Black Forest cheesecake symphony is the Black Forest cake that went to music school. Chocolate cookie crust. Cocoa-and-melted-chocolate filling that bakes silky. Cherries on top like they paid rent. Whipped cream. Chocolate shavings. Nobody asked for a flute solo. They asked for a slice that looks expensive and tastes like a German bakery met a New York cheesecake and they both brought cherries.
This is not a dump-and-stir brownie. Room-temp cream cheese. Water bath. Slow cool. Overnight fridge. Cherries go on after the cake is cold, because hot cheesecake plus wet fruit is a pink puddle with trust issues. I have made that puddle. We do not speak of it at dinner.
If you want chocolate in a cup instead of a springform, my Peanut Butter Mousse with Chocolate Ganache is the weeknight cousin. Cake people who like perfume-y layers can detour to London Fog Cake. Mini no-bake cheesecake energy lives in No Bake Christmas Cheesecake Bites.
Why It Cracks (and Why the Cherries Wait)
Cheesecake is a custard wearing a crust. Eggs set the protein net. Overbeat after the eggs and you whip in air. Air puffs in the oven, then collapses. That collapse is a Grand Canyon across your “symphony.” Mix cream cheese and sugar until smooth. Cocoa in. Chocolate in. Eggs one at a time, low speed, just combined. Scrape the bowl. Lumps now are lumps in the slice. Extra air now is a crack later.
A water bath is not extra dishes for sport. Steam keeps the top from drying into a crust that splits when the middle finishes cooking. Wrap the springform in two layers of wide foil. Hot water halfway up. 325°F, not 350. High heat cooks the edge to rubber while the center is still soup.
Slow cool is the third act. Oven off, door cracked, one hour. Then room temp. Then fridge overnight. Cold air on a hot cake is how you get a sunken drum. Patience is cheaper than a new cream cheese brick.
Cherries are wet. Pie filling is wetter. If you spoon them on a warm cake, syrup migrates into the chocolate and you get a gray ring. Chill the cake first. Drain extra syrup from canned filling so you keep fruit, not cherry soup. Homemade sour-cherry sauce with a little cornstarch holds a glossy blob. Kirsch (cherry brandy) is the Black Forest wink. Optional. Skip it if kids are eating, or if your cupboard’s “bar” is vanilla extract and hope.
Cocoa plus melted chocolate is why this tastes like Black Forest and not “chocolate cheesecake with fruit.” Cocoa is dry and bitter. Melted chocolate is fat and round. Together they taste like cake, not cocoa powder in cream cheese.

🍒 What We Need for Black Forest Cheesecake Symphony
Seven tools for a tall, crack-free cheesecake: the pan, the foil shield, the bath, and the fancy-for-free finish.
OYAOL 9-Inch Springform Cake Pan with Removable Bottom
The removable bottom releases a tall cheesecake cleanly so every slice keeps its layers intact.
Reynolds Wrap Heavy Duty Aluminum Foil
Two wide sheets wrapped around the springform keep water out of the crust during the water bath.
Nordic Ware Extra Large Turkey Roaster
A deep roasting pan holds the hot water bath that keeps the cheesecake tall, creamy, and crack-free.
Hamilton Beach Professional 5-Speed Electric Hand Mixer
A hand mixer beats the filling on low so the cheesecake stays dense; a stand mixer with the paddle works too.
OXO Good Grips Silicone Everyday Spatula
A flexible silicone spatula scrapes every bit of chocolate filling into the pan without waste.
Seiki 1.7-Liter Electric Glass Kettle
A kettle of just-boiled water fills the roasting pan fast without cooling the oven or the kitchen.
OXO Good Grips Swivel Vegetable Peeler
Run a peeler along a chocolate bar to make dramatic shavings and curls for the Black Forest topping.
No springform? A 9-inch deep cake pan lined with a parchment sling works. You will not unmold as prettily. You will still eat it.
Forest List
Crust:
- Chocolate sandwich cookies – 24 cookies (about 270g), 2 cups fine crumbs – filling and all
- Unsalted butter – 5 tbsp (70g), melted
- Pinch salt
Filling:
- Full-fat cream cheese – 24 oz (680g), 3 bricks, room temp – not whipped tub
- Granulated sugar – 3/4 cup (150g)
- Unsweetened cocoa powder – 1/3 cup (30g) – Dutch-process or natural both work
- Dark chocolate – 4 oz (113g), melted and cooled 5 minutes
- Large eggs – 3, room temp
- Full-fat sour cream – 1/2 cup (120g)
- Pure vanilla extract – 1 tsp
- Fine sea salt – 1/4 tsp
- Kirsch – 1 tbsp, optional
Cherry layer:
- Cherry pie filling – 1 can (21 oz / 595g) – drain 2–3 tbsp extra syrup or homemade: 2 cups pitted sour cherries + 1/3 cup sugar + 1 tbsp cornstarch + 1 tbsp lemon juice + 1 tbsp kirsch, simmer 5 minutes, cool
Top:
- Cold heavy cream – 1 cup (240ml)
- Powdered sugar – 2 tbsp
- Vanilla – 1/2 tsp
- Dark chocolate bar – for shavings
Temp tip: Cream cheese that is still cold will stay lumpy no matter how long you yell at the mixer. Sit the bricks out 45–60 minutes. Eggs in a bowl of warm water 10 minutes if you forgot. Cherry tip: Whole pitted cherries look like a symphony. Maraschino-only topping looks like a sundae that got lost.
