Chocolate Spinach Muffins – Fudgy, Hidden Veggies & Kid-Approved

Chocolate Spinach Muffins

Chocolate spinach muffins sound like a dare. They are not. They are fudgy, moist, cocoa-dark muffins that taste like a brownie had a healthy week and still kept its personality. Two cups of spinach go in the blender. Zero spinach taste comes out. I have served these to grown adults who asked for the “double chocolate muffin recipe.” I smiled. I said nothing. That is called parenting energy, even if you do not have kids.

The trick is not magic. It is cocoa, ripe banana, and blending the greens until they disappear. You get fiber, a little iron, and a muffin that actually tastes like breakfast chocolate, not a green smoothie wearing a paper liner.

If you already love my Banana Chocolate Chip Muffins for that soft bakery crumb, these are the sneaky cousin. Same cozy muffin energy, extra handful of leaves. And if chocolate-for-breakfast is a lifestyle, my 3 Ingredient Brownies with Banana and Healthy Banana Oatmeal Cookies keep the same “sweet but not junk” lane.

Why Cocoa Makes the Spinach Vanish

Spinach is mostly water, a little fiber, and chlorophyll. Chlorophyll is green. Cocoa is dark brown and bitter-chocolate. Blend them and brown wins, the way coffee wins over a splash of milk. Ripe banana adds sugar and pectin so the crumb stays moist. Fat from oil or yogurt coats the leafy bits so you do not get that metallic “I can tell there is a vegetable in here” aftertaste.

Two more things that matter:

Blend the wet stuff first, flour last. If you dump flour in the blender and go full smoothie mode, you smash the gluten and get rubber muffins. Blend spinach + banana + eggs + cocoa until it looks like chocolate milk. Then fold flour by hand. Ten strokes. Walk away.

Baby spinach, not salad-bar spinach. Mature leaves are bitter and stemmy. Frozen spinach works only if you thaw it and squeeze it like it owes you rent. Watery spinach makes gummy muffins that steam instead of bake.

Cocoa needs to be a real amount. A sad tablespoon will not hide two cups of leaves. You want 1/3 cup unsweetened cocoa. That is the camouflage budget. Do not cheap out on camouflage.

🧁 Essential Kitchen Tools for Blender Spinach Muffins

You need almost nothing to make bakery-perfect spinach muffins! No stand mixer required. With just a high-powered blender to pulverize greens into a vibrant emulsion, muffin liners to protect the fudgy bottoms, and a gentle folding technique, you’ll get tender, fluffy muffins every single time.

Ninja Professional Plus Blender 1100W with 72oz Pitcher
Tool 1 • Pureeing & Emulsion 1100W High-Torque Crushing

Ninja Professional Plus Blender with Auto-iQ (1100W)

Pureeing fresh spinach into a silky, lump-free green liquid is the secret to tender muffins with zero stringy leaves or leafy bits. The Ninja Professional Blender packs 1100 watts of high-torque power and stacked Total Crushing blades that pulverize fibrous spinach, ripe bananas, yogurt, and eggs into a completely smooth, emerald emulsion in seconds.

The Vortex Catch Trick: Put your wet ingredients (yogurt, milk, eggs, bananas) into the blender pitcher first, followed by the spinach on top. The liquid creates an immediate downward vortex that pulls the fluffy leaves into the spinning blades without stalling.
OXO Good Grips Non-Stick Pro 12 Cup Muffin Pan
Tool 2 • Baking & Crust Protection Commercial-Grade Non-Stick

OXO Good Grips Non-Stick Pro 12-Cup Muffin Pan

Spinach muffins have a delicate, naturally moist crumb that easily sticks or tears. The OXO Good Grips Non-Stick Pro Muffin Pan is constructed from heavy-gauge aluminized steel that provides uniform heat distribution without burning edges. Paired with parchment paper or silicone baking liners, it guarantees that moist, fudgy muffin bottoms release cleanly and effortlessly.

