Peanut butter pretzel pie is a Reeseโs cup that grew up, got a pie plate, and invited pretzels to the party. Salty crunchy crust. Fluffy peanut butter filling that sets in the fridge. Chocolate drizzle if you are feeling extra, which I am. No rolling pin. No blind-bake panic. The pretzels are the crust.
This is the pie I make when I want sweet-salty and I do not want to talk to pie dough. Smash pretzels, mix with butter, bake 10 minutes so it stays crisp. Beat peanut butter and cream cheese, fold in whipped cream, chill. Slice cold. The first slice always looks a little messy. That is not a flaw. That is peanut butter being peanut butter.
If peanut butter is already a food group in your house, my Peanut Butter Mousse with Chocolate Ganache is the cup version and Frozen Peanut Butter Yogurt Bites live in the freezer. No-bake ball energy is No Bake Pumpkin Cheesecake Balls when you want fall spice instead of salty crunch.
Why You Bake the Pretzel Crust (and Why Natural PB Needs a Pep Talk)
Pretzels are dry and salty until filling sits on them. Then they want to go soggy. A short bake sets the butter and toasts the crumbs so the crust stays a crust instead of a pretzel pudding. Ten minutes at 350ยฐF. Skip it and by hour four you have a salty sponge. Still tasty. Not a slice.
Crush to crumbs with some tiny bits left. Powder-fine pretzels bake into a hard candy shell. Big chunks fall apart when you cut. You want damp sand with a few pebbles.
No-stir creamy peanut butter mixes smooth and holds. Natural PB is fine if you stir the oil back in until it is one paste. A slick of oil in the filling makes a greasy layer on top of the pie, which looks like the pie is sweating. Stir the jar. Then measure.
Cream cheese is the structure. Without it, whipped cream plus peanut butter is a dip. Delicious dip. Not a wedge. Soften the brick. Beat it alone. Lumps now are lumps in the slice.
Whipped cream is the fluff. Fold it. If you beat it into the peanut base on high, you deflate it and get a dense fudge pie. Still good. Less โmousse in a crust.โ Medium-stiff peaks, then a spatula.
Salt on top is not extra salt for saltโs sake. The filling is sweet. The crust is salty. A pinch of flaky salt on the chocolate makes both sides louder. I am a salt person. The no-salt people can scrape it off. They will not.
- Prep Time: 25 minutes
- Bake Time: 10 minutes (crust only)
- Chill Time: 4 hours
- Total Time: about 4 hours 40 minutes (mostly fridge)
- Yield: 12 slices (9-inch pie)
Pan & Bag
You need:
- 9-inch pie dish
- Zip bag + rolling pin – or a food processor, pulse, do not pulverize
- Hand mixer
- Two bowls – peanut base and cream
- Offset spatula or spoon
- Wire rack – cool the crust before filling
No pie weights. No parchment blind-bake dance. If you only have an 8-inch dish, filling will sit taller. Chill an extra 30 minutes.
Pretzel List
Crust:
- Pretzels – 6 oz (170g), about 2 cups crumbs – salted twists, not honey mustard
- Unsalted butter – 6 tbsp (85g), melted
- Packed brown sugar – 2 tbsp
- Pinch salt – only if your pretzels are mild
Filling:
- Full-fat cream cheese – 8 oz (226g), very soft – brick, not whipped tub
- Creamy peanut butter – 1 cup (250g) – no-stir is easiest
- Powdered sugar – 3/4 cup (90g)
- Pure vanilla extract – 1 tsp
- Fine sea salt – 1/4 tsp
- Cold heavy cream – 1 cup (240ml)
Top:
- Dark chocolate – 2 oz (56g), melted, for drizzle
- Extra pretzel twists and flaky salt
Pretzel tip: Measure crumbs, not whole pretzels. 6 oz of twists is the bag cue; 2 cups packed crumbs is the bowl cue. PB tip: Crunchy peanut butter in the filling is a texture choice. The slice will not be as clean. I like clean slices and crunchy pretzels on top, not both fights at once.
Smash, Fill, Chill
1. Crush.
Bag, rolling pin, some air left in the bag so it does not explode. Crumbs plus bits. Mix with melted butter, brown sugar, pinch salt until it holds when squeezed.
2. Press and bake.
Press firmly into the dish, up the sides. Pack the corners. Weak corners crumble when you serve, which is romantic until the first slice collapses. Bake 350ยฐF (175ยฐC) 10 minutes, until it smells toasty. Cool completely. Warm crust plus filling = melt.
3. Beat the peanut base. Cream cheese 1 minute, no lumps. Add peanut butter, powdered sugar, vanilla, salt. Beat until it looks like thick frosting. Taste. It should be salty-sweet and a little too intense. Cream will calm it. If it is bland now, it will taste like cold air later.
