Coconut Milk Cake – Soft, Moist & Full of Coconut

Coconut Milk Cake

Coconut milk cake is the cake I bake when I want something soft, a little tropical, and not a 14-step layer project. One bowl for wet, one for dry, a can of coconut milk, a handful of shredded coconut. Moist crumb that actually tastes like coconut, not like vanilla cake wearing a costume.

The can is the whole personality. Full-fat coconut milk makes the crumb tender the way sour cream does in other cakes, except here it is dairy-free without trying. No mixer. No butter to soften. No โ€œis this frosting stable in Julyโ€ panic.

My first version used the carton from the fridge labeled coconut milk. That is coconut water with a marketing team. The cake came out pale, dry, and mildly offended. Use the can. Shake it like it owes you money. Then we can be friends.

If you like simple cakes that stay moist, my Lemon Blueberry Bread is the citrus cousin and The BEST Coffee Cake is the cinnamon brunch one. When you want extra extra extra layers, Brown Sugar Bourbon Crรชpe Cake exists for people with more patience than me on a Tuesday.

Why the Can Beats the Carton

Canned coconut milk is an emulsion: coconut oil + water + a little fiber. That fat coats flour so gluten does not turn the cake into a sponge you could wash a car with. Carton coconut โ€œmilkโ€ is a beverage. Thin. Low fat. Fine in coffee. Mean in cake.

Light canned coconut milk is the middle child. More water, less cream. Cake bakes, then dries by day two. Full-fat stays soft three days on the counter. That is not a brand speech. That is fat doing fat things.

The cream in the can separates in the fridge. If you scoop only the thick cream, batter gets greasy and dense. If you pour only the watery part, cake gets tough. Stir the whole can until it looks like one liquid, then measure. I do this in the can with a fork. Fancy? No. Effective? Yes.

Two more coconut truths:

Unsweetened shredded coconut. Sweetened bagged coconut is sticky and extra sugar. It can make the crumb gummy. Unsweetened gives chew without turning the cake into candy.

Coconut oil firms up when cold. Fridge slices taste a little tighter, like pound cake. Ten minutes on the counter and they go soft again. That is physics, not a failed bake.

๐Ÿฅฅ Equipment I Need for Coconut Milk Cake

No stand mixer needed! Here are the 6 essential tools for mixing, baking, and topping a tender coconut cake.

Tool 1 โ€ข Baking & Release Commercial Aluminized Steel

USA Pan Bakeware Nonstick Round Cake Pan (9-Inch)

Commercial aluminized steel bakes an even golden crust without burnt edges. A parchment round and light oil swipe guarantee clean release. (8×8 square also works.)

Parchment Round: Line the bottom with parchment so the tender crumb drops out cleanly without sticking.

If you only have a loaf pan, it works. Bake 45โ€“55 minutes and tent foil if the top browns early. Loaf is snackier. Round is โ€œI meant to bake a cake.โ€

Can & Bowl

Cake:

  • All-purpose flour – 1 3/4 cups (220g), spooned and leveled
  • Granulated sugar – 1 cup (200g)
  • Baking powder – 2 tsp + Baking soda – 1/2 tsp + Fine sea salt – 1/2 tsp
  • Full-fat canned coconut milk – 1 can (13.5 oz / 400ml), well stirred – reserve 3 tbsp for glaze
  • Large eggs – 2, room temp
  • Neutral oil – 1/3 cup (80ml) – or melted coconut oil, slightly cooled
  • Pure vanilla extract – 1 tsp
  • Coconut extract – 1/2 tsp – optional, but this is how it tastes like a bakery, not just โ€œmoist white cakeโ€
  • Unsweetened shredded coconut – 3/4 cup (60g)

Simple coconut glaze:

  • Powdered sugar – 1 cup (120g), sifted
  • Reserved coconut milk – 2โ€“3 tbsp
  • Pinch salt
  • Toasted shredded coconut – 1/3 cup, for the top

Can tip: Look for coconut milk and coconut cream on the ingredient list, not โ€œcoconut waterโ€ first. Shake or stir until no lumps of cream remain. Extract tip: 1/2 tsp coconut extract is plenty. A full teaspoon tastes like sunscreen. I say this with love and experience.

Stir and Bake

1. Heat and line. 350ยฐF (175ยฐC). Grease pan, parchment on the bottom. Room-temp eggs mix smoother. Cold eggs from the fridge make the coconut fat seize into little specks. Still edible. Less pretty.

2. Stir the can, then mix wet.

Open the can. Stir until uniform. Scoop 3 tbsp into a small bowl for glaze. The rest goes in the mixing bowl with eggs, oil, vanilla, and coconut extract. Whisk until creamy. It will look a little thin. That is the milk. Do not panic-add flour yet.

