Lazy chocolate chip cookie bars are the cookie that quit scooping. One bowl. Melted butter. Press the dough in a 9×13. Bake until the edges look done and the middle still looks like it might sue you. Cool a little. Cut squares. You get a whole pan of chewy middles and crispy corners without 36 cookie sheets and a prayer.
This is the recipe I make when someone says “can you bring cookies” and I say yes while still in sweatpants. No mixer required if your arm still works. No chill. The butter is melted on purpose. That is the lazy part and also the chewy part. Creamed butter makes cake-y cookies. Melted butter makes bars that taste like the center of a bakery cookie, only you did not portion 24 balls with a spoon you hate.
If you want actual round cookies with a crisp top, Apple Crisp Cookies are the scoop-and-bake lane. Bright and buttery is Lemon Meltaways. Another pan dessert that cuts into squares: Apple Crisp Shortbread Bars.
Why Melted Butter (and Why You Pull Them Early)
Melted butter coats flour differently than creamed butter. Creaming traps air. Air is lift. Lift in a bar pan is a cake that wanted to be a cookie. Melted butter plus brown sugar is chew. The molasses in brown sugar holds water. White sugar alone bakes crisp and pale. You want both: brown for gooey, white for the shiny crackly top people photograph.
Cornstarch is the diner-cookie trick. A tablespoon tenderizes so the bars stay soft on day two instead of turning into chocolate chip particle board. Skip it if you must. Do not skip salt. Two cups of chips without salt taste like sweet beige.
Baking soda needs acid (brown sugar) and heat. It browns the edges. Baking powder would puff them into blondies that forgot their identity. One teaspoon soda is plenty for a 9×13.
The lazy trap is overbaking because the center looks wet. Cookie bars set as they cool. If the middle is fully matte and the toothpick is clean, you baked blondie bricks. Pull when the edges are golden and the center still has a slight wobble and shine. 22–26 minutes at 350°F in metal. Glass runs hotter and slower. Start checking at 24 in glass.
Parchment with overhang is not fancy. It is how you lift the slab out instead of chiseling square one and destroying square two. Cool at least 20 minutes before cutting. Hot bars smear chocolate and fall apart, which is delicious and also not a pan of bars you can bring anywhere.
- Prep Time: 15 minutes
- Bake Time: 22–26 minutes
- Cool Time: 20–30 minutes
- Total Time: about 1 hour
- Yield: 24 bars (9×13 pan)
Bowl & Pan
You need:
- 9×13-inch metal baking pan
- Parchment paper – overhang on the long sides
- Large mixing bowl
- Whisk and wooden spoon – or a spatula with commitment
- Measuring cups
- Sharp knife – wipe between cuts if you like clean squares
No mixer. If you only have an 8×8, this dough is too much. Halve it, bake 28–32 minutes. A sheet pan spread thin makes crispy cookie bark. Still good. Different personality.
Chip List
- Unsalted butter – 1 cup (226g), melted and cooled 5 minutes – hot butter scrambles eggs
- Packed brown sugar – 1 cup (200g)
- Granulated sugar – 1/2 cup (100g)
- Large eggs – 2, room temp
- Pure vanilla extract – 2 tsp
- All-purpose flour – 2 1/4 cups (280g) – spoon and level
- Cornstarch – 1 tbsp
- Baking soda – 1 tsp
- Fine sea salt – 1 tsp
- Semisweet chocolate chips – 2 cups (340g), plus 1/3 cup for the top
- Flaky salt – pinch, optional, after baking
Butter tip: Melt, then wait. If the butter is steaming, the eggs cook in streaks. You want warm, not jacuzzi. Chip tip: Save a handful for the top. Buried chips are for eating. Top chips are for looking like you tried.
Stir, Press, Bake
1. Heat and line. Oven 350°F (175°C). Parchment in the 9×13, extra hanging over the long sides. Light spray on the short sides so the corners do not glue.
2. Wet bowl.
Whisk melted butter, brown sugar, and white sugar until it looks like thick caramel paste, about 1 minute. Whisk in eggs and vanilla until glossy. If it looks separated, keep whisking 20 seconds. It comes back.
3. Dry on top. Dump flour, cornstarch, baking soda, salt right on the wet mix. Stir until just a few flour streaks remain. Overmix and you get tough bars. Undermix and you get flour pockets that taste like regret. Fold in 2 cups chips.
4. Press.
Scrape into the pan. Wet fingers or a spatula. Press even, especially corners. Thick corners bake late. Thin center bakes early. You want a flat-ish slab, not a mountain range.
5. Extra chips, bake.
Scatter the remaining 1/3 cup chips. Bake 22–26 minutes. Edges brown. Center looks slightly underdone and shiny. That is the moment. Pull. Flaky salt if you like sweet-salty. Cool in the pan 20–30 minutes. Lift the parchment. Cut 24. First square is quality control. It is a job.
Chewy middle, crisp edge, melted chips. Warm is gooey. Room temp is the lunchbox version. Both are correct. Cold from the fridge is a different, fudgier personality. I do not judge the fridge people.
Eat Warm
Milk. Coffee. The bar in your hand over the sink because plates are a lot.
