Energy Balls Recipe (Soft, Chewy & No-Bake) – 10 Min Protein Snack

Energy Balls Recipe

If you need a snack thatโ€™s actually filling, tastes like cookie dough, takes 10 minutes, no baking, and doesnโ€™t leave you hungry an hour later… these energy balls are it.

Soft, chewy, peanut buttery, a little sweet from honey, studded with chocolate chips, with oats and chia for fiber and protein. They taste like raw cookie dough but theyโ€™re packed with good stuff. My kids think theyโ€™re dessert, I know theyโ€™re healthy-ish snack. Win-win.

I started making these for hiking because granola bars are expensive and mostly sugar. Now I make a double batch every Sunday and we have grab-and-go snacks all week. My gym bag always has 2. My car glove box… maybe also has 2. Donโ€™t tell my wife.

Why This Energy Balls Recipe Works

1. Soft & chewy, not dry & crumbly. Most energy balls are dry and fall apart. We use enough peanut butter + honey + a little extra moisture so they hold together and stay soft for days. Same soft-chewy trick I use in my pumpkin cookie recipe quick easy.

2. No-bake, 10 minutes, one bowl. Mix, roll, chill. Thatโ€™s it. No oven, no waiting. Easier than my homemade ice cream no machine recipe which needs freezing, and faster than my banana chocolate chip muffins moist easy.

3. High protein, meal-prep hero. Oats + peanut butter + chia + chocolate chips = 5g protein, 3g fiber per ball, keeps you full. Perfect for post-workout, lunchbox, afternoon slump. If you loved my cottage cheese chocolate mousse high protein and high protein pancakes easy recipe, youโ€™ll love these for snack.

If you want soft, chewy, no-bake energy balls that actually taste good, this is it.

Ingredients

Pantry staples, super simple.

For the energy balls (makes 20 balls):

  • Old fashioned rolled oats – 1 1/2 cups (135g)ย – not instant, old fashioned gives chewy texture
  • Creamy peanut butter – 3/4 cup (190g)ย – natural or Jif both work, natural is a bit softer
  • Honey – 1/3 cup (110g)ย – or maple syrup for vegan
  • Mini chocolate chips – 1/2 cup (85g)ย – mini distribute better, but regular works
  • Ground flaxseed or chia seeds – 2 tbspย – extra fiber + omega-3, like myย chocolate chia pudding healthy creamy
  • Pure vanilla extract – 1 tsp
  • Fine sea salt – pinch
  • Optional: 1-2 tbsp milk if mixture too dry

Optional add-ins:

  • Shredded coconut, chopped nuts, protein powder, dried fruit

Peanut allergy? Use almond butter, cashew butter, or sunflower seed butter. All work!

Equipment

  • Large mixing bowl + spatula or wooden spoon
  • Cookie scoop (1 tbsp) for even balls
  • Parchment lined baking sheet or plate

How to Make Energy Balls

So easy you can do it with kids. Mine love rolling them, though they eat half the dough.

STEP 1: Mix

In large bowl, add peanut butter, honey, vanilla. Microwave 20 seconds to soften (makes mixing easier) or just mix well if soft.

Add oats, flax/chia, salt, chocolate chips. Mix with spatula until fully combined, sticky, holds together when pressed. If too dry and crumbly, add 1-2 tbsp milk or extra honey. If too sticky, add 2 tbsp more oats.

Dough should be like thick cookie dough, slightly sticky but rollable.

STEP 2: Roll

Scoop 1 tbsp dough (I use small cookie scoop, game changer for even size). Roll between palms into smooth ball, about 1 inch.

If dough sticks to hands, wet hands slightly or chill dough 10 minutes first.

STEP 3: Chill

Place balls on parchment lined sheet or plate.

Chill in fridge at least 30 minutes – this firms them up and makes them chewy and holds shape. You can eat right away, but chilled is better texture.

STEP 4: Snack!

Look at that – soft, chewy, oats and chocolate chips visible, holds together perfectly. One bite and you get peanut butter, honey sweetness, chewy oats, melty chocolate chips.

Perfect grab-and-go healthy snack.

