3 Ingredient Brownies with Banana – Fudgy Flourless & Healthy

3 Ingredient Brownies with Banana

These 3 ingredient brownies with banana are almost too easy to be real. Three ingredients. One bowl. No flour, no sugar, no eggs, no kidding.

Just ripe bananas, cocoa powder, and peanut butter — mash, mix, bake — and you get fudgy, dense, chocolatey brownies that are naturally sweet, gluten-free, vegan, and actually good for you. They taste like those super fudgy flourless brownies from a fancy bakery, not like health food pretending to be brownies.

I made these when I had two black bananas on the counter and zero flour in pantry. My kid said “those can’t be brownies without flour.” Then he ate three and asked if we had more bananas. That’s the official taste test.

If you loved my Healthy Banana Oatmeal Cookies — same ripe banana magic — and my Banana Chocolate Chip Muffins Moist Easy, you’ll love these even more. Banana + chocolate is undefeated.

Why Banana + Cocoa + Peanut Butter Makes Perfect Brownies

Quick science, no boring stuff. Ripe bananas are natural sweetener, binder, and moisture all in one. The riper they are, the more sugar and the stickier starch, so they hold brownies together without flour or eggs and keep them fudgy not cakey. That’s why black-spotted bananas work best.

Cocoa powder gives intense chocolate flavor without needing chocolate bars or sugar. Unsweetened cocoa is pure chocolate, no fat, lots of flavor. Peanut butter adds fat and protein so brownies are rich, fudgy, and don’t fall apart — it replaces butter and eggs. The fat in peanut butter also makes them moist for days.

Together, they bake into dense, fudgy, flourless brownies that are naturally sweetened, high fiber, and actually satisfying. No flour needed because banana + peanut butter = structure. It’s like magic, but chocolate.

Equipment You Need

Cloud Bread — Equipment I Need

Just a mixer and a sheet pan — cloud bread is wonderfully low-effort. Every tool below has one job: keep the clouds light and the cleanup easy.

What You Need

Only 3 Ingredients – The Base:

  • Very ripe bananas – 2 large (about 1 cup mashed, 240g) – black spots = sweetest, best for brownies. Must be very ripe
  • Unsweetened cocoa powder – 1/2 cup (45g) – natural or Dutch-process, sift if lumpy
  • Creamy peanut butter – 1/2 cup (130g) – or almond butter, sunflower butter for nut-free. Natural or regular both work

Optional but Recommended (still 3-ingredient at heart, these just make better):

  • Fine sea salt – pinch – makes chocolate pop
  • Pure vanilla extract – 1 tsp – optional, enhances chocolate
  • Chocolate chips – 2 tbsp for topping – extra fudgy

Banana ripeness is EVERYTHING: Yellow bananas = bland, not sweet enough, brownies fall apart. You need brown spots or even black peels — that’s when bananas are sweetest and starchiest and bind brownies. If bananas not ripe, bake them at 300°F for 15 min until black, then cool and use.

How to Make 3 Ingredient Brownies with Banana

1. Mash bananas super well.

In large bowl, add peeled very ripe bananas and mash with fork until mostly smooth — no big chunks, about 1 cup mashed. Few small lumps okay, but smooth mash = fudgy even brownies. If you want super smooth, use potato masher.

2. Add peanut butter and cocoa.

Add peanut butter to mashed bananas, stir until creamy and combined. Then add cocoa powder (and salt + vanilla if using) and whisk/stir until thick, fudgy, glossy chocolate batter forms. It will be thick like mousse, not pourable like regular brownie batter. That’s correct — no flour!

If too thick and dry (depends on banana size), add 1 tbsp milk or water. If too wet, add 1 tbsp extra cocoa.

3. Pour into pan.

Line 8×8 pan with parchment leaving overhang. Pour batter in, spread evenly with spatula — it’s thick so you need to spread, not pour. Smooth top. Sprinkle chocolate chips on top if using.

4. Bake.

Bake at 350°F (175°C) for 16-19 minutes until top set, edges look done, center still slightly soft and fudgy — toothpick should come out with moist crumbs, not wet batter, but not clean dry. Overbaking = dry and crumbly, we want fudgy. They firm up as they cool!

Cool in pan 15 minutes, then lift out using parchment and cool 10 more minutes before cutting. They are delicate warm, fudgy set as they cool.

Dense, fudgy, intensely chocolatey, naturally sweet from banana, with peanut butter richness. Flourless but tastes like real brownies — maybe even better because they’re so fudgy.

The Little Details That Keep Them Fudgy Not Rubbery

Very ripe bananas only. Yellow = fail. Brown spots or black peels = success. Ripe bananas are sweeter and bind better.

Don’t overbake. This is #1 mistake. They don’t rise much, so you can’t tell by look. At 16 min check — center should still be slightly soft. They set as they cool. Overbaked = dry, rubbery.

Measure cocoa correctly. Spoon cocoa into cup, level. Too much cocoa = bitter and dry. 1/2 cup is perfect for 2 bananas + 1/2 cup PB.

Peanut butter matters. Natural peanut butter (just peanuts) makes slightly less sweet, more crumbly but healthier. Jif/Creamy makes fudgier, sweeter, holds better. Both work — I like natural for healthy, Jif for fudgiest.

Cool before cutting. Warm they fall apart. 15 min in pan + 10 min out = clean fudgy squares.

Fun Variations (Still Easy!)