3. Dry, then fold. Whisk flour, sugar, baking powder, baking soda, salt in the other bowl. Pour wet into dry. Fold with a spatula until just combined. Streaks of flour are okay. Overmixing = tunnel cake. Fold in shredded coconut with 4โ€“5 strokes.

4. Pan and bake.

Pour, smooth the top. Bake 32โ€“38 minutes (9-inch) or 35โ€“40 (8×8). Done when the top is golden, the center springs back, and a toothpick has a few moist crumbs. Wet batter = not yet. Bone-dry toothpick = you went too long and the edges will taste like toast.

Cool in pan 15 minutes, then rack. If you glaze a hot cake, the glaze becomes coconut soup. Tasty soup. Not a look.

5. Toast, glaze, slice.

Toast 1/3 cup shredded coconut in a dry skillet, medium, 2โ€“4 minutes, stir the whole time. Golden, not brown. It goes from โ€œniceโ€ to โ€œcampfireโ€ in ten seconds.

Whisk powdered sugar, 2 tbsp reserved coconut milk, pinch salt. Add milk 1 tsp at a time until thick but pourable. Spread on cooled cake. Coconut on top so it sticks.

Soft, milky coconut crumb, a little chew from the flakes, sweet glaze. Eat the first slice over the cutting board. That slice never legally existed.

Slice Next To

Coffee. Black coffee vs sweet coconut is a good fight.

Fruit on the side keeps it from feeling like frosting-only dessert: pineapple, mango, or berries. For brunch, this cake plus Lemon Blueberry Bread covers tropical and tart. Cinnamon people get coffee cake. If you are hosting and want to look like you tried too hard in a good way, the crรชpe cake on the same table makes this one look easy, which it is.

Whipped cream is optional. Ice cream is not wrong. I have eaten a slice cold from the fridge with a fork straight out of the pan like a raccoon who pays rent.

Cake Riffs

Lime coconut: 1 tbsp lime zest in the batter, lime juice in the glaze instead of some coconut milk. Vacation energy.

Chocolate chip coconut: 1/2 cup mini chips folded in last. Mini, so they do not all sink.

Layer cake: Split the recipe into two 8-inch pans, 22โ€“26 minutes. Fill with whipped cream or jam. More dishes. More drama.

Gluten-free: 1:1 GF baking flour, same grams. Rest batter 10 minutes before baking so the starches hydrate.

Less sweet: 3/4 cup sugar in the cake, skip glaze, just toasted coconut on top after a brush of leftover coconut milk.

Cupcakes: 14โ€“16 minutes at 350ยฐF, 12 liners, 3/4 full. Same batter, faster dopamine.

Cake, not a protein snack. Coconut milk and oil are why it stays moist. Unsweetened coconut adds a little fiber and a lot of โ€œthis actually tastes like coconut.โ€ Dairy-free as written (check your chocolate chips if you add them).

Wrap Soft

Coconut milk cake is a counter cake.

Room temp: Wrap or cake dome, 3 days. The oil and coconut fat keep it tender. Do not fridge unless your kitchen is hotter than the cake.

Fridge: Up to 5 days, well wrapped. It firms up. Sit 15โ€“20 minutes before eating so the coconut fat softens. Cold slices are tidy. Room-temp slices are better.

Freezer: Cool completely, wrap slices in plastic, freeze 2 months. Thaw on the counter 45 minutes. Glaze after thawing if you want it pretty. Glaze freezes okay, just a little dull.

Do not leave it cut-side naked. Wrap the cut face. Coconut cake dries from the wound. Very dramatic. Very preventable.

Dry Crumb Traps

Carton coconut milk. Beverage, not baking fat. Cake tastes like plain sweet bread. Canned, full-fat.

Unstirred can. One bite greasy, one bite dry. Stir until it is one liquid.

Overbaking. Coconut cake looks done a minute before it is dry. Pull at moist crumbs. Edges should be golden, not dark brown.

Overmixing after flour. Tunnels and a tight crumb. Fold, do not beat.

Sweetened shredded coconut plus full sugar plus thick glaze. Too sweet, slightly gummy. Unsweetened flakes. Taste the glaze. You can always add sugar. You cannot take it out.

Glazing hot. Glaze runs off, pools at the bottom, you mop it with extra coconut and call it rustic. Cool 30 minutes at least.

Skipping salt. Coconut plus sugar without salt tastes flat, like a candle. A half teaspoon in the batter is doing real work.

