Apple crisp shortbread bars are pie and cookie sharing a pan without fighting. Buttery shortbread on the bottom. Sweet cinnamon apples in the middle. Oat crisp on top. You get a snap from the crust, jammy fruit, and that golden crumble people pick off first and then deny.
This is the bar I make when I want apple crisp but I also want to pick it up. No bowl. No โis the filling bubbling enough.โ Par-bake the shortbread, pile on apples, shower the crisp, bake until it smells like October. Cool. Cut. Pretend you will share.
I used to skip the par-bake. The crust went pale and sad, like a cookie that never got invited. Ten extra minutes in the oven first is the whole difference between shortbread and soggy sand. If you already love my Strawberry Oat Bars, this is the autumn twin. Cozy apple breakfast people, Creamy Vanilla Porridge with Brown Sugar Apples is the spoon version. And if your kitchen is in full spice mode, Zucchini Maple Cake can live on the same counter.
When you want even more recipes after this pan disappears โ my friend Anna keeps a whole kitchen of simple, family-happy food at Kitchenag. She even has apple cider caramel bars if one apple square is not a personality yet.
Why Shortbread Needs a Head Start (and Apples Need a Mix)
Shortbread is mostly butter and flour. Very little water. That is why it tastes like a cookie, not cake. If you dump wet apples on raw shortbread, the fruit juice soaks in before the butter can set. You get a pale, greasy bottom. Par-baking sets the crust so it stays a cookie under the filling. Think of it as giving the shortbread a 15-minute head start in a race against apple juice.
Apples are not all the same. Granny Smith holds its shape and brings tart. Honeycrisp or Fuji go sweeter and a little softer. I use both. All Granny Smith can taste like pie filling that forgot dessert. All super-sweet apples can go mushy and one-note. Two kinds is not fancy. It is insurance.
Cornstarch is the jam button. Heat plus sugar plus starch turns apple liquid into a filling that slices. Skip it and you get apple soup on a crust, which is a vibe, just not a bar. Lemon juice keeps the fruit bright so cinnamon does not taste dusty.
Oats in the topping are what make it โcrispโ instead of plain streusel. Rolled oats brown, stay a little chewy, and do not melt into the apples. Quick oats disappear. Steel-cut oats stay like gravel. Rolled. We have had this talk.

- Cool Time: 2 hours
- Total Time: about 3 hours (mostly cooling)
- Yield: 16 bars (8×8 pan)
Tin & Sling
Short list:
- 8×8 inch pan + parchment sling – overhang on two sides so you lift, not excavate
- Mixing bowls – one for crust, one for apples, one for crisp (or reuse like a person with one bowl and a sink)
- Pastry cutter or fork – cold butter into flour. Fingers work. Cold fingers work better.
- Sharp knife – wipe between cuts
- Wire rack – cool the whole slab before you even think about slicing
No mixer. Warm hands will melt the shortbread butter if you knead it like bread. Donโt.
Shortbread List
Shortbread crust:
- All-purpose flour – 1 cup (125g)
- Granulated sugar – 1/3 cup (65g)
- Fine sea salt – 1/4 tsp
- Unsalted butter – 1/2 cup (113g), cold, cubed
- Pure vanilla extract – 1/2 tsp
Apple filling:
- Apples – 3 cups peeled and diced small (about 3 medium / 400g) – mix Granny Smith + Honeycrisp
- Packed brown sugar – 2 tbsp + Granulated sugar – 1 tbsp
- Cornstarch – 1 tbsp
- Fresh lemon juice – 1 tbsp
- Ground cinnamon – 1 tsp + Nutmeg – pinch + Fine sea salt – pinch
- Pure vanilla extract – 1/2 tsp
Oat crisp topping:
- Old-fashioned rolled oats – 1/2 cup (45g)
- All-purpose flour – 1/3 cup (40g)
- Packed brown sugar – 1/3 cup (65g)
- Ground cinnamon – 1/2 tsp + Pinch salt
- Unsalted butter – 4 tbsp (56g), cold, cubed
Apple tip: Small dice (about 1/2 inch) so the filling sits in a bar, not a cobbler. Big chunks poke through the topping like they are trying to escape. Butter tip: Cold. If it looks greasy in the bowl, it is too warm. Five minutes in the fridge. Shortbread is a cold-butter sport.
