Maple brown butter pumpkin coffee cake is what I bake when I want pumpkin spice without drinking a candle. Nutty brown butter. Real maple. Soft pumpkin crumb. Cinnamon streusel on top that people pick off with their fingers and then look innocent. Coffee cake, so it is legally breakfast. I did not make that law. I just enforce it.
This is not a fussy layer cake. One 8×8 pan. Brown the butter, mix the batter, dump the crumb, bake until the kitchen smells like a sweater. No mixer. No 14-step frosting. A maple glaze if you want it shiny. A naked streusel top if you want it less sweet. Both are correct. Both will disappear.
If classic cinnamon is more your mood, my BEST Coffee Cake is the original cozy pan. Maple people already know Zucchini Maple Cake. And if โcoffeeโ in the title made you want actual espresso in breakfast, Tiramisu Baked Oats is the ramekin cousin.
Why Brown Butter Tastes Like Nuts (and Pumpkin Keeps It Moist)
Brown butter is just butter you did not walk away from. Water cooks off. Milk solids toast. You get that hazelnut smell and little brown specks that are not burnt โ they are the whole point. Walk away and they go from โtoastyโ to โcampfireโ in about 20 seconds. I have donated butter to science this way. Stay with the pan.
Because some water leaves the butter, brown-butter cakes can run dry if you treat them like regular melted-butter cakes. Pumpkin puree is the insurance. It is mostly water and fiber. It steams the crumb from the inside, same trick zucchini uses, except here it also tastes like fall. Maple is slightly acidic, so baking soda has something to react with. Lift plus moisture plus nutty fat. That is the sponge.
Two cans that are not the same:
Pumpkin puree โ pumpkin. Thatโs it. This recipe.
Pumpkin pie filling โ already sweetened and spiced. Too wet, too sweet, the cake tastes like a can. If that is all you have, skip the extra spice and cut the brown sugar, but puree is the move.
Cool the brown butter 10 minutes before it hits the eggs. Hot butter plus eggs is scrambled breakfast in your batter. Still edible. Not the vibe.
- Prep Time: 20 minutes
- Cook Time: 35 minutes
- Total Time: 1 hour (including a short cool)
- Yield: 9 squares (8×8 pan)
Square Pan
You need almost nothing:
- Light-colored skillet – so you can see the butter go golden, not guess in a black pan
- 8×8 pan + parchment sling – 9×9 works, cake runs a little thinner, check 5 minutes early
- Two bowls + whisk + spatula
- Fork or pastry cutter – streusel
- Wire rack
No stand mixer. Overmixing pumpkin batter is how you get a gummy, tunnel-y crumb that tastes like you were angry at it.
Pumpkin Lineup
Brown butter:
- Unsalted butter – 1/2 cup (113g) – you will brown it and use all of it, specks included
Cake:
- All-purpose flour – 1 1/2 cups (190g), spooned and leveled
- Baking powder – 1 tsp + Baking soda – 1/2 tsp + Fine sea salt – 1/2 tsp
- Ground cinnamon – 1 1/2 tsp + Ginger – 1/2 tsp + Nutmeg – 1/4 tsp + Cloves – pinch
- Pumpkin puree – 3/4 cup (180g) – not pie filling
- Pure maple syrup – 1/3 cup (80ml) – real maple
- Packed brown sugar – 1/2 cup (100g)
- Large eggs – 2, room temp
- Milk or plain Greek yogurt – 1/4 cup (60ml)
- Pure vanilla extract – 1 tsp
Streusel:
- All-purpose flour – 1/2 cup (60g)
- Packed brown sugar – 1/3 cup (65g)
- Ground cinnamon – 1 tsp + Pinch salt
- Unsalted butter – 4 tbsp (56g), cold, cubed
- Chopped pecans – 1/3 cup, optional
Maple glaze (optional):
- Powdered sugar – 3/4 cup (90g)
- Pure maple syrup – 2 tbsp + Pinch salt
- Milk – 1 tsp, only if too thick
Butter tip: Medium heat, swirl the pan, pull it when it smells nutty and the specks are amber. If it smells bitter, you went too far. Start over. Butter is cheaper than a sad cake. Pumpkin tip: If the puree looks watery, blot it with a paper towel. Extra water = gummy middle.
Brown, Mix, Bake
1. Heat and line. 350ยฐF (175ยฐC). Parchment sling in the 8×8.
2. Brown the butter.
Melt butter in the skillet over medium. It foams, then the foam quiets, then it smells like toasted nuts and the milk solids go golden-brown. 5โ8 minutes. Pour it into a bowl, scrape every speck. Cool 10 minutes. If you pour lava butter on eggs, you get pumpkin scramble. Learn from my mistakes. They were orange.
3. Streusel while it cools. Flour, brown sugar, cinnamon, salt. Cut in cold butter until clumpy. Squeeze a few bigger clumps. Pecans if you are using them. Fridge the bowl if your kitchen is warm. Streusel likes to be chilly.
