Caramel crush bars are caramel bars that get their crunch from a bag and a rolling pin. You smash pretzels and graham crackers, press that into a pan, cook a pot of caramel, and press more crush on top while it is still sticky. Salt from the pretzels. Sweet from the caramel. No pecans unless you add them on purpose.
I make this when I want turtle energy without a chocolate lid or a bag of nuts. The crush is the crust and the topping. If you mix the extra crumbs into the caramel instead of pressing them on, they go soggy and you lose the point of the name.
Same candy-bar idea with pecans and a chocolate top: Turtle Bars Recipe. Pretzels in a pie: Peanut Butter Pretzel Pie. A 9×13 with chips instead of caramel: Lazy Chocolate Chip Cookie Bars.
Why you crush, then cook
Pretzel pieces should be mixed sizes. Powder only bakes into a hard sheet. Whole twists sit in the caramel like boats and fall off when you cut. Bag, rolling pin, some air left in the bag. You want crumbs plus pebbles.
Graham adds a little sweetness so the crust is not only salt. All pretzel works if that is what you have. All graham is milder and closer to a plain caramel slice. I use half and half.
The caramel is the same logic as other condensed-milk caramels. Water cooks off. It thickens. Corn syrup stops grit. Stir on medium 8 to 10 minutes until a spoon leaves a trail. Thin caramel soaks the crush and you get caramel soup with pretzel dust. Overcooked caramel pulls off in a sheet and takes the crust with it.
Press the topping crush onto warm caramel, not cold. Cold caramel will not grab. Wait until it is spread in the pan and still glossy. Then scatter and press with your palm. Chocolate drizzle is extra. It is not required for these to count as crush bars.
Bake the crust 8 minutes so the butter sets. Skip that and the bottom turns greasy by day two.

Crush List
Crust:
- Graham cracker crumbs – 1 1/2 cups (150g)
- Crushed pretzels – 1 1/2 cups (90g) – salted twists
- Unsalted butter – 3/4 cup (170g), melted
- Packed brown sugar – 1/4 cup (50g)
- Pinch salt – skip if the pretzels are very salty
Caramel:
- Sweetened condensed milk – 1 can (14 oz / 396g)
- Packed brown sugar – 1/2 cup (100g)
- Unsalted butter – 1/2 cup (113g)
- Light corn syrup – 1/4 cup (85g)
- Pure vanilla extract – 1 tsp
- Fine sea salt – 1/2 tsp
Top:
- Extra crushed pretzels – 1 cup (60g)
- Extra graham crumbs – 1/4 cup (25g), optional
- Semisweet chocolate – 3 oz (85g), melted, optional drizzle
- Flaky salt – pinch
Crush tip: Measure after crushing. A bag of whole pretzels is not 1 1/2 cups of crumbs. Pretzel tip: Honey mustard or yogurt pretzels taste wrong here. Plain salted twists.
Smash, Cook, Chill
1. Crush.
Bag the pretzels. Roll until you have crumbs and small bits. Mix with graham crumbs, melted butter, brown sugar, and a pinch of salt. It should hold when squeezed.
2. Press and bake.
Heat the oven to 350 F (175 C). Line the pan. Press the crust in firmly, especially the corners. Bake 8 minutes. Cool 10 minutes.
3. Caramel.
In the saucepan: condensed milk, brown sugar, butter, corn syrup, salt. Medium heat. Stir until it simmers, then 8 to 10 minutes until it thickens and darkens a little. Off heat, add vanilla. Pour over the crust. Spread to the edges.
4. Crush on top. While the caramel is still glossy, scatter the extra pretzels and graham. Press so they stick. Chocolate drizzle and flaky salt if you want. Fridge 2 hours.
5. Cut. Lift the parchment. Hot knife, wipe between cuts. If caramel smears, it needed more time in the fridge or more time in the pot.
Salty crunch, thick caramel, more crunch. Cold is cleaner. Ten minutes on the counter makes the caramel chewier.
Eat Cold
Coffee. The bars are already sweet.
Turtle bars with pecans and chocolate: Turtle Bars Recipe. Pretzel crust under peanut butter: Peanut Butter Pretzel Pie. Chip bars, no caramel: Lazy Chocolate Chip Cookie Bars.
Wheat, dairy, and pretzels (usually soy in the chips if you drizzle). Say it if you pack them for work. Caramel travels. It also sticks to the lid.
Crush Riffs
All pretzel crust: Skip graham. Add 1 tbsp more brown sugar so it is not only salt.
Chocolate graham: Use chocolate crumbs. Closer to a candy bar.
Peanut butter swirl: 1/4 cup warmed peanut butter dotted on the caramel before the topping crush. Announce peanuts.
Wrapped caramels: 11 oz caramels plus 1/4 cup cream, melted, instead of the condensed-milk pot.
No drizzle: Fine. The crush is the look.
8×8: Halve everything. Same 8-minute crust.