If you make this coconut milk cake, tell me if you used the extract. I can always tell. The extract people have a little more sparkle in their eyes. Or maybe that is just sugar.

Happy tropical baking, no plane ticket required!

Use the can, not the carton. Carton is beverage, low fat โ€” pale dry cake. Full-fat canned = emulsion of coconut oil + water + fiber that keeps crumb soft 3 days. Look for coconut milk/coconut cream first ingredient, not coconut water. Stir entire can with a fork until one liquid โ€” cream on top, water below; scoop only one = greasy or tough. Unsweetened shredded only โ€” sweetened bag = sticky gummy. 1/2 tsp coconut extract = bakery; 1 tsp = sunscreen.

02How to Cook

01
Heat & line

Oven to 350ยฐF (175ยฐC). Grease 9-inch round or 8ร—8 square, parchment on bottom or sling, swipe of oil. Room-temp eggs mix smoother โ€” cold eggs seize coconut fat into specks. Still edible, less pretty.

02
Stir can, mix wet

Open can, stir with a fork until uniform โ€” no lumps of cream. Scoop 3 tbsp into small bowl for glaze. In another bowl, whisk remaining coconut milk + 2 eggs + 1/3 cup oil + 1 tsp vanilla + 1/2 tsp coconut extract until creamy. Will look a little thin โ€” that’s the milk. Don’t panic-add flour.

03
Dry, then fold

In second bowl, whisk 1 3/4 cups flour + 1 cup sugar + 2 tsp baking powder + 1/2 tsp baking soda + 1/2 tsp salt. Pour wet into dry. Fold with spatula until just combined โ€” streaks of flour okay. Overmixing = tunnel cake. Fold in 3/4 cup unsweetened shredded coconut with 4โ€“5 strokes.

04
Pan & bake to moist crumbs

Pour, smooth top. Bake 32โ€“38 minutes (9-inch) or 35โ€“40 min (8ร—8). Done when top golden, center springs back, toothpick has a few moist crumbs. Wet batter = not yet. Bone-dry = you went too long, edges taste like toast. Loaf pan? 45โ€“55 min, tent foil if top browns early.

Cool in pan 15 minutes, then transfer to wire rack. If you glaze hot, glaze becomes coconut soup โ€” tasty soup, not a look.

05
Toast, glaze, slice

Toast 1/3 cup shredded coconut in dry skillet, medium, 2โ€“4 minutes, stir the whole time. Golden, not brown โ€” goes from nice to campfire in 10 seconds. Whisk 1 cup powdered sugar + 2 tbsp reserved coconut milk + pinch salt, add milk 1 tsp at a time until thick but pourable. Spread on cooled cake, sprinkle toasted coconut so it sticks. First slice over cutting board never legally existed.

03Notes

๐ŸฅฅCanned full-fat only

Carton = coconut water with marketing. Canned full-fat is emulsion that coats flour so cake stays tender, not car-wash sponge. Light canned dries by day two. Full-fat stays soft 3 days on counter. Stir can until one liquid โ€” not just cream, not just water.

๐ŸงตUnsweetened shreds

Sweetened bag = sticky + extra sugar = gummy crumb. Use unsweetened shredded coconut โ€” 3/4 cup in batter + 1/3 cup toasted on top for chew without candy sweetness. Toast 2โ€“4 min until golden โ€” 10 seconds too long = campfire.

๐ŸฅšRoom temp + just fold

Room-temp eggs blend smooth; cold seizes fat into specks. Whisk dry, pour wet, fold until just combined, streaks okay. Overmixing = tight tunnels. Fold coconut last 4โ€“5 strokes. That’s it.

โฑPull at moist crumbs

32โ€“38 min (9-inch), 35โ€“40 min (8ร—8). Golden top, springs back, toothpick few moist crumbs โ€” not wet, not bone-dry. Coconut cake looks done a minute before it is dry. Loaf 45โ€“55 min, tent foil. Overbaked = toast edges.

โœจGlaze cool, not hot

Cool 30 min before glazing โ€” hot cake turns glaze to soup that pools. Whisk 1 cup powdered sugar + 2โ€“3 tbsp reserved milk + pinch salt to thick but pourable. Spread on cooled cake, toasted coconut on top. Refrigerated slices? 10 min on counter to soften coconut oil.

๐Ÿ“ฆWrap soft 3 days

Counter cake dome or wrap โ€” 3 days (oil + coconut fat keep tender). Fridge 5 days โ€” firms up, sit 15โ€“20 min before eating. Freeze slices in plastic 2 months, thaw 45 min counter, glaze after thawing so it stays pretty. Always wrap cut face โ€” coconut cake dries from wound.