Liners Are Mandatory: Because these spinach muffins have a dense, moisture-rich texture, baking directly in an unlined metal pan will cause the delicate bottoms to stick. Always drop parchment baking cups into the wells before scooping.
OXO Good Grips Medium Cookie and Batter Scoop
Tool 3 • Portioning & Drip Control Smooth Spring-Loaded Release

OXO Good Grips Stainless Steel Medium Cookie & Batter Scoop

Pouring thick green batter from a bowl or spoon leaves drips across the divider rims that burn into acrid smoke in your oven. The OXO Good Grips Batter Scoop features an ergonomic spring-loaded wiper that deposits identical portions into each well with zero mess, guaranteeing all 12 muffins bake evenly and rise to the exact same golden height.

The Three-Quarter Fill: Fill each liner exactly 3/4 full with one level scoop. Consistent portioning prevents oversized muffin caps from mushrooming into neighboring cups, giving each muffin a tall, bakery-style dome.
Pyrex Essentials 3-Piece Glass Mixing Bowls Set
Tool 4 • Gentle Folding & Texture Control Oven & Dishwasher Safe Glass

Pyrex Essentials 3-Piece Glass Mixing Bowls Set

Never use a mixer to combine flour with your green blender puree! Overmixing develops gluten proteins, turning tender muffins gummy, dense, and rubbery. The Pyrex Glass Mixing Bowls Set provides wide curved sides designed for effortless hand-folding with a flexible silicone spatula, allowing you to incorporate dry ingredients gently until just moistened.

The Gentle J-Fold: Use a silicone spatula to slice down the center of the bowl, sweep along the bottom curve, and fold the batter over itself. Stop the very second dry white flour streaks disappear (usually 15–18 gentle folds).
Checkered Chef Stainless Steel Cooling Racks Set of 2
Tool 5 • Moisture Evaporation & Crispness 100% Stainless Steel Cross-Wire Grid

Checkered Chef Stainless Steel Cooling Racks (Set of 2)

Leaving baked muffins inside a hot metal pan traps rising condensation, causing the moisture to pool at the bottom of the cups and turn the fudgy crumb soggy. The Checkered Chef Stainless Steel Cooling Racks feature an elevated cross-grid design that encourages 360-degree air circulation, allowing steam to evaporate cleanly so muffin bottoms remain firm and tender.

The 5-Minute Pan Rest: Let fresh muffins rest in the pan for exactly 5 minutes out of the oven to let the crumb structure set, then immediately transfer them to the wire rack. Leaving them in the pan any longer causes condensation to waterlog the bottoms.

What’s in the Bowl

Wet (blender):

  • Baby spinach – 2 packed cups (about 60g), fresh
  • Ripe bananas – 2 medium (about 1 cup mashed) – brown spots, not green
  • Large eggs – 2
  • Plain Greek yogurt – 1/2 cup (120g) – 2% or full-fat
  • Neutral oil or melted butter – 1/4 cup (60ml)
  • Maple syrup or honey – 1/4 cup (60ml) – or 1/4 cup sugar
  • Unsweetened cocoa powder – 1/3 cup (30g)
  • Pure vanilla extract – 1 tsp

Dry (bowl):

  • All-purpose flour – 1 1/2 cups (190g), spooned and leveled
  • Baking soda – 1 tsp + Baking powder – 1 tsp + Fine sea salt – 1/4 tsp
  • Chocolate chips – 1/2 cup (90g), plus extra for tops

Banana tip: Green bananas taste starchy and will not hide spinach. Use spotty ones, same as brownie-banana recipes. Cocoa tip: Natural cocoa is fine. Dutch-process is darker and hides color even better. Either works. Just measure 1/3 cup, not a casual sprinkle.

Blend Then Bake

1. Heat the oven. 350°F (175°C). Line a 12-cup muffin tin. If you skip liners, grease well. These are moist. They stick. They have no shame.

