If you want muffins that make kids (and adults who are basically big kids) light up the second they see them, these mini funfetti yogurt muffins are it.
Theyโre soft, fluffy, moist, packed with rainbow sprinkles inside and out, made with Greek yogurt so they stay tender for days, and theyโre mini – which means you can eat 3 and it still counts as one, right? Thatโs my math and Iโm sticking to it.
I made these for my nieceโs birthday because she wanted โcupcakes but also muffins but also sprinkles everywhere.โ Mini funfetti yogurt muffins were the answer. They baked in 12 minutes, looked like a party on a plate, and disappeared faster than my homemade ice cream no machine recipe on a hot day. The best part? No mixer needed, one bowl, and you donโt need to be a baker to get perfect fluffy minis.
Why Greek Yogurt Makes the Fluffiest Mini Muffins
Itโs a little kitchen science, and a whole lot of delicious. Greek yogurt is acidic, and when that acidity meets baking powder and baking soda, it creates extra bubbles that lift the batter high. Result: mini muffins that puff up tall and stay soft and springy instead of dense. Same trick I love in my Belgian waffles recipe easy crispy golden – yogurt = fluff.
The yogurt also adds protein and moisture, so muffins taste rich and satisfying with less butter. And because itโs thick, batter stays thick and scoopable, which means sprinkles donโt sink to bottom – they stay suspended throughout for rainbow in every bite. Together, Greek yogurt and funfetti sprinkles make muffins that are fluffy, moist, colorful, and kid-approved all at once.

Equipment You Need
Simple muffin gear – nothing you donโt already own:
- 24-Cup Mini Muffin Tin + Mini Linersย – or grease really well, minis love to stick
- Large Mixing Bowl and Whiskย – one bowl for whole batter, happy minimal cleanup
- Small Cookie Scoop (1 tbsp)ย – for even, perfectly round minis that bake same rate
- Spatulaย – for folding sprinkles gently so colors donโt bleed
- Wire Rackย – for cooling so bottoms donโt get soggy
What You Need
For the Batter:
- All-purpose flour – 1 1/2 cups (190g)ย – spooned and leveled for fluffiest result
- Baking powder – 1 1/2 tsp
- Baking soda – 1/4 tspย – teams up with yogurt acidity for lift
- Fine sea salt – 1/4 tsp
- Greek yogurt – 1 cup (225g), plain whole milk or 2%ย – thicker = fluffier batter
- Granulated sugar – 3/4 cup (150g)
- Large eggs – 2, room temp if you can
- Unsalted butter – 1/4 cup (56g), melted and slightly cooledย – plus more for greasing if not using liners
- Pure vanilla extract – 2 tspย – use good vanilla, itโs the main flavor besides sprinkles
- Rainbow funfetti sprinkles (jimmies) – 1/2 cup (80g) + 2 tbsp for toppingย – jimmies, not nonpareils! Nonpareils bleed color
For Topping (optional but pretty):
- Extra sprinkles for tops, light dusting of powdered sugar
How to Make Mini Funfetti Yogurt Muffins
1. Mix dry. In large bowl, whisk flour, baking powder, baking soda, salt. Whisking well now means you stir less later, which keeps muffins fluffy.
2. Mix wet. In another bowl or large measuring cup, whisk Greek yogurt, sugar, eggs, melted butter, vanilla until completely smooth and creamy. Should be thick but pourable, no lumps.
3. Combine gently. Pour wet into dry and stir with spatula until just combined – stop when you still see a few small flour streaks. Batter will be thick.
4. Fold in sprinkles. Add 1/2 cup sprinkles and fold with 2-3 gentle strokes. Donโt overmix or colors bleed and turn batter gray. Thick, lumpy batter with visible sprinkles is exactly right. This is where you try not to eat raw batter with sprinkles. I fail.
5. Scoop into mini tin. Scoop 1 tbsp batter into each mini muffin cup, filling 3/4 full. They puff up nicely.
6. Top with more sprinkles. Sprinkle extra 2 tbsp sprinkles on top of each muffin before baking – makes them look like bakery party muffins.
7. Bake. Bake at 350ยฐF (175ยฐC) 11-13 minutes until tops are set, lightly golden, and toothpick in center comes out with moist crumbs but no wet batter. Mini muffins bake fast, so check at 11!
Cool in pan 5 minutes, then move to wire rack. Serve warm or room temp.
Look at that – soft, fluffy, rainbow sprinkles inside and out, golden tops. Perfect mini party muffins!
The Little Details That Make These Minis Tall and Fluffy
Use jimmies, not nonpareils. Jimmies are the long skinny sprinkles – they hold color when baked. Nonpareils are tiny balls that bleed and turn batter tie-dye gray. I learned this after making gray muffins for a birthday. Not festive.
Thick batter = fluffy muffins. This yogurt batter should be noticeably thicker than regular muffin batter – scoopable not pourable. If too thin, add 1 tbsp flour. Thick batter = tall fluffy minis.
Donโt overmix. Stir until just combined with a few lumps, fold sprinkles gently, then put spatula down. Overmixing makes tough, dense muffins and bleeds sprinkle colors.
Room temp eggs and yogurt mix better. Cold yogurt + cold eggs = lumpy batter. Room temp = smooth, even batter that rises evenly. 20 minutes on counter does it.
One batch, no pressing. Scoop and bake, donโt press batter down in cups. Pressing deflates air bubbles yogurt worked hard to create.

With Greek yogurt, each mini has a little protein boost for a funfetti treat. Add nuts or extra yogurt on side for more staying power.
Storing and Freezing
These keep wonderfully. Cool completely, store in airtight container at room temp 2 days, or fridge 4 days. Greek yogurt keeps them moist longer than regular muffins.
Reheat 10 seconds in microwave for soft warm muffin, or toast lightly.
Freeze up to 2 months – freeze in single layer on baking sheet, then bag. Thaw overnight in fridge or microwave 20 sec. Perfect for lunchboxes – pack frozen, thawed by lunch. A double batch Sunday means funfetti all week.
Mistakes That Can Flatten Fluffy Minis
Using nonpareils sprinkles. They bleed color and turn batter gray. Use jimmies (long skinny) for rainbow that stays.
Overmixing batter. Vigorous stirring pops air bubbles and makes dense, tough minis. Stir until just combined, fold sprinkles gently.
Baking too hot or too long. High heat browns tops before centers set, low heat makes flat. 350ยฐF and 11-13 min is sweet spot for minis.
Filling cups too full. Overfilled minis overflow and get flat tops. 3/4 full = perfect domed tops.
I hope you love these mini funfetti yogurt muffins as much as my family does! If you make them, leave a comment and tell me how many disappeared before they even cooled.
Happy colorful baking!
