How to Make Sheet Pan Pancakes
This is so easy it feels like cheating.
STEP 1: Mix batter
Preheat oven to 425°F (220°C). Line sheet pan with parchment, lightly grease.
In large bowl, whisk flour, baking powder, sugar, salt. In another bowl or large measuring cup, whisk milk, eggs, melted butter, vanilla.
Pour wet into dry and whisk until just combined - small lumps are okay! Overmixing makes tough pancakes. Batter will be slightly thick but pourable, like regular pancake batter.
STEP 2: Pour into pan
Pour batter into prepared sheet pan and spread evenly to corners with spatula. It will be thin layer - that’s normal, it puffs up.
Give pan a gentle tap on counter to release air bubbles.

1. Don’t overmix. Lumps are good. Overmixed = chewy, flat pancakes. Whisk until just combined, 15-20 strokes.
2. Hot oven, short bake. 425°F seems high but it’s key for fluffy lift. Low oven = dense. Bake only 12-15 min, check early.
3. Use parchment + light grease. Pancakes love to stick. Parchment makes lifting and cutting easy and cleanup is 10 seconds.
Variations & Toppings
