Zucchini maple cake is what I bake when the garden (or the grocery store) hands me a zucchini the size of a small canoe and I refuse to make another round of sautรฉed squash. Grated zucchini disappears into a maple-spiced sponge. Moist crumb. Cinnamon. Real maple. A glaze that tastes like breakfast and dessert had a very autumnal handshake.
You do not taste salad. You taste warm spice and maple. The zucchini is the moisture intern. It shows up, does the water work, and stays quiet. Same energy as my Chocolate Spinach Muffins, except this one wears a flannel shirt.
If you like simple cakes that stay soft, Coconut Milk Cake is the tropical cousin and Lemon Blueberry Bread is the bright one. This loaf is for sweater weather, coffee, and the โI still have zucchiniโ era that lasts until November.
Why Zucchini Makes Cake Stay Soft (Without Tasting Like Squash)
Zucchini is about 95% water. That water steams inside the batter as it bakes, so the crumb stays tender days later. Oil helps too, but oil alone can taste greasy. Zucchini is moisture without extra fat. Spices and maple cover the rest. Nobody at the table needs to know unless you want credit for vegetables.
The squeeze is the whole game:
- Dripping wet shreds: soggy middle, gummy line at the bottom
- Squeezed bone-dry: you threw away the point of zucchini
- Light squeeze: shreds that are damp, not swimming. A handful in a towel, press once, not a wrestling match
Do not peel it. The skin is thin, it bakes in, and peeling is unpaid labor. Fine grate if you want it fully hidden. Box-grater medium holes leave tiny green flecks that look pretty and still do not taste like side dish.
Maple syrup is slightly acidic. Baking soda loves that. Together they lift the sponge so it is not a maple brick. Pancake syrup (the corn-syrup kind in a cabin-shaped bottle) is mostly sugar water and fake flavor. The cake will bake. It will not taste like trees. Use real maple, even the cheap grade A dark. Dark is actually better here. More flavor, less โwhy did I spend $18.โ

๐ Equipment I Need for Zucchini Maple Cake
No mixer needed! Here are the 5 essential tools for shredding, moisture control, and baking a tender spiced sponge.
USA Pan Bakeware Nonstick Loaf Pan (8.5 x 4.5 / 9×5)
Heavy aluminized steel conducts heat evenly through dense spiced batter so the loaf bakes tall without burnt edges.
OXO Good Grips 4-Sided Stainless Steel Box Grater
Medium etched holes produce tender, uniform zucchini shreds that melt seamlessly into the spiced sponge rather than releasing watery sludge.
Utopia Kitchen 100% Cotton Flour Sack Towels (12-Pack)
Lint-free cotton absorbs standing surface moisture from grated zucchini without stripping away its natural baking moisture.
Pyrex Essentials 3-Piece Glass Mixing Bowls Set
Whisk maple syrup, oil, and eggs in one bowl, whisk dry spices in the second, then gently fold together with a spatula.
Checkered Chef Stainless Steel Cooling Racks (Set of 2)
Circulates air beneath the hot loaf pan and inverted cake so trapped pan steam doesn’t pool and turn the bottom crust soggy.
No mixer. Overmixing is the enemy of this sponge. A spatula cannot beat gluten as hard as a mixer. That is a feature.
Maple Basket
Cake:
- Zucchini – 1 1/2 cups grated (about 180g), lightly squeezed – 1 medium
- All-purpose flour – 1 3/4 cups (220g), spooned and leveled
- Baking soda – 1 tsp + Baking powder – 1/2 tsp + Fine sea salt – 1/2 tsp
- Ground cinnamon – 1 1/2 tsp + Nutmeg – 1/4 tsp + Ground ginger – 1/4 tsp
- Pure maple syrup – 1/2 cup (120ml) – real maple, dark if you have it
- Packed brown sugar – 1/3 cup (65g)
- Neutral oil – 1/3 cup (80ml) – or light olive oil
- Large eggs – 2, room temp
- Plain Greek yogurt or milk – 1/4 cup (60g)
- Pure vanilla extract – 1 tsp
- Chopped walnuts or pecans – 1/2 cup (optional)
Maple glaze:
- Powdered sugar – 3/4 cup (90g)
- Pure maple syrup – 2 tbsp
- Pinch salt + 1 tsp milk only if too thick
Zucchini tip: Measure after a light squeeze. 1 1/2 cups packed wet is not the same as 1 1/2 cups damp. Maple tip: If the bottle says โmaple-flavored,โ put it back. If it says โpure maple syrup,โ we can be friends.