4. Mix wet, then dry.
Whisk cooled brown butter, pumpkin, maple, brown sugar, eggs, milk or yogurt, vanilla until smooth. In the other bowl, whisk flour, baking powder, baking soda, salt, and spices.
5. Fold. Do not beat. Wet into dry. Spatula, 12โ15 strokes. Streaks of flour are okay. Smooth, elastic batter is overmixed batter. Overmixed pumpkin cake bakes up tight and sad, like a muffin that peaked in high school.
6. Pan, crumb, bake.
Spread batter in the pan. It will be thick. Streusel on top. All of it. This is coffee cake, not a modest loaf. Bake 32โ38 minutes, until the center springs back and a toothpick has moist crumbs, not wet batter. Tent foil at 30 if the streusel is already dark.
Cool in pan 15 minutes, then rack. Glaze when it is just warm: powdered sugar, maple, pinch salt. Thick ribbon, not soup. If you glaze a lava cake, you get maple puddle. Tasty puddle. Not a look.
Moist pumpkin crumb, nutty butter, crunchy cinnamon lid, maple on top. Coffee. Maybe a second square. The second square is market research.
Slice Beside
Coffee. The name promised it.
For a brunch table, this pan plus The BEST Coffee Cake covers pumpkin people and classic cinnamon people without a group vote. Maple-on-maple is Zucchini Maple Cake. If someone wants breakfast in a ramekin with actual espresso, Tiramisu Baked Oats.
Warm square + a little salted butter is not necessary and is also perfect. Ice cream if it is dessert oโclock. I will not check your watch.
Cake Twists
Cream cheese swirl: Beat 4 oz cream cheese + 2 tbsp maple + 1 egg yolk. Dollop on batter, swirl, then streusel. Cheesecake-meets-coffee-cake. More dishes. Worth it.
Chocolate chip pumpkin: 1/2 cup mini chips in the batter. Mini, so they do not all sink.
Whole wheat-ish: Swap 1/2 cup flour for white whole wheat. Slightly nuttier, a little denser. Do not swap all of it unless you like brick.
Gluten-free: 1:1 GF baking flour, same grams. Rest 10 minutes before baking.
No glaze: Fine. Extra pinch of salt on the streusel. Less sweet, more breakfast.
Muffins: 12 liners, 3/4 full, streusel on each, 18โ22 minutes at 350ยฐF. Same batter, faster dopamine.

Breakfast cake, not a protein snack. Pumpkin adds moisture and a little fiber. Maple and brown sugar are still sugar. Streusel is the joy tax. Skip the glaze and you drop some of the 26g. I would not skip the streusel. That would be a different, sadder cake.
Keep Tender
Pumpkin + brown butter makes this a counter cake.
Room temp: Wrapped, 3 days. It is even moister on day two. The pumpkin is still doing intern work.
Fridge: Up to 5 days, well wrapped. Cold slices taste denser. 15 minutes on the counter, or 10 seconds in the microwave.
Freezer: Cool completely. Wrap squares, freeze 2 months. Thaw on the counter 45 minutes. Glaze after thawing if you want it pretty.
Do not store it hot in a closed box. Steam turns streusel into wet sand. Cool first. The streusel has rights.
Gummy Cake Traps
Pie filling instead of puree. Too sweet, too wet, weird spices. The can should say pumpkin puree.
Walking away from browning butter. Bitter, black specks. Stay. Pull at amber.
Hot butter on eggs. Scrambled flecks. Cool 10 minutes.
Overmixing after flour. Gummy tunnels. Fold. Walk away.
Overbaking. Pumpkin cake goes from moist to dry at the edges fast. Moist crumbs on the toothpick. Not clean-dry.
Warm butter in the streusel. It melts into a greasy sheet instead of clumps. Cold cubes. Fridge the bowl.
Pancake syrup. Fake maple, hollow sweetness. Pure maple, even the cheap dark stuff. Dark is better here.
If you make this maple brown butter pumpkin coffee cake, tell me if you ate the corner with extra streusel first. That corner is chefโs tax. I donโt make the rules. I just stand near the pan.
Happy cozy fall baking!

Notes 03
Water cooks off, milk solids toast to hazelnut specks. Goes from toasty to campfire in 20 sec. Light pan so you see amber. Bitter smell = start over โ cheaper than sad cake.
Pumpkin puree = pumpkin. Pie filling = sweet + spices + too wet. That can makes cake taste like a can. If you must use it, skip extra spice and cut brown sugar.
10 min cool before eggs. Hot butter = scrambled flecks. Still edible, not the vibe. Pour, scrape every brown speck, wait.
Pumpkin batter overmixed = gummy, tunnel-y crumb. 12โ15 spatula strokes, flour streaks okay. Walk away. Thatโs the whole discipline.
#1 dry-cake trap. Pumpkin goes dry at edges fast. Pull at moist crumbs. Clean-dry = overbaked. Center steams as it cools.
Cold cubes + fridge if warm โ warm butter melts into greasy sheet, not clumps. And pancake syrup โ pure maple โ hollow sweet. Use pure, dark is better here.
