Chinese Sweet Black Sesame Glutinous Rice Cakes – Chewy & Nutty

Sweet Black Sesame Glutinous Rice Cakes

Chinese sweet black sesame glutinous rice cakes are chewy, nutty, and quietly addictive. Toasted black sesame. Coconut milk. Glutinous rice flour that turns into that bounce people call mochi even when you did not buy a Japanese mix. You steam a pan, cool it, cut squares. No oven. No frosting. No โ€œis my crumb tender.โ€ The crumb is not a crumb. It is a chew. That is the point.

This is a home version of ้ป‘่Š้บป็ณฏ็ฑณ็ณ• โ€” sesame glutinous rice cake โ€” not a 12-hour nian gao project and not filled tangyuan dumplings. Same pantry idea: sticky rice flour, sugar, sesame. If you can whisk pancake batter and boil water, you can make these. The hard part is not eating the corner before it cools, because hot glutinous rice cake is edible glue. Delicious glue. Still glue.

Coconut people already know Thai Coconut Custard and Coconut Milk Cake. Soft cafe cake is London Fog Cake if someone at the table wants vanilla-tea, not sesame-chew. More sesame for you.

Why Glutinous Flour Chews (and Regular Rice Flour Will Not)

Glutinous rice flour (sweet rice flour, mochiko) is almost all amylopectin. Heat plus liquid gelatinizes it into that stretchy, bouncy gel. It is not gluten. It is not wheat. โ€œGlutinousโ€ means gluey, not โ€œcontains gluten.โ€ If you need wheat-free, this flour is usually fine โ€” check the bag. If you grab regular rice flour (the one for rice noodles or tempura), you get gritty, crumbly cake that tastes like wet sand with sesame. Wrong bag. The bag should say glutinous or sweet rice flour.

Toast the sesame. Raw black sesame is bitter-dusty. Three minutes in a dry pan and it smells like a bakery that knows what it is doing. Grind it while warm so the oils come out. A blender or spice grinder. A little texture is good. Powder is fine. Whole seeds in the batter stay hard.

Rest the batter 10 minutes. The flour drinks the coconut milk. If you steam immediately, you can get a wet line at the bottom and a tight top. Rest, stir once, steam.

Do not treat this like wheat cake. No baking powder required. Lift comes from steam, not bubbles. Overmixing is not the enemy here the way it is in muffins. Lumps of dry flour are the enemy. Whisk until smooth.

Hot cake is too sticky to cut. Cool at least 30 minutes. Wet the knife. Wipe. Repeat. Dry knife = stretched, torn squares and a speech about โ€œrustic.โ€

  • Prep Time: 15 minutes
  • Cook Time: 35 minutes
  • Cool Time: 30 minutes
  • Total Time: about 1 hour 20 minutes
  • Yield: 16 squares (8×8 pan)

Pot & Pan

You need:

  • Steamer – bamboo or a pot with a rack and a lid. A metal colander over simmering water works if the pan fits
  • 8×8 pan that fits in the steamer – or two loaf pans
  • Parchment – sling, or grease very well
  • Dry skillet – toast sesame
  • Blender or spice grinder
  • Whisk + bowl
  • Sharp knife + wet towel

No steamer? Oven water bath: 8×8 pan inside a 9×13 with hot water, cover the rice cake tightly with foil, 350ยฐF (175ยฐC) 35โ€“40 minutes. Slightly less bounce, still chewy. Microwave: 8×8 microwave-safe dish, 6โ€“8 minutes, check at 5. Corners cook first. Not my favorite, works in a dorm.

Sesame Grocery

Cake:

  • Glutinous rice flour (sweet rice flour / mochiko) – 1 1/2 cups (180g) – not regular rice flour, not all-purpose
  • Black sesame seeds – 1/2 cup (70g)
  • Granulated sugar – 1/2 cup (100g) – or 1/3 cup if you like less sweet
  • Full-fat canned coconut milk – 1 1/4 cups (300ml), well stirred
  • Neutral oil – 2 tbsp
  • Fine sea salt – 1/4 tsp
  • Optional black sesame paste – 1 tbsp – extra depth if you have a jar

Top:

  • Extra toasted sesame, or a dust of powdered sugar, or toasted coconut

Flour tip: Mochiko, Erawan (green bag) glutinous rice flour, or โ€œsweet rice flour.โ€ If it says rice flour only, put it back. Sesame tip: Black sesame has more flavor than white here. White works, milder, pretty beige cake. Toast either.

Toast, Whisk, Steam

1. Toast and grind.

Dry skillet, medium, 3โ€“5 minutes, stir. Done when they smell nutty and a few start to pop. Do not walk away. Sesame goes from perfect to bitter in the time it takes to answer a text. Reserve 1 tbsp whole seeds for the top. Grind the rest until mostly powder, a little grit left.

2. Whisk the batter.

Whisk glutinous rice flour, sugar, salt, and ground sesame. Whisk in coconut milk, oil, and sesame paste if using, until smooth. No dry pockets at the bottom. Rest 10 minutes. Stir once. It should look like thin pancake batter, pourable, not dough. Too thick? 1 tbsp milk. Too thin? 1 tbsp flour. Thick batter steams dense. Thin batter weeps.