3 Ingredient Banana Brownies with Walnuts: Fold in 1/3 cup chopped walnuts. Crunchy fudgy.

Double Chocolate: Add 1/4 cup chocolate chips into batter + 2 tbsp on top. Extra chocolatey, still 3 main ingredients plus chips.

Almond Butter Banana Brownies: Swap peanut butter for almond butter + add 1/4 tsp almond extract. Nutty elegant.

Protein Banana Brownies: Add 1 scoop chocolate protein powder + 2 tbsp extra mashed banana or 2 tbsp milk to keep moist. 8g protein per brownie.

Peanut Butter Swirl: After spreading batter, dollop 2 tbsp extra peanut butter on top and swirl with knife. PB swirl brownies.

No added sugar, no flour, no oil, no eggs, gluten-free, vegan if using natural PB and no honey. High fiber from banana and cocoa!

Storing and Freezing

These stay fudgy thanks to banana.

Room temp: Airtight container 2 days. They get fudgier day 2!

Fridge: Fridge 5 days — actually better cold, like fudge. My favorite way to eat them cold straight from fridge.

Freezer: Freeze squares in single layer on tray 1 hour, then bag. Freeze up to 2 months. Thaw 1 hour at room temp or microwave 15 sec for warm fudgy brownie. Great meal prep.

No room temp too long: Has banana and peanut butter, don’t leave out more than 2 days, fridge is better.

Mistakes That Make Them Dry or Fall Apart

Not ripe bananas. Yellow bananas = not sweet, not starchy, brownies crumbly and bland. Need brown spots.

Overbaking. Biggest killer of fudgy. Pull when center still slightly soft, not fully firm.

Too much cocoa. Makes bitter and dry. Measure correctly, 1/2 cup.

Cutting too hot. Falls apart. Cool 15 min in pan + 10 min out.

Skipping parchment. These are flourless and sticky, they stick to pan. Parchment = easy lift and clean cut.

If you make these 3 ingredient brownies with banana, tell me if you told anyone they’re healthy before or after they ate them. I tell after — they’re more impressed.

🥄 Protein powder tip — flavor is 70% of this

Use whey isolate vanilla you LIKE the taste of — if you hate it in a shake, you’ll hate it here. Plant protein works but can be gritty — add extra 1 tbsp Greek yogurt + 1 tbsp milk. Check label: 2 scoops = ~40–50g protein total. Oat flour: heat-treat: microwave oat flour 60 sec stirring after 30 sec, or toast in dry skillet 2 min — kills bacteria, safe to eat raw.

02How to Cook

01
Heat-treat oat flour — 60 sec, don’t skip

Place ¾ cup oat flour in microwave-safe bowl. Microwave 60 seconds, stirring after 30 sec — warm to touch, not hot. This makes raw flour safe to eat and adds light toasty flavor. No microwave? Toast in dry nonstick skillet over medium 2 min, stirring constantly. Let cool 2 min.

02
Mix wet — creamy frosting texture

In large bowl, add ½ cup peanut butter, ¼ cup Greek yogurt, 2 tbsp honey, 1 tbsp brown sugar, 1 tsp vanilla, and ¼ tsp salt. Stir with spoon or spatula until creamy and smooth — like thick frosting. This is your buttery, caramel base; don’t leave lumps.

03
Add dry — thick dough forms

Add heat-treated oat flour + 2 scoops whey protein to wet. Stir until thick dough forms — thick like real cookie dough, maybe crumbly at first. Add milk 1 tbsp at a time until soft, creamy, scoopable cookie dough texture. I usually need 2 tbsp. Don’t flood — protein powder absorbs differently by brand.

04
Fold in chocolate chips

Fold in ⅓ cup mini chocolate chips and 2 tbsp nuts if using. Distribute evenly — mini chips = chocolate in every bite. Try not to eat half the bowl now — I fail every time.

05
Scoop or eat — chill for firmer bites

Eat straight with a spoon — no shame — or scoop 1 tbsp balls onto parchment-lined plate for protein cookie dough bites. Chill 10 min for firmer balls that hold shape. Soft, chewy, creamy inside, chocolatey. Tastes like real chocolate chip cookie dough, 12g protein per 3 balls.

03Notes

🔥Heat-treat oat flour

Raw flour can have bacteria — not safe raw and tastes pasty. 60 sec microwave stirring halfway = safe + slightly toasty. Don’t skip this.

🥜Peanut butter + yogurt combo

Peanut butter alone = too dense, oily. Greek yogurt adds moisture + protein + tang, keeps dough soft and creamy not crumbly. You need both.

🥛Add milk slowly

Protein powder absorbs liquid differently by brand. Start 1 tbsp, then 1 tbsp until soft dough. Too much = sticky batter that won’t hold balls. Too little = dry crumbly.

🍫Mini chips only

Regular chips are too big — dough falls apart, chocolate not in every bite. Mini chocolate chips distribute evenly and keep balls together.

❄️Chill 10 min for balls

Warm dough is soft and sticky, hard to roll. 10 min in fridge = firmer, easy to scoop, holds shape. Eat straight or freeze.

📦Storage — fridge & freezer

Fridge airtight 5 days — gets firmer, microwave 8 sec or 1 tsp milk to soften. Freeze balls on tray 1 hr, then bag up to 2 months. Eat frozen or thaw 10 min. Don’t leave out >2 hours — has yogurt.