Grate, Fold, Bake
1. Heat and line. 350ยฐF (175ยฐC). Parchment sling in a 9×5 pan, light grease on the short ends.
2. Grate and squeeze once.
Trim the ends. Grate. Pile in a towel. Press once until it is damp, not dripping. You should not get a puddle. You also should not get zucchini dust. Set aside.
3. Wet, then dry. Whisk maple, brown sugar, oil, eggs, yogurt, vanilla until smooth. In the other bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger.
4. Fold. Do not beat.
Wet into dry. Spatula, 10โ12 strokes, streaks of flour okay. Fold in zucchini (and nuts if using) with 4 more strokes. Batter will look thicker than cake mix and a little lumpy. That is correct. Smooth batter is overmixed batter.
5. Bake until the top is golden and a toothpick has moist crumbs. 48โ55 minutes. Tent foil at 40 if the top is browning fast. A wet line of batter means more time. A dry, clean toothpick usually means you went 5 minutes too long. Pull it at moist crumbs. This cake dries at the edges if you โjust give it another 10.โ
Cool in pan 15 minutes, then rack. Hot loaf + glaze = maple puddle on the counter. Tasty puddle. Not a look.
6. Glaze when it is just warm.
Whisk powdered sugar, 2 tbsp maple, pinch salt. Thick but pourable. Drizzle. Let it set 15 minutes so it is a glaze, not a slip-and-slide.
Soft spice sponge, maple on top, tiny green flecks if you used a medium grate. Coffee. Maybe a second slice. The second slice is research.
Pour Beside
Coffee. Always. Maple and coffee are a legal couple.
For brunch, thick slices next to Lemon Blueberry Bread so you have spice and citrus on one table. Coconut Milk Cake if you want a second soft cake and you are feeding people who โdo not like zucchiniโ (they will eat this). Hidden-veggie fans already know the Chocolate Spinach Muffins.
Also good toasted the next day with a little butter. The maple glaze gets shiny and a bit sticky. That is a feature. Ice cream on a warm slice is not breakfast. I did it anyway.
Autumn Twists
Apple zucchini: Fold in 1/2 cup finely diced apple with the zucchini. Extra 1 tbsp flour if the batter looks loose.
Cream cheese swirl: Beat 4 oz cream cheese + 2 tbsp maple + 1 egg yolk. Dollop and swirl before baking. Cheesecake-meets-loaf.
Chocolate chip maple: 1/2 cup dark chips. Mini chips sink less.
Gluten-free: 1:1 GF baking flour, same grams. Rest 10 minutes before baking.
Cupcakes: 18โ20 minutes at 350ยฐF, 12 liners, 3/4 full. Same batter, faster.
Less sweet: Skip the glaze, 1/4 cup brown sugar in the batter, keep the maple. More โsnack loaf,โ less โcake.โ

Cake with a vegetable intern. Maple and brown sugar are still sugar. Zucchini adds moisture and a little fiber, not a green juice cleanse. Nuts bump protein and crunch if you add them.
Soft for Days
Zucchini cake is a counter cake.
Room temp: Wrapped, 3 days. It gets moister on day two. That is the zucchini still doing its job.
Fridge: Up to 5 days, well wrapped. Cold slices taste denser. 15 minutes on the counter, or a 10-second microwave, and it is a sponge again.
Freezer: Cool completely. Wrap slices, freeze 2 months. Thaw on the counter 45 minutes. Glaze after thawing if you want it pretty. Glaze freezes okay, just a little dull.
