Apple Oatmeal Cookies with Cranberries and Pecans – Chewy & Cozy

Apple Oatmeal Cookies

If oatmeal cookies and apple pie had a baby, and that baby invited cranberries and pecans to the party, youโ€™d get these apple oatmeal cookies with cranberries and pecans.

Theyโ€™re soft, chewy in the center, slightly crisp on the edges, packed with diced fresh apples that stay tender, tart dried cranberries that pop, and crunchy toasted pecans in every bite. Warm cinnamon and brown sugar tie it all together, and your kitchen will smell like a cozy fall cabin.

I made these because I had apples rolling around from my Dutch apple pie buttery crumb topping and leftover cranberries from Thanksgiving that I forgot in the pantry. My wife said โ€œthose are too many things in one cookieโ€ and then ate four. So, you know, the official taste test passed.

Why Apples, Oats, Cranberries & Pecans Make the Best Cookies

Itโ€™s a little kitchen science and a lot of delicious. Oats absorb moisture and give that chewy, hearty texture that stays soft for days – unlike regular cookies that go hard overnight. Diced fresh apples release just enough juice as they bake to keep the cookies extra moist, like little pockets of apple pie filling inside.

Dried cranberries add tart chewiness that balances the sweet apples and brown sugar – think cranberry sauce meets oatmeal cookie. And toasted pecans? Crunch, buttery flavor, and they keep their crunch even after baking. Together, apple + oatmeal + cranberry + pecan = sweet, tart, chewy, crunchy, cozy all in one cookie. Itโ€™s basically fall in cookie form.

  • Cook Time:ย 12 minutes
  • Total Time:ย 30 minutes (plus cooling)
  • Yield:ย 24 cookies

Equipment You Need

Simple cookie gear – nothing fancy:

  • Large Mixing Bowls (2)ย – one for dry, one for wet, easy cleanup
  • Hand Mixer or Stand Mixerย – for creaming butter and sugar till fluffy
  • Box Grater or Sharp Knifeย – for dicing apples small, about 1/4 inch pieces
  • Cookie Scoop (1.5 tbsp)ย – for even cookies that bake same time
  • Baking Sheets + Parchment Paperย – parchment = no sticking, easy cleanup
  • Wire Rackย – for cooling so bottoms donโ€™t get soggy

What You Need

For the Cookies:

  • All-purpose flour – 1 1/2 cups (190g)ย – spooned & leveled
  • Old fashioned oats – 1 1/2 cups (135g)ย – not instant, old fashioned gives chewy texture
  • Baking soda – 1 tsp + Baking powder – 1/2 tsp + Fine sea salt – 1/2 tsp
  • Ground cinnamon – 1 1/2 tsp + Ground nutmeg – 1/4 tspย – cozy fall spices
  • Unsalted butter – 3/4 cup (170g), softenedย – room temp, not melted, for chewy not flat
  • Light brown sugar – 3/4 cup (150g), packed + Granulated sugar – 1/4 cup (50g)ย – brown = chewy and moist
  • Large eggs – 2, room temp
  • Pure vanilla extract – 2 tsp
  • Fresh apples – 1 cup (150g), peeled and diced small 1/4 inchย – Honeycrisp or Granny Smith hold shape best
  • Dried cranberries – 3/4 cup (90g)ย – sweetened or unsweetened, both work
  • Pecans – 3/4 cup (85g), toasted and choppedย – toast 5 min at 350ยฐF for extra crunch

Toast pecans: Spread on baking sheet, bake 5 min at 350ยฐF until fragrant. Makes them crunchier and way more flavorful. Donโ€™t skip, takes 5 min!

How to Make Apple Oatmeal Cookies with Cranberries and Pecans

1. Prep apples and toast pecans. Peel and dice apples small, 1/4 inch – small pieces distribute better and donโ€™t make cookies soggy. Toast pecans if you havenโ€™t. This takes 10 minutes and makes huge difference.

2. Mix dry. In bowl, whisk flour, oats, baking soda, baking powder, salt, cinnamon, nutmeg. Whisking well now means you stir less later, which keeps cookies soft.

3. Cream butter and sugars. In large bowl, beat softened butter and both sugars with mixer on medium 2-3 min until fluffy and pale. Add eggs one at a time, then vanilla. Should be creamy and light.

4. Combine. Pour dry into wet and mix on low until just combined – few flour streaks okay. Fold in diced apples, cranberries, and toasted pecans with spatula, 8-10 gentle strokes. Dough will be thick, chunky, and smell like fall. If too dry, add 1 tbsp milk.

5. Scoop.

Scoop 1.5 tbsp balls onto parchment lined sheets, 2 inches apart. They spread a bit but stay thick. For extra pretty, press a few extra cranberries and pecans on top of each dough ball before baking.

6. Bake. Bake at 350ยฐF (175ยฐC) 11-13 minutes until edges golden, centers still soft and slightly underdone. They firm up as they cool and stay chewy. Overbaked = dry and crunchy, we want soft and chewy.

Cool on sheet 5 minutes, then move to wire rack.

Look at that – chewy oatmeal cookie, soft apple pieces, tart cranberries, crunchy pecans, golden edges. Fall in a cookie!

The Little Details That Make These Chewy, Not Dry

Dice apples small, 1/4 inch. Big chunks release too much juice and make cookies soggy and spread too much. Small dice = apple in every bite, stays moist not wet.

Toss apples in 1 tbsp flour if very juicy. If your apples are super juicy (like Honeycrisp), toss diced apples with 1 tbsp flour before adding to dough. Prevents soggy bottoms.

Brown sugar = chewy. White sugar alone makes crisp cookies. Brown sugar has molasses, keeps cookies soft and chewy for days. Thatโ€™s why we use mostly brown.

Chill dough 20 min if sticky. If dough is too soft and sticky to scoop (warm kitchen), chill 20 min in fridge. Firms up butter, less spreading, chewier center.

Underbake by 1 minute. Pull when centers still look soft and slightly underdone. They set as they cool and stay chewy. Fully baked looks = dry tomorrow.

What to Serve With

Perfect with hot coffee, apple cider, or cold milk. For a fall dessert spread, serve these alongside my Dutch apple pie buttery crumb topping – pie for the table, cookies for lunchboxes and snacking, same apple-cinnamon family. And for breakfast, theyโ€™re amazing with my Banana Chocolate Chip Muffins Moist Easy – one banana chocolate, one apple cranberry pecan, covers all cravings.

With oats, apples, cranberries, and pecans, you get fiber and a little protein for a cookie. Not health food, but better than pure sugar cookies.

Storing and Freezing

These keep wonderfully. Cool completely, store in airtight container at room temp 3 days, or fridge 5 days. Apples keep them moist longer than regular oatmeal cookies.

Reheat 10 sec in microwave for soft warm cookie, or toast lightly.

Freeze baked cookies up to 3 months – freeze in single layer on tray, then bag. Thaw overnight in fridge or microwave 20 sec. Also freeze dough balls – scoop, freeze on tray 1 hour, then bag. Bake from frozen, add 2 minutes. Fresh cookies anytime!

Mistakes That Make Dry or Soggy Cookies

Big apple chunks. Large chunks release too much water and make cookies spread and get soggy. Dice small, 1/4 inch.

Overmixing after adding flour. Develops gluten and makes tough, dry cookies. Mix until just combined, fold add-ins gently.

Overbaking. Biggest killer of chewy. Pull when edges golden but centers still soft. They firm up as they cool.

Skipping toasted pecans. Raw pecans are soft and bland. Toasted 5 min = crunchy and flavorful. Worth it.