Mix, Bake, Layer
1. Crust. Heat oven to 350°F (175°C). Pulse cookies to fine crumbs. Mix with melted butter and salt until it holds when squeezed. Press into the bottom of the springform (not high up the sides unless you like a cookie wall). Bake 8 minutes. Cool. Drop oven to 325°F (163°C). Wrap the pan in foil.
2. Beat the chocolate.
Cream cheese on medium until no lumps, 2 minutes. Scrape. Sugar and cocoa, 1 minute. Melted chocolate, vanilla, salt, kirsch if using. Sour cream. Scrape again. Eggs one at a time on low. Stop when the yellow disappears. Batter should look like chocolate pudding that went to law school.
3. Bath and bake.
Pour into the crust. Tap the pan twice to pop big bubbles. Set in the roasting pan. Pour hot water halfway up. Bake 60–70 minutes. The edge is set. The center still jiggles like gelatin, not soup. If it looks wet and sloshy, give it 5 more. If it puffs high and cracks while you watch, it is overbaked. You will hide that with cherries. That is what cherries are for, besides tasting like cherries.
4. Cool like you mean it. Oven off, door cracked 1 hour. Out of the bath. Foil off. Room temp 1 hour. Fridge at least 6 hours, overnight if you like clean wedges. Run a thin knife around the edge after 30 minutes in the fridge so it does not glue to the pan and split when you unclip.
5. Cherries, cream, shavings.
Unclip. Spoon cherries in the center, leave a chocolate rim so the slice shows layers. Whip cream, powdered sugar, vanilla to medium peaks. Pipe or spoon around the cherries. Shave chocolate with a peeler. Hot knife, wipe between cuts. First slice is the conductor’s fee.
Chocolate, tart cherry, cold cream. This is a fridge cake. If you want it warm, that is lava cake, and it is not invited to this symphony.
Plate Cold
Black coffee. Or a tiny kirsch if you are being theatrical.
Chocolate-on-chocolate people can add cups of Peanut Butter Mousse so the table has a fork lane and a spoon lane. If someone wants a lighter, tea-scented cake, London Fog Cake is the intermission. Party bites instead of a tall wedge: Christmas Cheesecake Bites.
Contains dairy, eggs, and wheat (cookie crust). Kirsch is alcohol. Say all of that before you pass plates. There is no subtle “hidden cherry brandy” that guests enjoy discovering at 9 p.m.
Layer Riffs
Homemade sour cherries: Simmer 2 cups pitted tart cherries with 1/3 cup sugar, 1 tbsp cornstarch, lemon, kirsch. Cool thick. Brighter than canned. Worth it in July.
No kirsch: Skip. A drop of almond extract in the filling is a different German bakery, still good.
White chocolate shavings: Pretty on dark cake. Slightly sweeter. I still use dark.
Mini springforms: Halve the recipe, 4-inch pans, bake 28–35 minutes. Date-night math.
No-bath panic: Place a pan of water on the rack below. Not as even. Better than nothing. Watch the top.
Gluten-free crust: GF chocolate cookies, same butter. Filling is already wheat-free.

Cheesecake is not a salad. Twelve slices is how you stay friends with people. Extra whipped cream on the side is not in the table. Neither is “just a sliver” that is actually two slivers.
Chill Nights
Fridge: Covered, 4 days. Best on day 2 when the chocolate has settled and the cherries have not yet wept. Add cream the day you serve if you can, so it stays fluffy.
Freezer: Freeze the plain chocolate cake (no cherries, no cream) wrapped, 1 month. Thaw overnight in the fridge. Top fresh. Frozen cherries on a frozen cake turn into ice and then soup.
Do not leave it on a warm counter. Filling slumps. 15 minutes out to take the fridge bite off, then back.
Slice from cold. Warm Black Forest cheesecake is chocolate soup with fruit floating. I have notes.
Crack Traps
Cold cream cheese lumps. Soften. Beat alone first.
Eggs on high speed. Air, then a canyon. Low. Just combined.
