Thai Coconut Custard – Silky, Irresistible & Easy

Thai Coconut Custard

Thai coconut custard is what I make when I want dessert that feels like a tiny vacation and also like I did not wrestle a pie crust. Coconut milk. Eggs. Palm sugar. A pinch of salt. You whisk, you strain, you bake the cups in a water bath until they jiggle like they have a secret. Silky. Rich. A little toasted-coconut on the spoon. No crust. No gelatin. No โ€œis my caramel set.โ€

In Thai kitchens this family of custard is sangkhaya โ€” often steamed, sometimes poured over sticky rice, sometimes hiding inside a pumpkin. This is the weeknight ramekin version: same idea, oven water bath so you do not need a steamer stack. It is not a 12-step street-food documentary. It is four cups of coconut custard that taste expensive and cost one can.

If coconut already lives in your oven, Coconut Milk Cake is the fluffy cousin. Custard-in-a-cup energy also shows up in Baby Lemon Impossible Pies, lemon instead of coconut. Cafe-soft cake people, London Fog Cake is tea, not tropical, and still a good โ€œI baked something gentleโ€ neighbor.

Why a Water Bath Beats a Hot Oven (and Why the Can Must Be Stirred)

Custard is eggs plus liquid, set by gentle heat. Too hot and the proteins squeeze out water โ€” you get scrambled coconut, little holes, a weeping puddle. A water bath keeps the cups around a simmer, not a roast. The oven can be 325ยฐF. The custard never feels 325ยฐF. That is the whole trick.

Canned coconut milk separates in the pantry. Thick cream on top, thin water under. If you scoop only cream, it is greasy. If you pour only the watery part, it is thin and weeps. Stir the can until it is one liquid. Same speech as the coconut cake. I will keep giving it until the cans come pre-stirred, which is never.

Palm sugar tastes like caramel and coconut had a meeting. Brown sugar works. White sugar works and tastes flatter, like sweet eggs. A pinch of salt makes coconut taste more coconut, not more salty. Skip salt and it tastes like a candle that went to brunch.

Pandan is the classic perfume โ€” grassy vanilla, a little nutty. Extract is potent. A quarter teaspoon. A full teaspoon tastes like a lawn. No pandan? Vanilla is honest and still delicious. I would rather vanilla than fake-green coloring pretending to be pandan.

Strain the mix. Eggs have chalazae (the white strings). Coconut milk has tiny bits. A 20-second strain is the difference between silky and โ€œwhat is this chewy surprise.โ€ Whisk gently. A blender full of bubbles bakes into foam, then collapses into a pocked top. Pretty bubbles in the bowl. Ugly holes in the cup.

๐Ÿฎ What We Need for Thai Coconut Custard

Six simple tools for individual custards, a steady water bath, smooth whisking, and controlled browning.

Tool 3 โ€ข Hot-Water Source1.7-Liter Stainless Steel Electric

SEIKI 1.7-Liter Stainless Steel Electric Kettle

An electric kettle heats the bath water quickly and pours more neatly than a full saucepan.

Pour Carefully: Fill the pan halfway up the ramekins without splashing custard.

Steamer works too: 20โ€“25 minutes over gentle steam, lids on the cups or foil. Oven bath is what I use because my steamer is holding soup. Priorities.

Coconut Lineup

Custard:

  • Full-fat canned coconut milk – 1 can (13.5 oz / 400ml), well stirred – not carton, not light
  • Large eggs – 3 – or 2 eggs + 2 yolks for extra silk
  • Palm sugar – 1/3 cup packed (70g) – or light brown sugar
  • Fine sea salt – 1/4 tsp
  • Pandan extract – 1/4 tsp – or 1 tsp vanilla if no pandan
  • Optional toasted coconut – 2 tbsp, for serving

Can tip: Coconut milk and coconut cream on the ingredient list. โ€œCoconut waterโ€ first is a beverage. Sugar tip: Chop hard palm sugar so it dissolves. If it stays grainy after whisking, warm 1/4 of the coconut milk, dissolve the sugar, cool 5 minutes, then mix. Hot coconut milk on eggs is scramble. We are not making coconut breakfast.

