This Mediterranean diet snack is a no-bake fig and walnut energy bar you press into a pan. Dried figs, toasted walnuts, a few dates to glue it, orange zest, a spoon of olive oil, salt. No oven. No protein powder. No chocolate coating pretending this is candy.
I make a pan when I want something in the bag that is not a granola bar from a box. Figs and walnuts show up on Mediterranean tables for a reason. They are sweet, fatty, and filling. They are also still dried fruit and nuts, so they are not a free pass. One bar with coffee. Two if lunch is late.
Other no-bake bites: Little Chocolate Chickpea Truffles. Baked oat squares for the week: Easy Healthy Breakfast Bars. Fridge breakfast in a jar: Coconut Cream Pie Overnight Oats.
Why soak the figs, and why you still need dates
Dried figs vary. Soft, plump ones pulse into paste. Hard, dusty ones stay as pebbles and the bars crumble. If they feel stiff, cover them with hot water for 10 minutes, then drain and pat dry. Stems off. Always. A stem in a bar is a tooth surprise.
Dates are stickier than figs. Half a cup is the glue. Skip them and you need extra honey, and even then the slab can fall apart in a lunch bag. Honey is optional on top of dates. I use a tablespoon when the mix looks dry.
Walnuts need a toast. Six to eight minutes at 350 F until they smell like walnuts. Cool them. Hot nuts melt the fruit into oil. Chop some extra for the top so you get crunch, not only paste.
Olive oil is a tablespoon, not a quarter cup. It helps the mix press and adds that Mediterranean taste. More than that and the bars feel greasy in the fridge. Orange zest, not juice. Juice makes the mix wet and the bars never set. Salt makes the fruit taste like fruit instead of jam.
Pulse, do not puree. You want visible walnut bits and fig pieces. Baby-food paste tastes like one note and sticks to the lid.
- Prep Time: 20 minutes
- Soak Time: 10 minutes if figs are dry
- Chill Time: 2 hours
- Total Time: about 2 hours 30 minutes
- Yield: 12 bars (8×8 pan)
Board & Blade
You need:
- Food processor
- 8×8-inch pan
- Parchment with overhang
- Sharp knife
- Bowl of hot water if the figs are tough
A blender can work in short bursts. You will scrape more. A knife-only chop is possible. It takes longer and the bars are chunkier.
Fig List
- Dried figs – 1 1/2 cups (225g), stems removed
- Walnuts – 1 cup (100g), toasted, plus 2 tbsp chopped for the top
- Pitted dates – 1/2 cup (75g)
- Extra-virgin olive oil – 1 tbsp
- Orange zest – 1 tsp packed
- Ground cinnamon – 1/4 tsp
- Fine sea salt – 1/4 tsp
- Honey – 1 tbsp, optional
- Sesame seeds – 1 tbsp, optional, for the top
- Rolled oats – 1/3 cup (30g), optional, if the mix is too wet
Fig tip: Mission or Calimyrna both work. Calimyrna is milder. Walnut tip: If all you have is salted cocktail walnuts, skip the 1/4 tsp salt in the mix.
Soak, Pulse, Press
1. Prep.
Toast walnuts 6 to 8 minutes at 350 F. Cool. Stem the figs. Soak 10 minutes in hot water if they are hard. Drain and pat dry. Line the pan with parchment.
2. Pulse.
Figs, dates, 1 cup walnuts, olive oil, zest, cinnamon, salt, honey if using. Pulse in bursts. Scrape the bowl. Stop when it clumps if you squeeze it. If it looks wet, add oats and pulse twice. If it looks sandy and will not hold, 1 more tablespoon honey or 2 more dates.
3. Press.
Dump into the pan. Press hard, especially corners. Wet your fingers so it does not stick. Sprinkle extra walnuts and sesame. Press those in so they do not fall off in the bag. Fridge 2 hours.
4. Cut. Lift the parchment. Sharp knife, wipe between cuts. 12 bars. Cold bars cut. Warm mix smears.
Chewy fig, crunchy walnut, a little orange. Coffee. This is a snack, not a slice of cake. It still tastes like dessert if you close your eyes.
Pack Cold
They travel. Wrap each one or they glue themselves into a brick.
Chickpea chocolate when you want cocoa: Little Chocolate Chickpea Truffles. Baked oats for breakfast: Easy Healthy Breakfast Bars. Something to eat with a spoon: Coconut Cream Pie Overnight Oats.
Walnuts are tree nuts. Figs and dates are high in natural sugar. Honey is not for babies under 1 year. Say nuts if you share the pan.
Fig Riffs
Almonds: Swap half the walnuts. Still Mediterranean. Still announce nuts.
Lemon zest: Instead of orange. Brighter.
No honey: Dates only. Slightly less glossy.
Cocoa: 1 tbsp in the processor. Not traditional. Still good.