Skipping the water bath. Dry top, rubber edge. Wrap well so you do not get a soggy crust from a leak.
Oven 350 the whole time. Edge done, middle raw, then a crack. 325.
Opening the door every 8 minutes. Temperature tantrum. One peek at 60.
Cherries on a hot cake. Pink syrup ring. Chill first. Drain extra syrup.
Whipped tub cream cheese. Soft, weeps. Bricks.
Cutting after 45 minutes. It will slump and smear. Overnight.
Forgetting to tell people about kirsch. Don’t.
If you make this black forest cheesecake symphony, tell me if you went canned cherries or the homemade sour-cherry flex. The canned people eat sooner. The homemade people send photos. Both are valid. I drain the can on a Tuesday and simmer fruit on a Saturday. Balance.
Happy chocolate, cherry, no-flute-required cake!
Black Forest Cheesecake Symphony
The Black Forest cake that went to music school — chocolate cookie crust, cocoa-and-melted-chocolate filling that bakes silky, cherries like they paid rent, whipped cream and shavings. German bakery met New York cheesecake. Looks expensive. Tastes like it, too.
Ingredients 01
Cream cheese still cold = lumps forever. Sit bricks out 45–60 min, eggs in warm water 10 min if you forgot. Cherries go on cold cake only — drain 2–3 tbsp syrup so you keep glossy fruit, not pink soup. Whole pitted cherries look like a symphony. Maraschino-only looks like a lost sundae.

How to Cook 02
Heat to 350°F (175°C). Pulse 24 cookies to fine crumbs. Mix with 5 tbsp melted butter + pinch salt till it holds when squeezed. Press into bottom of 9-inch springform (not high up sides). Bake 8 minutes. Cool. Drop oven to 325°F (163°C). Wrap pan in 2 layers wide foil — leak insurance.
Beat 24 oz very soft cream cheese 2 min, no lumps — scrape. Add ¾ cup sugar + ⅓ cup cocoa, 1 min. Add 4 oz cooled melted chocolate, 1 tsp vanilla, ¼ tsp salt, 1 tbsp kirsch if using. Mix in ½ cup sour cream. Scrape again. Add 3 eggs one at a time on low — stop when yellow disappears. Batter = chocolate pudding that went to law school.
Pour into crust, tap twice for bubbles. Set springform in roasting pan. Pour hot water halfway up. Bake 60–70 min at 325°F. Edge set, center jiggles like gelatin — not soup, not sloshy. Puffed high and cracking while you watch = overbaked. That’s what cherries are for, besides tasting like cherries.
Oven off, door cracked, 1 hour in bath. Out of bath, foil off, room temp 1 hour. Fridge at least 6 hours — overnight for clean wedges. Run a thin knife around edge after 30 min in fridge so it doesn’t glue and split when you unclip.
Unclip cold. Spoon cherries in the center, leave a chocolate rim so the slice shows layers. Whip 1 cup cold cream + 2 tbsp powdered sugar + ½ tsp vanilla to medium peaks. Pipe or spoon around cherries. Shave chocolate with peeler. Hot knife, wipe between cuts. First slice is the conductor’s fee. Serve cold.
Notes 03
Air is the crack. Beat cream cheese + sugar smooth, then cocoa + chocolate. Eggs on low, one at a time, just combined. Overbeat after eggs = air puff then collapse = Grand Canyon across your symphony.
Steam keeps the top from drying into a crust that splits when the middle finishes. Wrap 2× foil, hot water halfway, 325°F not 350. No bath? Pan of water on rack below is better than nothing, not as even.
Oven off, door cracked 1 hr → room temp 1 hr → fridge overnight. Cold air on hot cake = sunken drum. One peek at 60 min is enough. Opening every 8 min is a temperature tantrum.
Warm cake + wet fruit = pink puddle. Chill first, drain 2–3 tbsp syrup so fruit stays glossy, not gray ring. Homemade: 2c pitted tart cherries + ⅓c sugar + 1 tbsp cornstarch + lemon + kirsch, 5 min, cool thick.
Cocoa is dry/bittersweet, melted chocolate is fat/round. Together they taste like Black Forest cake — not cocoa powder in cream cheese. Dutch or natural cocoa both work here.
Fridge 4 days — day 2 best, add cream day-of. Freeze plain cake 1 month (no cherries/cream), thaw fridge overnight. GF crust: GF chocolate cookies. No kirsch? Drop almond extract. Minis: halve, 4-inch, 28–35 min.

Fridge cake, not a salad. 12 slices is how you stay friends. Extra whipped cream on the side and second sliver not included. Contains dairy, eggs, wheat (cookie crust) — kirsch is alcohol, say so before you pass plates.