Mix, Strain, Steam

1. Heat the oven. 325ยฐF (165ยฐC). Set ramekins in the empty 9×13. Boil a kettle.

2. Whisk, do not whip.

Stir the can. Whisk eggs, palm sugar, and salt until the sugar mostly dissolves and the mix is just even โ€” 30 seconds, not a frothy minute. Whisk in coconut milk and pandan (or vanilla). It should look like melted ice cream, not cappuccino foam.

Taste it (raw egg, your call). It should be coconut-sweet with a salty back. Shy now means bland later. Extra pinch of salt. Not extra sugar unless you have a very loud sweet tooth.

3. Strain into cups.

Pour through a sieve into a pitcher, then into ramekins, filling about 3/4 full. Pop obvious bubbles with a spoon. Bubbles become pockmarks. I pop them like I am defusing something. I am not.

4. Bath, then bake.

Slide the pan onto the oven rack. Pour hot water into the pan until it comes halfway up the ramekins. Do not splash into the custard unless you want coconut soup. Bake 30โ€“40 minutes. The edges should look set. The center should still jiggle like gelatin, not slosh like milk.

32 minutes is my usual in 6 oz cups. 45 minutes is often rubber. Pull at jiggle. They finish in the fridge.

Steamer option: Cover cups loosely with foil. Steam over barely simmering water 20โ€“25 minutes. Same jiggle test. Hard boil in the steamer = scrambled edges. Gentle.

5. Cool, then chill. 20 minutes on the counter, then fridge at least 2 hours. Warm custard tastes thin. Cold custard tastes like you meant it.

Spoon goes through like silk. Coconut, a little caramel from the palm sugar, maybe pandan if you had it. Toasted coconut on top if you want crunch. Eat one standing at the fridge. That is not a serving suggestion. That is anthropology.

Spoon Beside

Black coffee or unsweetened tea. The custard is rich. It likes bitter.

Fresh mango or pineapple on the side is very โ€œI went somewhere.โ€ Sticky rice is the classic pairing if you have it. If you do not, a handful of berries is fine and also not Thai, and I will not write you a ticket.

Cake people can put Coconut Milk Cake on the same table so there is a slice and a spoon. Lemon custard fans get Baby Lemon Impossible Pies. Soft cafe cake is London Fog if someone at the table does not do coconut. They exist. They can have tea cake. More custard for you.

Dairy-free as written (check your sugar and extract). Say coconut out loud if you are feeding a crowd. Surprise coconut is only cute in a piรฑa colada, and even then.

Custard Riffs

Yolk-rich: 2 whole eggs + 2 yolks, skip one white. Silkier, more yellow, slightly more โ€œice cream shop.โ€

Pandan green: 1/2 tsp pandan extract. Pretty. Taste as you go. Lawn is not the goal.

Coffee coconut: 1 tsp instant espresso in the mix. Mocha-adjacent. Not traditional. Delicious.

Toasted coconut lid: Broil 1 minute at the end โ€” watch like a hawk. Coconut burns in the time it takes to check your phone.

One pie dish: Same batter, 8-inch pie plate in a water bath, 40โ€“50 minutes. Slice like a crustless pie. Cool fully.

Sticky rice night: Warm rice, cold custard on top. That is the move if you want to feel like you tried.

Dessert. Coconut fat is why it is silky, not why it is a salad. Light coconut milk drops the fat and the texture. I would rather a smaller spoon of the real one. Palm sugar and brown sugar are close on calories. The yolks version adds a little fat and a lot of swagger.

Fridge Set

Fridge: Covered, 3 days. Best on day 1โ€“2. Day 3 they are still good, a little denser.

Do not freeze. Custard weeps and turns grainy. Nobody wants icy coconut scramble.

Make-ahead: Bake in the morning, chill all afternoon, serve at night. Better than serving warm unless you like thin custard.

Toasted coconut goes on at the table so it stays crunchy. Overnight on the custard it goes sad.

Scramble Traps

Carton coconut milk. Beverage. Thin, icy, sad. Canned, full-fat, stirred.