2. Blend until it looks like chocolate milk.

Spinach, bananas, eggs, yogurt, oil, maple, cocoa, vanilla. Blend 30–45 seconds until completely smooth. No green flecks. If you still see leaf bits, blend another 15 seconds. This is the whole “hidden” part. Do not rush it and then blame the recipe when a kid finds a stem.

3. Fold dry ingredients. Whisk flour, baking soda, baking powder, and salt in a bowl. Pour the chocolate mix in. Fold with a spatula until just combined. Streaks of flour are okay. Overmixing is how you get muffins that bounce.

4. Chips, scoop, bake.

Fold in most of the chocolate chips. Scoop batter 3/4 full. Extra chips on top so they look like bakery muffins, not “I put salad in dessert.” Bake 16–18 minutes. Toothpick should have moist crumbs, not wet batter. 20 minutes is usually too far. Chocolate muffins go dry in a blink.

5. Cool, then steal one.

5 minutes in the tin, then rack. Hot muffins tear. Warm muffins are a gift.

Dark crumb, melted chips, no green. If someone asks why they are so moist, you may mention yogurt and banana. You do not have to mention the plant.

Good With…

Coffee. Always coffee. These are not cupcake-sweet, so they sit well next to a mug.

For breakfast, two muffins plus Greek yogurt. For kids, one muffin and fruit, and you get to feel like a person who “does vegetables.” For a chocolate snack plate, add my Banana Chocolate Chip Muffins so nobody gets bored, and keep Healthy Banana Oatmeal Cookies in the jar for after-school raids.

They also pack well. Lunchbox, car, desk drawer. Slightly better than the 3pm vending-machine negotiation.

Switch It Up

Double chocolate: Add 2 extra tbsp cocoa + 2 tbsp milk so the batter does not get stiff.

Peanut butter swirl: 1/4 cup peanut butter, warmed, swirled on top before baking. Popeye would have approved. Probably.

High protein: Replace 1/4 cup flour with vanilla protein powder and add 1–2 tbsp milk. Texture gets a little drier, so do not overbake.

Gluten-free: 1:1 gluten-free baking flour. Oat flour works too (use 1 3/4 cups, it drinks liquid). Let oat batter sit 5 minutes before scooping.

No banana: 3/4 cup unsweetened applesauce + extra 2 tbsp maple. Milder, still moist, slightly less “brownie.”

Mini muffins: 10–12 minutes at 350°F. Kid lunchbox size. Watch them like a hawk at minute 9.

Not a kale salad. Still a muffin. Spinach adds volume, a little fiber, and micronutrients without turning this into health-food cardboard. Cocoa and banana do the flavor work. Chocolate chips do the “I will actually eat this” work.

Leftovers Plan

These stay soft because of banana, yogurt, and oil. Do not fridge them unless your kitchen is a sauna. The fridge dries muffins. It is a muffin bully.

Counter: Airtight container, 2 days. Paper towel under and over the muffins so condensation does not make tops wet.

Fridge: Up to 5 days if you must. 10 seconds in the microwave brings the crumb back.

Freezer: Cool completely. Freeze in a bag up to 2 months. Thaw on the counter 30 minutes or microwave 20–25 seconds. I freeze them in pairs. Future-you at 7am is very grateful.

Make-ahead batter: Do not. Baking soda starts working when wet meets dry. Scoop and bake the same day. You can blend the wet mix the night before, fridge it, then fold flour in the morning.

Skip These

Chopped spinach instead of blended. You will see green. Kids will see green. The muffin becomes a negotiation. Blend until smooth.

Frozen spinach, not squeezed. A block of icy spinach is a water balloon. Thaw, squeeze hard in a towel, then blend. Or just use fresh baby spinach and skip the drama.

Too little cocoa. 1 tbsp cocoa + 2 cups spinach = swamp muffin. 1/3 cup cocoa. Measure it.

Overbaking. 16–18 minutes. If the tops are dry and cracked like desert ground, they went too long. Pull them when a toothpick has moist crumbs.

Blending the flour. Rubber city. Fold by hand.

