Simple pantry stuff, nothing fancy.
For the pumpkin pie cupcakes:
- All-purpose flour - 1 3/4 cups (220g) - spooned & leveled
- Baking powder - 1 tsp + Baking soda - 1/2 tsp
- Fine sea salt - 1/2 tsp
- Ground cinnamon - 1 1/2 tsp
- Ground nutmeg - 1/2 tsp
- Ground ginger - 1/2 tsp
- Ground cloves - 1/8 tsp
- Granulated sugar - 3/4 cup (150g)
- Light brown sugar - 1/2 cup (100g), packed - adds that pie-like caramel note
- Vegetable oil - 1/2 cup (120ml) - keeps them moist like my pumpkin bars
- Canned pumpkin puree - 1 cup (225g), 100% pumpkin - not pie filling!
- Large eggs - 2 + 1 yolk - extra yolk = extra soft & rich
- Pure vanilla extract - 2 tsp
- Whole milk - 1/4 cup (60ml)
For the cream cheese frosting (my go-to):
- Full-fat cream cheese - 8 oz (225g), softened
- Unsalted butter - 4 tbsp (56g), softened
- Powdered sugar - 2 1/2 cups (300g), sifted
- Vanilla - 1 tsp + Cinnamon - 1/4 tsp + Pinch salt
- Heavy cream - 1-2 tbsp if needed

How to Make Pumpkin Pie Cupcakes
STEP 1: Mix dry & wet
Preheat oven to 350°F (175°C). Line muffin tin with 12 liners.
In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves. In another bowl, whisk both sugars, oil, pumpkin puree, eggs + yolk, vanilla, and milk until smooth and glossy. About 60 seconds.
Pour wet into dry and fold gently 12-15 strokes until no dry streaks. Batter will be thick, smooth, orange-brown. Don’t overmix or cupcakes get tough.
STEP 2: Fill liners
Divide batter evenly among 12 liners - fill 3/4 full. They rise nicely. If you want bakery-tall tops, fill a tiny bit more.
Bake 18-22 minutes. At 18, test with toothpick - you want moist crumbs, not wet batter. They should spring back when lightly touched. They’ll look slightly soft on top - perfect, they set as they cool.
Cool in pan 5 minutes, then move to wire rack to cool completely. Must be fully cool before frosting or frosting slides off (learned that the hard way, twice).
STEP 3: Make frosting & frost
Beat cream cheese and butter 2-3 min until fluffy and smooth. Add powdered sugar in two batches on low, then vanilla, cinnamon, salt. Add cream 1 tsp at a time until pipeable but thick enough to hold swirl.
Pipe or spread onto completely cooled cupcakes. Dust with cinnamon if you’re feeling fancy.
STEP 4: The cozy moment
Look at that crumb - moist, soft, orange, smells like pie. This is the money shot. Soft & cozy indeed.

3 Rules for Pumpkin Pie Texture (Not Just Pumpkin Cake)
1. Extra pumpkin + extra yolk. Most cupcake recipes use 1/2 cup pumpkin. We use 1 full cup + extra yolk. That’s what gives that custardy, pie-like center instead of just spiced cake.
2. Oil, not butter, in batter. Same reason as my pumpkin bars - oil keeps crumb soft and moist for days, especially when refrigerated. Butter firms up.
3. Don’t overbake. Pumpkin cupcakes go from perfect to dry fast. Pull at 18-19 min when toothpick has moist crumbs. They carryover-cook.
Variations
Pumpkin Pie Cupcakes with Graham Crust: Press 1 tsp graham cracker crumbs (crumbs + melted butter) into bottom of each liner before adding batter. Tastes exactly like pie crust!