If the table wants a scoop cookie instead of a square, Apple Crisp Cookies bring cinnamon and oats. Citrus people get Lemon Meltaways. Another press-in pan: Apple Crisp Shortbread Bars.
Contains wheat, dairy, eggs, and soy if your chips list it. Say it if you are sending a pan to work. There is no stealth gluten in a chocolate chip bar. Extra napkins. Warm chocolate has opinions about shirts.
Bar Riffs
Brown butter: Brown the cup of butter, cool 10 minutes, then proceed. Nutty. Worth the extra pan. Still lazy-ish.
Half chips, half chunks: Melty puddles plus chip dots.
Walnut crunch: 3/4 cup chopped toasted walnuts with the chips. Announce nuts.
Espresso pinch: 1 tsp instant espresso in the dry mix. Chocolate gets louder. Not a coffee bar.
8×8 thick: Half recipe. 28–32 minutes. Bakery-thick middles.
Stuffed surprise: Press half the dough, scatter 1/2 cup extra chips or a swirl of peanut butter, press the rest. Slightly less lazy. Very popular.

Dessert bars. Twenty-four is how a 9×13 stays polite. Sixteen giant slabs are a choice. Flaky salt is not in the table. Neither is “I cut a tiny taste” that was two bars.
Tin Days
Room temp: Airtight, 3 days. Softest on day one. Day three is still a cookie, just less gooey.
Fridge: 5 days. Firmer, fudgier. 10 seconds in the microwave brings the chips back.
Freezer: Wrap squares, freeze 2 months. Thaw on the counter 20 minutes or eat frozen if you are that person. I am sometimes that person.
Do not store them uncovered. They dry out and then everyone says “these are fine” in a voice that means they are not.
Travel: Cool completely. Parchment between layers. Warm stacked bars become one mega bar. Romantic. Hard to serve.
Pale Bar Traps
Hot butter + eggs. Scrambled streaks. Cool the butter 5 minutes.
Packed flour. Spoon and level. Extra flour = dry cakey bars.
Overmixing after flour. Tough. Stop at almost combined.
Baking until the center looks “done.” Too late. Shine and a slight underbake.
Glass pan, same time as metal. Check later, or drop the temp 25°F. Glass holds heat.
No parchment. You will leave half the corners in the pan. That is a tax.
Cutting boiling hot. Smear city. 20 minutes.
Skipping salt. Flat sweet. One teaspoon in the dough.
Old baking soda. No spread, no brown. If it does not fizz in vinegar, buy a new box. The box in the back of the fridge from 2022 is a paperweight.
If you make these lazy chocolate chip cookie bars, tell me if you went flaky salt or extra chips on top. The salt people and the “more chocolate is the garnish” people can share a pan. I do both. I am not well, and the pan is empty by 9 p.m.
Happy one-bowl, no-scoop bars!

How to Cook 02
Heat to 350°F (175°C). Parchment in 9×13 metal pan, overhang on long sides. Light spray on short sides so corners don’t glue. No mixer needed.
Whisk 1 cup melted butter + 1 cup brown sugar + ½ cup white sugar till thick caramel paste, ~1 minute. Whisk in 2 eggs + 2 tsp vanilla till glossy. If it looks separated, whisk 20 sec — it comes back.
Dump 2¼ cups flour, 1 tbsp cornstarch, 1 tsp baking soda, 1 tsp salt right on the wet mix. Stir till just a few flour streaks remain. Overmix = tough bars. Fold in 2 cups chips.
Scrape into pan. Wet fingers or spatula — press even, especially corners. Thick corners bake late, thin center bakes early. Want flat slab, not mountain range.
Scatter ⅓ cup chips on top. Bake 22–26 min. Edges brown, center still slightly shiny with a wobble — that’s the moment. Pull. Flaky salt if you like. Cool in pan 20–30 min. Lift parchment. Cut 24. First square is quality control.
Notes 03
Melted coats flour, no air. Creamed butter traps air and puffs into cake. Brown sugar brings molasses + moisture. That’s chewy, not cakey. Hot butter scrambles eggs — cool 5 min.
1 tbsp keeps bars soft on day 2 instead of particle board. Skip if you must — still a cookie. Don’t skip the 1 tsp salt with 2 cups chips or it tastes like sweet beige.
Edges golden, center shiny — pull. Bars set as they cool. Matte center + clean toothpick = blondie bricks. Metal 22–26 min; glass pan check at 24 or drop 25°F — glass holds heat.
Press even, especially corners. Thick corners bake late and stay raw. Thin center overbakes. Wet fingers beat a spoon. Parchment overhang lifts the slab so square one doesn’t get chiseled.
Room temp 3 days airtight, fridge 5 days, freezer 2 months. 10 sec microwave brings fridge chips back. Cool completely and parchment between layers — warm stacked bars become one mega bar.
Brown butter nutty (cool 10 min). Half chips/half chunks puddles. ¾ cup walnuts toasted. 1 tsp espresso louder chocolate. 8×8 thick: halve, 28–32 min. Swirl peanut butter if you’re less lazy.