Oat-heavy: 1/2 cup oats. Less sticky, a bit drier. Good for a warmer kitchen.
Mini bites: Roll tablespoons instead of a pan. Faster to pack. Same chill.

|---|---|
| Calories | 160 kcal |
| Protein | 3 g |
| Carbohydrates | 22 g |
| Fats | 8 g |
| Fiber | 3 g |
| Sugar | 16 g |
The 16 grams of sugar is fruit. That still counts. Twelve bars from an 8×8 is a week of snacks if you do not eat three on day one.
Fridge Pack
Fridge: Airtight, 1 week. Best texture cold.
Room temp: A few hours in a bag is fine. A full day in a hot car is fig paste.
Freezer: Wrap, 2 months. Thaw 10 minutes. I eat them frozen more than I planned to.
Parchment between layers. They stick like glue.
Cool the toasted walnuts before you mix. Warm nuts make oil puddles.
Dry Fig Traps
Stems left on. Tough bits. Pull them.
No soak on hard figs. Crumbly bars. Ten minutes in hot water.
Skipping dates. It will not hold. Use them.
Orange juice instead of zest. Wet slab that never sets.
Pureeing to baby food. Sticky lid, no crunch. Pulse.
A shy press. Corners fall off. Lean on it.
Cutting at room temp after 10 minutes. Smear. Two hours in the fridge.
Calling them sugar-free. Dried fruit is sugar.
Not saying walnuts. Don’t.
If you make these no-bake fig and walnut energy bars, say whether you soaked the figs. Soft figs skip the soak. Hard figs need it. I soak when the bag has been in the cupboard since last winter, which is more often than it should be.
No-Bake Fig and Walnut Energy Bars
Mediterranean press-in-the-pan snack: dried figs, toasted walnuts, sticky dates, orange zest, olive oil and salt. No oven. Pulse to clumps with visible bits, press hard into 8×8, chill 2 hours. Sweet, fatty, filling — one bar with coffee, two if lunch is late.
Ingredients 01
Toast walnuts 6–8 min at 350°F, then cool. Hot nuts melt the fruit into oil. Hard, dusty figs? Hot water 10 min, drain, pat dry — stems off always. Orange zest, not juice — juice makes a wet slab that never sets. If using salted cocktail walnuts, skip the ¼ tsp salt.

How to Cook 02
Toast 1 cup walnuts 6–8 min at 350°F until they smell like walnuts. Cool completely. Stem 1½ cups figs — pull every stem (tooth surprise if you don’t). If figs are hard, soak 10 min in hot water, drain and pat dry. Line 8×8 with parchment overhang.
In food processor: figs + ½ cup dates + 1 cup toasted walnuts + 1 Tbsp olive oil + 1 tsp zest + ¼ tsp cinnamon + ¼ tsp salt + 1 Tbsp honey if using. Pulse in bursts, scrape the bowl. Stop when it clumps if you squeeze it — visible walnut bits and fig pieces should remain. Pulse, don’t puree. Too wet? Add ⅓ cup oats, pulse twice. Too sandy? Add 1 Tbsp honey or 2 dates.
Dump into pan. Press hard, especially corners — wet your fingers so it doesn’t stick. Sprinkle 2 Tbsp chopped walnuts + 1 Tbsp sesame if using. Press those in so they don’t fall off in the bag. Fridge 2 hours. A shy press = corners fall off.
Lift parchment. Sharp knife, wipe between cuts. Cut 12 bars. Cold bars cut — warm mix smears. Wrap each one or they glue into a brick. Chewy fig, crunchy walnut, a little orange. Coffee.
Notes 03
Dates are stickier than figs. ½ cup is the glue. Skip them and the slab falls apart in a lunch bag. Soak hard figs — soft, plump ones can skip the 10 min. Calimyrna is milder than Mission; both work.
Toast adds crunch and smell, but cool before mixing. Warm nuts make oil puddles. Chop extra for the top for crunch, not only paste inside.
1 tsp packed zest, never juice. Juice wets the mix and it never sets. 1 Tbsp olive oil is the Mediterranean taste — more makes greasy bars. Salt makes fruit taste like fruit, not jam.
Almonds: swap half the walnuts. Lemon zest: brighter. No honey: dates only, less glossy. Cocoa 1 Tbsp: not traditional, still good. Oat-heavy ½ cup: less sticky, good in warm kitchen. Mini bites: roll tablespoons.
Fridge airtight 1 week — best cold. Room temp a few hours is fine; hot-car day = fig paste. Freezer wrap 2 months, thaw 10 min (good frozen too). Parchment between layers — they stick like glue.
Stems left = tough bits. No soak on hard figs = crumble. Don’t puree to baby food — sticky lid, no crunch. Don’t cut warm — 2-hr chill. Not sugar-free — 16g is fruit sugar. And always say walnuts.