Boiling water bath or 375ยฐF oven. Scrambled edges, holes, weep. 325ยฐF, hot but not raging water, halfway up the cups.

Overbaking โ€œto be sure.โ€ Rubber. Jiggle in the center. Fridge does the rest.

Blender on high. Foam, then pockmarks. Whisk.

Skipping the strain. Egg strings. Twenty seconds. Do it.

Hot coconut milk on eggs. Coconut scramble. Dissolve sugar in a little warm milk if needed, then cool, then eggs.

Too much pandan. Lawn. 1/4 teaspoon. Vanilla is a respectable Plan B.

Unstirred can. One bite greasy, one bite watery. Stir until it is one liquid.

If you make this Thai coconut custard, tell me if you went pandan or vanilla. The pandan people will fight the vanilla people. I am both people depending on whether the grocery store had the tiny green bottle.

How to Cook 02

01
Heat the oven

Oven to 325ยฐF (165ยฐC). Set 4 ร— 6 oz ramekins in empty 9ร—13 pan. Boil a kettle โ€” youโ€™ll pour the bath on the oven rack so you donโ€™t slosh coconut soup across the kitchen.

02
Whisk, do not whip

Stir the can smooth. Whisk 3 eggs, โ…“ cup palm sugar, ยผ tsp salt 30 seconds till sugar mostly dissolves and mix is just even โ€” not a frothy minute. Whisk in coconut milk + ยผ tsp pandan (or 1 tsp vanilla). It should look like melted ice cream, not cappuccino foam. Bubbles now = pockmarks later.

03
Strain into cups

Pour through a fine-mesh sieve into a pitcher, then into ramekins ยพ full. Pop obvious bubbles with a spoon. 20 seconds of straining beats chewy egg strings. Trust the sieve.

04
Bath, then bake

Slide pan onto oven rack, pour hot water halfway up ramekins โ€” donโ€™t splash into custard. Bake 30โ€“40 minutes. Edges set, center jiggles like gelatin, not sloshes like milk. 32 min is my usual in 6 oz cups; 45 min is often rubber. Pull at jiggle โ€” fridge finishes it. Steamer option: foil loosely, gentle steam 20โ€“25 min, same jiggle test.

05
Cool, then chill

20 minutes on the counter, then fridge at least 2 hours. Warm custard tastes thin; cold custard tastes like you meant it. Spoon goes through like silk. Toasted coconut on top at the table so it stays crunchy โ€” overnight on custard it goes sad.

Notes 03

โ™จ๏ธWhy a water bath

Custard = eggs + liquid set by gentle heat. Hot oven without water = squeezed proteins, holes, weeping puddle. Water keeps cups near a simmer while oven is 325ยฐF. Thatโ€™s the whole trick โ€” steam, not roast.

๐ŸฅซStir the can, every time

Cream on top, thin water under. Scoop one part only and one bite is greasy, one is watery. Stir till one liquid. Same speech as the coconut cake โ€” cans never come pre-stirred.

๐ŸฏPalm vs brown vs white

Palm sugar = caramel + coconut. Brown sugar works (closest). White works but tastes flatter โ€” sweet eggs. Pinch of salt makes coconut taste more coconut, not salty. Skip salt = brunch candle.

๐ŸŒฟPandan is perfume, not paint

ยผ tsp extract. Full teaspoon = lawn. No pandan? Vanilla 1 tsp is honest and delicious โ€” better than fake-green coloring pretending. Taste as you go if you chase the green.

๐ŸงŠFridge & riffs

Fridge 3 days covered โ€” best day 1โ€“2. Do not freeze โ€” grainy weep. Riffs: 2 eggs+2 yolks silkier, 1 tsp instant espresso mocha-ish, toasted lid under broiler 1 min (watch!), 8โ€ณ pie 40โ€“50 min, or cold custard over warm sticky rice.

๐ŸšซScramble traps

Donโ€™t: carton/light milk, 375ยฐF or boiling bath, overbake โ€œto be sureโ€ (jiggle!), blender on high (foam โ†’ pocks), skip strain (strings), hot milk on eggs, unstirred can, too much pandan. Gentle whisk, strain, water halfway, pull at jiggle.