4. Whip, fold, spread.
Whip cream to medium-stiff peaks. Stir 1/3 into the peanut mix to loosen. Fold the rest. Streaks of white are okay for one more fold. Spread into the cool crust. Smooth the top. Fridge 4 hours, or overnight. Cover loosely once the top is set (about 30 minutes in) so it does not eat fridge smells.
5. Drizzle and slice. Melt chocolate, drizzle, pretzels on top, flaky salt. Hot knife, wipe between cuts. First slice is chefโs tax. It is structurally important.
Salty crunch, fluffy peanut, a little chocolate. Cold. This is not a warm pie. If you want warm peanut butter, that is a different, stickier afternoon.
Serve Cold
Coffee. Black. The bitterness fights the filling and you win.
For a peanut butter dessert table, cups of Peanut Butter Mousse next to this pie so people can choose fork or spoon. Frozen snack people get Frozen Peanut Butter Yogurt Bites. If someone wants no-bake balls instead of a wedge, Pumpkin Cheesecake Balls are the spice lane.
Contains peanuts, dairy, and wheat (pretzels). Say it before the pie hits the table. There is no cute surprise pretzel gluten. Extra pretzels on the side for the people who eat the crust first. They are correct.
Pie Swaps
Chocolate ganache lid: 4 oz chocolate + 1/2 cup warm cream, cool slightly, pour on chilled filling. More Reeseโs. Chill 1 more hour.
Crunchy PB swirl: 2 tbsp crunchy peanut butter dotted on top, swirl once.
Pretzel-graham mix: Half pretzel crumbs, half graham. Milder salt, easier if your pretzels are very aggressive.
No-bake crust: Skip the oven, chill the packed crust 30 minutes. Softer, soggier by day two. Fine if the oven is full of something else.
Mini pies: Same filling, muffin liners with pretzel crumbs, 12 minis. Party math. Freeze 20 minutes to pop them out.
Sunflower seed butter: Nut-free filling. A little more honey/sugar and salt. Still say โseed butterโ at the door.

Dessert pie. Peanut butter and cream cheese are not shy. Twelve slices is kinder than eight giant wedges you โjust taste.โ Chocolate is the joy tax. Whipped cream on top is extra and not in the table.
Box the Pie
Fridge: Covered, 4 days. Best on day 1โ2 while the crust still snaps. Day 4 the pretzels soften. Still good. More โpeanut butter icebox.โ
Freezer: Freeze the whole pie 1 hour, wrap, freeze 1 month. Thaw overnight in the fridge. Crust is a little less crisp. Filling holds.
Do not leave it on a sunny counter. Filling slumps. 15 minutes out to take the chill off, then back.
Slice from cold. Warm pie is peanut soup in a pretzel bowl. I have data.
Runny Pie Traps
No-stir skipped, oil slick PB. Greasy top. Stir the jar.
Whipped tub cream cheese. Soft, weeps. Brick.
Cold cream cheese lumps. Soften. Beat alone first.
Skipping the crust bake. Soggy bottom. 10 minutes.
Overwhipped cream. Grainy, then butter. Medium-stiff.
Filling a hot crust. Melts. Cool the crust.
Cutting after 20 minutes. It will slump. 4 hours. Overnight is even cleaner.
Honey pretzels or yogurt pretzels. Weirdly sweet crust. Salted twists.
Skipping the โpeanutโ announcement. Donโt.
If you make this peanut butter pretzel pie, tell me if you went chocolate drizzle or naked top. The drizzle people and the โthe filling is enoughโ people cannot share a pie plate. I drizzle. I am not well.
Happy salty, creamy, no-rolling-pin pie!

Notes 03
Butter sets, crumbs toast โ crust stays crisp, not pretzel pudding by hour four. Skip it = salty sponge. Still tasty, not a slice. Cool completely before filling.
No-stir creamy holds and mixes smooth. Natural is fine if you stir oil back to one paste before measuring โ otherwise greasy layer on top. Crunchy PB in filling = messy slice. Keep crunch on top.
Brick, full-fat, very soft, beat alone first. Whipped tub = soft + weeps. Cold brick = lumps forever. Without cream cheese, whipped cream + PB is dip, not a wedge.
Medium-stiff peaks, then spatula. Beating cream into peanut base on high deflates it โ dense fudge. Fold โ to loosen, fold rest. Overwhipped cream = grainy then butter.
Fridge 4 days covered โ best day 1โ2 while crust snaps. Freezer 1 month โ freeze 1 hr unwrapped, then wrap; thaw overnight fridge. Donโt leave on sunny counter โ slumps. 15 min out max, then back. Slice from cold.