3. Pan and steam.

Line 8×8 with parchment. Pour. Tap the pan to pop bubbles. Scatter reserved sesame. Steam over steadily simmering water 30โ€“35 minutes. Lid on. Do not let the pot go dry. Toothpick should come out with a few sticky crumbs, not wet batter. 40 minutes can dry the edges.

If water drips from the lid onto the cake, wrap the lid in a towel or foil. Water spots make wet craters. I learned this the ugly way.

4. Cool, then cut. 10 minutes in the pan, then lift out. Cool 20 more minutes. Wet the knife. Cut 4×4. Wipe between cuts.

Chewy, nutty, sweet, a little salty. Room temp is bounciest. Fridge makes them firmer; 10 seconds in the microwave brings the chew back. Eat one over the board. Sesame will find your shirt. That is branding.

Eat Beside

Jasmine tea or unsweetened tea. These are sweet-chewy. They like something bitter.

Fresh fruit on the side โ€” mango, orange โ€” cuts the richness. Coconut dessert people can put Thai Coconut Custard on the same table (spoon) and Coconut Milk Cake (slice). If someone wants Western cafe cake, London Fog is vanilla-tea, not sesame.

Contains sesame. Say it. Sesame allergy is not a cute surprise. Glutinous rice flour is not wheat, but the kitchen might have wheat flour in the air if you bake a lot. Label honestly.

Sesame Twists

Layered: Pour half, steam 15 minutes, spread a thin layer of black sesame paste mixed with 1 tbsp sugar, remaining batter, steam 20 more. Stripe. Show-off.

Coconut coat: Cool, cut, roll edges in toasted coconut like nuomici energy without the filling.

Brown sugar: Swap white sugar for packed light brown. Deeper, slightly stickier.

Matcha swirl: 1 tsp matcha in 1/3 of the batter, marble. Pretty. Still sesame-first.

Pan-fry leftovers: Slice, light oil, 1โ€“2 minutes a side until the edges blister. Chewy inside, toasted outside. Breakfast, I will not testify.

Muffin cups: Grease well, steam 18โ€“22 minutes. No cutting. Cute. More dishes.

Chewy dessert, not a protein bar. Sesame brings fat and flavor. Coconut milk brings moisture. Sugar is why you eat four. Two squares with tea is a snack. The pan is a mood.

Box Days

Counter: Airtight, 2 days. They stay bounciest at room temp.

Fridge: Up to 5 days, wrapped so they do not dry. They firm up. 10โ€“15 seconds in the microwave, or a quick steam, and the chew returns.

Freezer: Wrap squares, freeze 1 month. Thaw in the fridge, then a short microwave. Texture holds better than wheat cake.

Do not leave them uncovered. They dry into erasers. Wrap like you mean it.

Gummy Traps

Regular rice flour or all-purpose. No chew. Glutinous / sweet rice flour only.

Raw sesame. Dusty, bitter. Toast.

Skipping the rest. Wet bottom. 10 minutes.

A rolling boil in the steamer. Water in the cake, uneven set. Simmer.

Cutting hot. Stretchy mess. Cool 30 minutes. Wet knife.

Too much coconut milk. Weepy, wonโ€™t set. 1 1/4 cups for 1 1/2 cups flour.

Walking away while toasting sesame. Smoke, bitter, start over. Stay with the pan.

Calling it gluten-free without reading the bag. Usually yes. Confirm. Cross-contact is real.

If you make these Chinese sweet black sesame glutinous rice cakes, tell me if you cut them too early anyway. I support your choices. I will not support your sticky knife.

Notes 03

๐ŸŒพWhy glutinous chews

Glutinous = gluey, not gluten. Almost all amylopectin โ€” heat + liquid = stretchy gel. Regular rice flour or all-purpose = gritty crumbly sand. Bag must say glutinous / sweet rice / mochiko. No baking powder needed โ€” steam does the lift.

๐Ÿ”ฅToast, donโ€™t walk away

3โ€“5 min dry pan, stir. Smells like a proper bakery when done. Skip toasting = bitter-dusty. Over-toast = bitter anyway. Grind while warm so oils come out โ€” a little texture is good, powder is fine.

๐Ÿ’งRest + simmer, not boil

Rest 10 min so flour drinks milk โ€” or wet line at bottom. Steam on simmer, not rolling boil โ€” or water splashes in and cake sets uneven. Lid towel trick stops drip craters.

๐Ÿ”ชCool 30 min, wet knife

Hot = glue. 10 min in pan + 20 min out, then wet knife, wipe, repeat. No steamer? Oven bath: 8ร—8 in 9ร—13 hot water, foil tight, 350ยฐF 35โ€“40 min. Microwave 8ร—8 6โ€“8 min โ€” corners cook first.

๐Ÿ“ฆBox days

Counter 2 days airtight โ€” bounciest. Fridge 5 days wrapped โ€” firms up, microwave 10โ€“15 sec. Freeze 1 month wrapped โ€” thaw fridge then microwave. Uncovered = erasers. Wrap like you mean it.

โœจSesame twists

Layered stripe: half batter 15 min, sesame paste + sugar, rest 20 min. Coconut coat edges, brown sugar swap, matcha marble 1 tsp in โ…“ batter, pan-fry leftovers 1โ€“2 min/side โ€” blistered outside, chewy inside.
