double everything, 8×8, parchment sling. Chill 3 hours. Cut squares. Ganache will crack when you slice โ dip the knife in hot water, wipe, repeat. Very โI meant to do that.โ

Dessert. Peanut butter and cream cheese and cream are not shy. Six cups is better than one giant bowl you โjust keep tasting.โ Dark chocolate keeps the ganache from tasting like candy coating. Milk chocolate works if you drop the powdered sugar in the mousse to 1/3 cup, or it goes too sweet.
Chill Window
Fridge: Covered, 4 days. Best on day 1โ2. Day 4 the mousse is still good, a little denser.
Make-ahead: Mousse in cups 1 day ahead, ganache the day you serve, or fully assembled 24 hours ahead. Both work. Fully assembled is easier for a dinner.
Freezer: You can freeze the mousse cups without ganache, 2 weeks, wrapped well. Thaw in the fridge overnight, then ganache. Frozen ganache on mousse gets dull and sometimes weeps. I would not freeze the finished cup unless you like slightly icy peanut butter fudge. Some people do. I am not some people.
Do not leave them on a warm counter for the party. Ganache gets shiny-soft, then slides. 20 minutes out of the fridge to take the chill off is plenty. Then they go back.
Grainy Cup Traps
Cold cream cheese. White lumps in peanut butter. Soften 45 minutes, or 15-second microwave bursts. Beat it alone first.
Natural PB, not stirred. Oil slick in the mousse. Stir the jar. Then measure.
Overwhipped cream. Grainy, then butter bits. Medium-stiff. If it looks like it is arguing, stop.
Boiling cream on chocolate, then stirring like a maniac immediately. Ganache can split. Simmer, pour, wait 2 minutes, stir from the center.
Lava ganache on mousse. Melts the layer. Cool until it ribbons.
Water in the chocolate. Seized, sandy, sadness. Dry tools. Do not cover a steaming pot with the chocolate bowl if condensation can drip in.
Skipping salt. Peanut butter plus sweet plus chocolate without salt tastes flat, like a candy bar from a vending machine in 2009. Salt is the whole personality.
If you make this peanut butter mousse with chocolate ganache, tell me if you used flaky salt on top. The salt people and the no-salt people cannot sit at the same table. I am salt people. I will still share a cup. Maybe.
Peanut Butter Mousse with Chocolate Ganache
A Reeseโs cup that went to finishing school โ fluffy peanut butter cream you fold, not churn, with a dark chocolate ganache lid that sets soft and cracks when you tap it with a spoon. No oven. Chill does the cooking.
Ingredients 01
No-stir PB stays smooth โ natural PB can go grainy if oil isnโt fully stirred. If mousse looks oily, beat in 2 oz extra cream cheese. Chopped bar > chips for ganache โ chips have stabilizers and can go dull/thick. If ganache looks pasty with chips, add 1 tbsp extra cream. Dry bowl, dry spatula โ water seizes chocolate.

How to Cook 02
Beat 8 oz very soft cream cheese 1 min alone โ lumps now = lumps forever. Add ยพ cup peanut butter, ยฝ cup powdered sugar, 1 tsp vanilla, ยผ tsp salt. Beat 1โ2 min to thick frosting. Taste โ should be salty-sweet peanut, a little too intense. Cream will calm it. Bland now = sad later โ extra pinch salt.
Whip 1 cup cold heavy cream to medium-stiff peaks โ peak stands, tip just nods. Soft = slump, stiff-grainy = butter. Stir โ of cream into base to loosen, then fold the rest with big spatula scoops from the bottom. A few white streaks okay for one more fold. Overfold = deflated pudding.
Divide into 6 cups (4โ6 oz), leave ยฝ inch for ganache. Smooth tops with spoon/offset spatula. Fridge 20โ30 min while you make ganache โ cold mousse takes warm pour without melting.
Chop 4 oz chocolate into a dry bowl. Heat ยฝ cup cream to just simmering at the edges โ not rolling boil. Pour over, do not touch 2 min. Stir from the center out until glossy. Add pinch salt + 1 tsp butter for shine. Split/grainy? 1 tsp warm cream, stir gently โ usually comes back.
Cool ganache 5โ8 min until warm, thick, ribbons off spoon โ not chocolate milk, not frosting. Spoon over mousse, tilt to cover. Flaky salt while tacky if you like sweet-salty. Fridge 2 hr โ cover loosely after 30 min once set so it doesnโt eat fridge smells.
Notes 03
Very soft brick, 45 min on the counter or 15-sec microwave bursts. Beat alone 1 min first. White lumps in peanut butter never dissolve later.
Oil slick on top = loose mousse. Stir jar until one paste, then measure. If oily, beat in 2 oz extra cream cheese. Crunchy = bits, less silky โ your call.
Whip to peak stands, tip nods. If cream looks like itโs arguing (grainy), stop. Overwhipped = butter flecks + deflated mousse.
Simmer, pour, wait 2 min, stir from center. Boiling + frantic stirring = split. Too thick? 1 tsp warm cream. Too thin? Let it sit 2 more min.
Hot ganache melts mousse into swirls. Cool until it ribbons. Warm chocolate honey is the pour. Test on spoon โ should coat thickly then slowly fall.
Dry bowl, dry spatula. One drip = seized sandy ganache. And donโt skip salt โ PB + sweet + chocolate without salt tastes flat like 2009 vending machine candy. Salt is the personality.