Blind, Fill, Top
1. Heat and line. 350ยฐF (175ยฐC). Parchment sling in the 8×8. Light grease on the bare sides.
2. Make shortbread and press.
Stir flour, sugar, salt. Cut in cold butter until it looks like damp crumbs with pea-size bits. Vanilla. Squeeze a handful โ it should hold, then crumble. Press firmly into the pan, especially the corners. Weak corners = bars that crumble in your hand, which is romantic until you are wearing them.
3. Par-bake 15 minutes. Edges just turning pale gold. This is the โno soggy bottomโ insurance. Do not skip it even if you are late. Being late with a soggy crust is still late, plus soggy.
4. Toss the apples while the crust bakes.
Dice small. Toss with both sugars, cornstarch, lemon, cinnamon, nutmeg, salt, vanilla until every piece looks coated, not swimming. If you see a puddle in the bowl, you diced too far ahead and the salt/sugar pulled juice. Drain a tablespoon if it is soupy. Spread apples in an even layer over the hot crust.
5. Crisp topping, then bake again.
Oats, flour, brown sugar, cinnamon, salt. Cut in cold butter until clumpy. Squeeze some bigger clumps โ those get extra crunchy. Scatter over apples. Leave a little fruit peeking through so it looks like apple crisp, not a granola lid.
Bake 32โ38 minutes more, until the topping is deep golden and the filling bubbles at the edges. Pale topping tastes like raw flour. You want color.
6. Cool like you mean it. Rack, in the pan, 2 hours. Fridge 30 minutes if you are impatient and honest. Lift out. Cut 4×4. Wipe the knife. Hot bars smear into apple oatmeal. Still edible. Not photogenic. Not a clean square.
Cookie crust. Cinnamon apples. Crisp lid. Coffee. Maybe ice cream if you have lost your sense of time and it is 4pm.
Plate With
Hot coffee or cold milk. These are sweet-spice bars. They like something bitter or plain.
Warm a square 10 seconds and add vanilla ice cream if you are calling it dessert. Breakfast people, I will not stop you. I will also not testify.
Bar-pan friends already know Strawberry Oat Bars. Apple mornings, keep brown sugar apple porridge in the rotation so you are not a one-texture household. Spice cake people can bake Zucchini Maple Cake the same weekend and freeze slices.
And if you want to wander off this site into another home kitchen, Annaโs recipes at kitchenag.com are the โwhat else should I cook this weekโ pile โ breakfast through dessert, including those apple cider caramel bars when this pan is gone.
Apple Swaps
Salted caramel drizzle: 2 tbsp thick caramel on the cooled bars + flaky salt. Extra. Worth it.
Pecan crisp: 1/3 cup chopped pecans in the topping. Toast-adjacent without a second pan.
Pear mix: Half apple, half firm pear. Same starch. Slightly floral.
Gluten-free: 1:1 GF baking flour in crust and topping + certified GF oats. Same weights. Press the crust extra firm.
Maple brown sugar: Swap the 2 tbsp brown sugar in the filling for maple syrup, add 1 extra teaspoon cornstarch. Wetter, so do not skip the extra starch.
9×13 party pan: Double every layer. Par-bake 18 minutes, second bake 35โ40. More bars, more friends, more โwho ate the corner.โ

Treat bar with real fruit. Butter is why the shortbread tastes like shortbread. Oats and apples do a little fiber work. Ice cream on top is not in this table and does not want to be.
Next-Day Bars
Counter: Airtight, 2 days. Crisp topping stays happiest slightly cool, not in a steamy kitchen.
Fridge: Up to 5 days. Cold bars cut cleaner and taste more like apple pie. 10 seconds in the microwave if you want the butter to wake up.
