I know. Black beans… in brownies? Sounds like one of those healthy recipes that tastes like healthy.
But trust me, these black bean brownies are rich, fudgy, deeply chocolatey, like ultra-fudgy flourless brownies that happen to be packed with protein and fiber. My wife who hates beans ate two and said โthese are better than regular brownies.โ My kids have no idea. My gym buddy now makes them weekly for meal prep.
If youโve tried my cottage cheese chocolate mousse high protein and chocolate chia pudding healthy creamy and loved how they taste like real dessert but are healthy, youโre going to love these brownies even more – warm, fudgy, chocolatey, and 10g protein per brownie without protein powder.
Why These Black Bean Brownies Actually Work
1. Fudgy, not cakey, super rich. Black beans replace flour and add moisture and fudginess, like ultra-dense, flourless chocolate cake. No dry, crumbly healthy brownie here. Theyโre so fudgy they barely hold together when warm – in the best way.
2. No flour, gluten-free, high protein & fiber. One can black beans = 15g protein + 15g fiber for whole pan. Naturally gluten-free, no weird flours. If you love my energy balls recipe soft chewy no-bake for healthy snacking, these are your chocolatey baked cousin.
3. 10 minutes prep, blender does everything. Dump rinsed beans, eggs, cocoa, sweetener, blend, pour, bake. Easier than my banana chocolate chip muffins moist easy and faster than my pumpkin bars with cream cheese frosting.
If you want rich, fudgy brownies that happen to be healthy and no one will guess the secret ingredient, this is it.
Ingredients
Simple, real ingredients.
For the black bean brownies (9 brownies):
- Black beans – 1 can (15 oz / 425g), rinsed and drained REALLY well – low sodium if possible
- Large eggs – 2
- Unsweetened cocoa powder – 1/3 cup (30g) – Dutch process for richer
- Coconut oil or unsalted butter – 1/4 cup (56g), melted – coconut oil keeps dairy-free
- Honey or maple syrup – 1/3 cup (110g) – or 1/2 cup coconut sugar for less sticky
- Pure vanilla extract – 1 tsp
- Baking powder – 1/2 tsp
- Fine sea salt – 1/4 tsp
- Semi-sweet chocolate chips – 1/2 cup (85g) – plus more for topping, use dairy-free if needed
Rinse REALLY well: Drain beans, rinse under water 1 minute until water runs clear and no foam. This removes bean taste. Donโt skip!
Equipment
- Blender or food processor (needs to be decent to blend beans smooth)
- 8×8 inch baking pan + parchment paper
- Colander for rinsing beans
How to Make Black Bean Brownies
So easy it feels like cheating healthy eating.
STEP 1: Rinse beans well
Preheat oven to 350ยฐF (175ยฐC). Line 8×8 pan with parchment leaving overhang, lightly grease.
Open can black beans, pour into colander, rinse under cold water for a full minute, shaking, until water runs clear and no more foam. Pat dry a bit with paper towel. This step removes that beany taste and liquid.
STEP 2: Blend everything
Add rinsed black beans, eggs, melted coconut oil/butter, honey/maple, vanilla to blender. Blend on high 30-45 seconds until completely smooth, no bean skins visible. Scrape sides.
Add cocoa powder, baking powder, salt. Blend again 15-20 seconds until smooth, thick, glossy chocolate batter. Should look like regular brownie batter, dark and thick.
Stir in 1/2 cup chocolate chips with spatula (donโt blend chips).
STEP 3: Pour & bake
Pour batter into prepared pan, spread evenly. It will be thick. Sprinkle extra chocolate chips on top if you want pretty.
Bake 20-25 minutes until top is set, edges look set and slightly pulling from pan, but center still slightly soft and fudgy when you shake pan – like set but not dry. Toothpick in center should have moist crumbs, not wet batter, but not clean. Clean = overbaked and dry.
For fudgiest, bake 20 min. For firmer but still fudgy, 25 min. I like 22 min – perfect fudgy.
Cool in pan 20 minutes (they firm up as they cool, very important), then lift out and cool completely before cutting, or they fall apart. Theyโre super fudgy warm, like molten.
STEP 4: Fudgy heaven
Cut into 9 squares. Look at that dense, fudgy, rich interior with melty chocolate chips! No one would ever guess black beans. Tastes like ultra-fudgy flourless chocolate cake.
Serve warm with scoop of my homemade ice cream no machine recipe for hot + cold heaven.
3 Rules for Fudgy, Not Beany, Brownies
1. Rinse beans REALLY well. 1 full minute under water until no foam. This removes bean liquid that causes beany taste.
2. Blend until COMPLETELY smooth. No skins, no bits. Blend 45 seconds, scrape, blend again. Smooth batter = fudgy, not gritty.
3. Underbake slightly. Pull when center still soft and toothpick has moist crumbs. They firm up as they cool. Overbaked = dry and cakey, not fudgy.
Variations
Peanut Butter Black Bean Brownies: Swirl 1/4 cup peanut butter into batter in pan with knife before baking. Like PB cup brownies, extra protein. Similar to my energy balls recipe flavors.
High Protein: Add 1 scoop chocolate protein powder + 2 tbsp extra honey + 1 tbsp milk. 14g protein per brownie! Like my high protein pancakes easy recipe but dessert.
Pumpkin Black Bean Brownies (Fall): Add 1/4 cup pumpkin puree + 1 tsp pumpkin spice to blender. If you loved my pumpkin cookie recipe quick easy, pumpkin pie cupcakes soft cozy, and pumpkin bars, this is healthy fall twist.
Vegan: Use 2 flax eggs (2 tbsp ground flax + 5 tbsp water, sit 5 min) + maple syrup + coconut oil + dairy-free chocolate chips. Works great!
What to Serve With
Great alone, or warm with vanilla ice cream or whipped cream. For party, serve alongside my strawberry cream cheese pound cake fresh and chocolate lava cake rich gooey easy – one healthy fudgy, one fruity, one molten – dessert table covered.
For breakfast? Okay, maybe not, but Iโve eaten one with coffee. Pair with my sheet pan pancakes easy weekend breakfast or Belgian waffles recipe easy crispy golden for brunch and no one will judge.
Storage & Make-Ahead
Fridge: Airtight container, 5 days. They get even fudgier! Best cold or room temp.
Freezer: Wrap individually, freeze 3 months. Thaw overnight in fridge or microwave 20 sec for warm fudgy brownie. Perfect meal prep healthy dessert.
Make-ahead: Make day before, theyโre actually better next day as they set and flavors meld.
Common Mistakes
- Not rinsing well: Beany taste remains. Rinse 1 minute till water clear.
- Not blending smooth: Gritty texture with bean skins. Blend till completely smooth.
- Overbaking: Dry, cakey, not fudgy. Pull when center still soft, toothpick moist crumbs.

FAQ
Do they taste like beans?
No! When rinsed well and blended smooth with cocoa and sweetener, bean taste disappears. Chocolate dominates. My bean-hating friend couldnโt tell.
Can I taste black beans?
If you rinse well and blend smooth, no. If youโre super sensitive, add extra 1 tbsp cocoa + 1 tbsp extra sweetener.
Can I use kidney beans?
Black beans are milder and darker (hides in chocolate). Kidney beans work but slightly stronger taste.
Why are my brownies falling apart?
Cut too warm. Theyโre super fudgy and need to cool completely to set. Cool 20 min in pan + 30 min out before cutting.
Can I make without blender?
Food processor works. Mashing by hand wonโt get smooth enough, will be gritty. Need blender.
If you try these black bean brownies, let me know if anyone guessed the secret ingredient! My favorite game.