3 Rules for Soft, Chewy Energy Balls (Not Dry & Crumbly)

1. Enough peanut butter + honey. Ratio matters. 3/4 cup peanut butter + 1/3 cup honey per 1 1/2 cups oats = soft and holds. Less = dry and falls apart.

2. Donโ€™t skip chilling. 30 min fridge makes them firm and chewy. Warm theyโ€™re too soft and sticky.

3. Mini chocolate chips. Mini distribute better than regular, so every bite has chocolate. Regular chips sink and make balls fall apart.

Variations

High Protein Energy Balls: Add 2 scoops vanilla protein powder + 2 tbsp extra peanut butter + 2 tbsp milk. 8g protein per ball! Like my high protein pancakes but no cooking.

Chocolate Peanut Butter: Add 2 tbsp cocoa powder to base, use chocolate chips. Like brownie batter balls, similar to my cottage cheese chocolate mousse but portable.

Pumpkin Spice Energy Balls (Fall!): Add 2 tbsp pumpkin puree + 1 tsp pumpkin pie spice + use maple syrup. If you loved my pumpkin pie cupcakes soft cozy, pumpkin cookie recipe quick easy, and pumpkin bars with cream cheese frosting, youโ€™ll love this no-bake fall snack.

Strawberry White Chocolate: Use almond butter + 1/4 cup freeze-dried strawberries crushed + white chocolate chips. Like my strawberry cream cheese pound cake fresh but energy ball form.

Vegan: Use maple syrup instead of honey + dairy-free chocolate chips + almond butter. Works perfectly.

What to Serve With / When to Eat

Perfect for:

  • Pre/post workout snack
  • Kidsโ€™ lunchbox treat (nut-free version with sunflower butter)
  • Afternoon slump at work
  • Hiking, road trip snack
  • Healthy dessert after dinner

For brunch, serve these alongside my Belgian waffles recipe easy crispy golden and sheet pan pancakes easy weekend breakfast – one indulgent breakfast, one healthy snack, everyone happy.

Storage & Meal Prep

Fridge: Airtight container, 1 week. They stay soft & chewy! Best way.

Freezer: Freeze in single layer on tray, then bag. Freeze 3 months. Thaw in fridge overnight or eat frozen like little cookie dough bites (my favorite).

Make-ahead: Make double batch Sunday, have snacks all week. Takes 10 min for 20 balls.

Common Mistakes

  • Too dry, crumbly, wonโ€™t hold:ย Not enough peanut butter/honey, or natural peanut butter too dry. Add 1-2 tbsp milk or extra honey.
  • Too sticky, canโ€™t roll:ย Too much honey or warm peanut butter. Chill dough 15 min or add 2 tbsp more oats.
  • Bland:ย Forgot salt and vanilla. Both make big difference, donโ€™t skip.

03Notes

โš–๏ธRatio = soft, not dry

ยพ cup peanut butter + โ…“ cup honey per 1ยฝ cups oats = soft and holds. Less = dry and crumbly. Donโ€™t cut the binder โ€” thatโ€™s what keeps them chewy for days.

โ„๏ธDonโ€™t skip chilling

30 min fridge makes them firm and chewy. Warm theyโ€™re too soft and sticky. Chill on parchment so they donโ€™t stick together. Theyโ€™re worth the wait.

๐ŸซMini chips = every bite chocolatey

Mini chocolate chips distribute better than regular โ€” every bite has chocolate and balls hold together. Regular chips sink and can make balls fall apart.

๐Ÿ’งToo dry? Add milk/honey

Natural peanut butter can be dry. If mixture is crumbly and wonโ€™t hold when pressed, add 1โ€“2 tbsp milk or extra honey. Mix well and test again.

๐Ÿ‘Too sticky? Chill or add oats

Too much honey or warm PB = sticky and hard to roll. Chill dough 15 min or add 2 tbsp more oats. Wet hands slightly when rolling for smooth balls.

๐Ÿซ™Stays soft + freezes great

Fridge airtight 1 week โ€” stays soft & chewy. Freeze single layer on tray then bag 3 months. Thaw overnight or eat frozen like cookie dough bites. Double batch Sunday = snacks all week.