Freezer: Wrap squares, freeze 2 months. Thaw in the fridge or 30 minutes on the counter. Topping softens a bit. Still very good. Recrisp 5 minutes in a 350ยฐF oven if you are picky (I am picky).
Do not box them warm. Steam turns crisp into oatmeal. Cool fully. I know waiting is rude. The bars know too.
Soft Crust Traps
Skipping the par-bake. Pale, soggy shortbread. 15 minutes. Non-negotiable.
Warm butter in the crust. Greasy, spread-thin, no snap. Cold cubes. If the dough looks shiny and wet, fridge 10 minutes.
All one apple, big chunks. Mush or bland, plus chunks that wreck the top. Mix varieties, small dice.
No cornstarch. Apple juice flood. One tablespoon. If apples are extra juicy, 1 extra teaspoon.
Cutting hot. Layers smear. Two hours. Or fridge 30. Or eat it with a spoon and call it deconstructed. I support your chaos. I will not call it a bar.
Quick oats in the topping. They vanish. Rolled oats. The chew is the crisp.
Pale second bake. Raw flour taste. Golden brown, bubbling edges. Tent foil the last 8 minutes only if the top is already dark and the filling is not bubbling yet.
If you make these apple crisp shortbread bars, tell me if you stole the corner piece with extra crisp. That piece has a name. It is chefโs tax. I donโt make the rules. I just enforce them.

How to Cook 02
350ยฐF (175ยฐC). Parchment sling in an 8ร8 pan, overhang on two sides, light grease on bare sides.
Stir 1 cup flour, โ cup sugar, ยผ tsp salt. Cut in ยฝ cup cold cubed butter to damp crumbs with pea-size bits. Add ยฝ tsp vanilla. Squeeze โ should hold then crumble. Press firmly into pan, corners tight. Weak corners = crumbly hands later.
Bake 15 min โ edges just pale gold. This sets the butter before apple juice arrives. Donโt skip โ without it, bottom is pale and soggy. Thatโs a cookie that never got invited.
While crust bakes, dice 3 cups apples small. Toss with 2 tbsp brown sugar + 1 tbsp white sugar, 1 tbsp cornstarch, 1 tbsp lemon, 1 tsp cinnamon, pinch nutmeg, pinch salt, ยฝ tsp vanilla until coated, not swimming. If soupy, drain 1 tbsp. Spread even layer over hot crust.
Mix ยฝ cup oats, โ cup flour, โ cup brown sugar, ยฝ tsp cinnamon, pinch salt. Cut in 4 tbsp cold butter to clumpy โ squeeze bigger clumps for crunch. Scatter over apples, leave a little fruit peeking. Bake 32โ38 min until deep golden, filling bubbles at edges. Pale = raw flour taste.
Rack in pan 2 hours. Fridge 30 min if impatient โ then lift, cut 4ร4 (16 bars), wipe knife between cuts. Hot bars smear into apple oatmeal โ edible, not photogenic, not a bar.
Notes 03
Shortbread is butter + flour, little water. 15 min head start sets it so apple juice doesnโt soak in. Skipping = pale, greasy, soggy sand. Non-negotiable.
If dough looks shiny/wet, butter got warm. Cold cubes, fridge 10 min. Warm hands melt it โ cut fast, press firm.
Granny + Honeycrisp = tart holds shape + sweet goes soft. All one = bland or mush. ยฝ-inch dice sits in a bar; big chunks wreck the crisp lid.
Heat + sugar + starch = jam that slices. No starch = apple soup on a crust. 1 tbsp, plus 1 extra tsp if apples super juicy.
Steam + warm filling = smear. 2 hr cool + 30 min fridge = clean squares. Wipe knife. Or eat hot with a spoon and call it โdeconstructed.โ
Quick oats vanish, steel-cut = gravel. Rolled oats brown, stay chewy, and keep the โcrispโ in apple crisp. Same with second bake: deep golden + bubbling edges โ pale tastes like flour.