Do not fridge unwrapped. The cut face dries. Wrap it like you mean it. Also do not store it warm in a sealed box unless you enjoy a sticky, wet top.
Wet Loaf Traps
No squeeze at all. Puddle in the pan, gummy ribbon at the bottom. Light squeeze. Once.
Pancake syrup. Fake maple flavor, thinner batter, sweeter in a hollow way. Pure maple.
Overmixing after flour. Tight, tough crumb. Fold. Walk away.
Overbaking. The number one way a โmoist zucchini cakeโ becomes dry spice bread. Moist crumbs on the toothpick. Not clean.
Giant zucchini full of seeds. The huge ones are watery and seedy. Scoop big seeds out, or use a medium zucchini. Flavor is better anyway.
Glazing a lava-hot loaf. Glaze runs off. Wait 20โ30 minutes. Warm is fine. Smoking is not.
Skipping salt in the batter. Maple plus cinnamon without salt tastes flat, like a candle. Half teaspoon. It is doing work.
If you make this zucchini maple cake, tell me if anyone spotted the vegetable. Mine never do. I still point at the tiny green flecks like a proud detective.
Happy autumn baking โ canoe-zucchini welcome!
Zucchini Maple Cake
Grated zucchini vanishes into a maple-spiced sponge โ moist crumb, cinnamon, real maple, and a glaze that tastes like breakfast met dessert in flannel. No salad taste, just sweater-weather softness for canoe-size zucchinis and coffee.

How to Cook 02
350ยฐF (175ยฐC). Parchment sling in a 9ร5 loaf pan, light grease on the short ends. Overhang on the long sides = easy lift.
Trim ends, box-grate on medium holes (fine if you want it invisible). Pile in a clean towel, press once until damp not dripping. No puddle, no wrestling. Tiny green flecks = pretty. Do not peel โ skin bakes in.
Whisk ยฝ cup maple, โ cup brown sugar, โ cup oil, 2 eggs, ยผ cup yogurt/milk, 1 tsp vanilla until smooth. In the other bowl whisk 1ยพ cups flour, 1 tsp baking soda, ยฝ tsp baking powder, ยฝ tsp salt, 1ยฝ tsp cinnamon, ยผ tsp nutmeg, ยผ tsp ginger.
Pour wet into dry. Spatula 10โ12 strokes, flour streaks okay. Fold in zucchini (and ยฝ cup nuts if using) with 4 more strokes. Batter looks thicker than cake mix, a little lumpy โ correct. Smooth = overmixed and tough.
Bake 48โ55 minutes. Tent foil at 40 if top browns fast. Toothpick should have moist crumbs โ wet batter = more time, clean = 5 min too long. Edges dry fast if you โgive it 10 more.โ
Cool in pan 15 min, then lift to wire rack. Whisk ยพ cup powdered sugar + 2 tbsp maple + pinch salt โ thick but pourable, 1 tsp milk only if needed. Drizzle on just warm (not lava-hot) loaf. Let set 15 min so glaze sets, not slides.
Notes 03
Damp not dripping. No squeeze = puddle + gummy bottom. Bone-dry = you tossed the moisture intern. One press in a towel is the sweet spot.
Pure maple lifts with baking soda โ acidic + soda = tender sponge. Pancake syrup (cabin bottle) = sugar water, fake flavor, thinner batter, hollow sweet. Use pure, dark if you have it.
After flour hits wet, spatula only. Mixer = gluten = tight crumb. 10โ12 + 4 strokes and walk away. Lumps are friends here.
#1 dry-loaf trap. Pull at moist crumbs. Clean toothpick = dry edges. Center steams as it cools โ trust it.
Huge zucchinis are watery + seedy. Use 1 medium (~180g grated). Giant? Scoop big seeds first. Flavor from medium is better anyway.
Counter 3 days (moister day 2), fridge 5 days well-wrapped, freeze slices 2 months โ glaze after thaw. Don’t fridge unwrapped or warm in a sealed box = sticky wet top.