Telling picky eaters before they take a bite. Let the muffin do the talking. Confession is optional and, in my house, scheduled for after the second muffin.

If you make these chocolate spinach muffins, tell me if anyone spotted the greens. Mine never do. I still check the crumb like a detective. Old habits.

🍌 Blender camouflage budget — don’t cheap out

You need 1/3 cup (30g) unsweetened cocoa — that’s the camouflage budget. A sad tablespoon + 2 cups spinach = swamp muffin. Use baby spinach, not mature — less bitter, no stems. Ripe spotted bananas only — green tastes starchy and won’t hide greens. Weak blender? Chop spinach first or add a splash of the yogurt to help it catch.

02How to Cook

01
Heat & line

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners — these are fudgy and will stick. If you skip liners, grease well. No stand mixer needed.

02
Blend until chocolate milk

In blender or food processor, combine baby spinach, bananas, eggs, yogurt, oil, maple syrup, cocoa, and vanilla. Blend 30–45 seconds until completely smooth — it should look like chocolate milk with zero green flecks. Still see leaf bits? Blend another 15 seconds. This is the whole “hidden” part — don’t rush it.

03
Fold dry — 10 strokes

In a large mixing bowl, whisk 1½ cups flour, 1 tsp baking soda, 1 tsp baking powder, and ¼ tsp salt. Pour the chocolate blend in. Fold with a spatula until just combined — 10–12 strokes. Streaks of flour are okay. If you dump flour in the blender and blitz, you smash gluten and get rubber muffins.

04
Chips, scoop & bake

Fold in most of the 1/2 cup chocolate chips, reserve a few. Using an ice cream scoop, fill liners 3/4 full. Press extra chips on top so they look bakery. Bake 16–18 minutes — toothpick should have moist crumbs, not wet batter. 20 minutes is usually too far — chocolate muffins go dry in a blink. Mini muffins: 10–12 minutes, watch at minute 9.

05
Cool — then steal one

Cool 5 minutes in the tin, then transfer to a wire rack so bottoms don’t go soggy. Hot muffins tear — warm muffins are a gift. Dark crumb, melted chips, no green. If someone asks why they’re so moist, you may mention yogurt and banana. You don’t have to mention the plant.

03Notes

🥬Baby spinach only

Chopped ≠ blended. You will see green, kids will see green. Baby spinach 30–45 sec until no flecks. Frozen only if thawed and squeezed like it owes you rent — watery spinach = gummy muffins that steam. Mature stems are bitter.

🍫1/3 cup cocoa is mandatory

1 tbsp cocoa + 2 cups spinach = swamp muffin. Use 1/3 cup (30g) unsweetened cocoa. Dutch-process hides color even better than natural. Either works — just measure full 1/3 cup, not a sprinkle.

🥄Fold, don’t blitz flour

Blending flour = rubber city. Whisk dry, pour wet, fold 10–12 strokes until just combined. Streaks okay. Overmixing smashes gluten and bounces the muffin. Walk away from the spatula.

⏱Don’t overbake

16–18 minutes. If tops are dry and cracked like desert ground, they went too long. At 20 min they’re dry. Pull when toothpick has moist crumbs. Chocolate goes from fudgy to cardboard in a blink.

📦Stay soft, not soggy

Banana + yogurt + oil = soft 2 days. Counter airtight 2 days with paper towel under & over. Fridge up to 5 days but it dries — microwave 10 sec. Freeze up to 2 months in pairs; thaw 30 min or 20–25 sec. Don’t make batter ahead — baking soda fires when wet.

✨Switch it up — still hidden

Double choc: +2 tbsp cocoa +2 tbsp milk. PB swirl: 1/4 cup peanut butter warmed on top. High protein: swap 1/4 cup flour for vanilla protein +1–2 tbsp milk. Gluten-free: 1:1 flour or 1 3/4 cups oat flour (rest 5 min). No banana: 3/4 cup applesauce +2 tbsp maple.