Twenty-four pieces from a 9×13. Drizzle adds a little. The corner you ate over the pan is not in the table.
Box Hours
Fridge: Covered, 1 week. Pretzel top softens after day 3. Still good.
Room temp: 1 day if the kitchen is cool. Heat makes caramel slide.
Freezer: Wrap, 2 months. Thaw in the fridge. The crush will be a bit softer.
Press parchment between stacked bars. They weld themselves together.
Do not cover them while the caramel is hot. You get steam, then a sticky lid.
Grit Bar Traps
Pretzel powder only. Hard crust. Leave some bits.
Thin caramel. Cook until it trails on the spoon.
Topping on cold caramel. It falls off. Press while glossy.
Honey pretzels. Weirdly sweet crust. Salted twists.
Packed graham that is actually 2 cups whole sheets. Measure crumbs.
No parchment. You will chisel the first row.
Stirring the topping into the pot. Soggy crush. Scatter on the pan.
Cutting after 20 minutes. Smear. Two hours.
Skipping salt in the caramel. Flat. Half a teaspoon.
If you make these caramel crush bars, say whether you kept the pretzel bits chunky or went fine. Chunky cuts messier and tastes better. I still smash too hard sometimes and then I live with a sandier crust.
Caramel Crush Bars
Caramel bars that get their crunch from a bag and a rolling pin — salty pretzel-graham crust, thick condensed-milk caramel, more crush pressed on top while it’s still glossy. No chocolate lid required.
Ingredients 01
Measure after crushing — whole pretzels ≠ crumbs. Bag + rolling pin, crumbs plus pebbles. Powder-only = hard sheet; whole twists = boats that fall off. Plain salted twists only — honey mustard pretzels taste wrong. Press topping while caramel is still glossy — cold caramel won’t grab. Don’t stir topping into pot or you get soggy crush.

How to Cook 02
Bag pretzels, leave some air, roll till crumbs + small bits. Mix with 1½ cups graham crumbs + ¾ cup melted butter + ¼ cup brown sugar + pinch salt. Should hold when squeezed. Don’t food-process to flour — pulse only.
Heat to 350°F / 175°C. Line 9×13 with parchment overhang. Press crust firmly, especially corners. Bake 8 min so butter sets. Cool 10 min — skip and bottom goes greasy by day two.
In saucepan: 1 can condensed milk + ½ cup brown sugar + ½ cup butter + ¼ cup corn syrup + ½ tsp salt. Medium heat, stir till it simmers, then 8–10 min till thick and a shade darker — spoon leaves a trail. Off heat: 1 tsp vanilla. Pour over crust, spread to edges.
While caramel is still glossy, scatter 1 cup crushed pretzels + ¼ cup graham and press with palm so they stick. Drizzle 3 oz melted semisweet and flaky salt if you want. Fridge 2 hours. Don’t cover while hot — steam makes a sticky lid.
Lift parchment slab. Hot knife, wipe between cuts. If caramel smears, it needed more fridge or more pot time. Cold is cleaner; 10 min on counter makes caramel chewier. Parchment between stacked layers — they weld together.
Notes 03
Pretzel powder only = hard crust. Crumb + pebbles gives the crush. Measure after crushing — whole bag ≠ cups of crumbs. Packed graham sheets ≠ crumbs either.
Thin caramel = pretzel soup. Cook till spoon trails and it’s thick-glossy. Overcooked = sheet that rips the crust when you cut. Medium heat, keep stirring.
Cold caramel won’t grab topping. Scatter and press while still glossy. Stirring topping into pot makes soggy crush — scatter on pan.
Honey mustard / yogurt pretzels taste wrong. Plain salted twists + ½ tsp salt in caramel = salt-sweet balance. No pretzel = all graham = milder plain caramel slice.
No parchment = chisel the first row. Overhang lifts the slab. Cut at 2 hours, not 20 minutes. Hot knife, wipe. Freezer not needed.
Fridge 1 week — top softens after day 3. Room temp 1 day cool kitchen. Freezer 2 months, thaw fridge — crush a bit softer. Press parchment between layers.
