Healthy breakfast bars are oatmeal you can hold. Rolled oats, maple or honey, nut butter, a banana, one egg. You mix it in a bowl, press it in a pan, bake it, and cut it when it cools. That is the whole job.
I make a pan on Sunday because weekday mornings are already loud. These are not a protein-powder brick and they are not candy pretending to be breakfast. Maple and honey are still sugar. They just skip the white bag and keep the bars moist. Eat one with coffee. Pack a second if lunch is late.
Jar breakfast that soaks overnight: Coconut Cream Pie Overnight Oats. Higher protein in a cup: Cottage Cheese Chia Pudding. Same oat-and-banana idea as a cookie: Healthy Banana Oatmeal Cookies.
Why rolled oats, and why you still need a binder
Old-fashioned rolled oats hold their shape. Instant oats turn to paste. Steel-cut oats stay hard unless you soak them first, which defeats the “easy” part. Use rolled.
Honey and maple hold water. That is why the bars stay chewy on day three instead of turning into particle board. They are sweeter than a plain oat cake. If you cut the maple to 2 tablespoons, add extra banana or the mix will not stick.
Nut butter and banana are glue. The egg helps set the middle so you can pick a square up without wearing it. Skip all three and you have granola that never met. Natural peanut butter (the kind you stir) works. No-stir is easier and a little sweeter. Almond butter works. Sunflower seed butter works if nuts are a problem. Say which one you used if you are sharing the pan.
Chia or flax soaks a bit of moisture and adds fiber. Two tablespoons is enough. Four tablespoons is a dry, seedy slab.
Do not bake until the top looks like a cookie. Pull when the edges are set and the center still looks slightly soft. They firm as they cool. Overbake and you have healthy hockey pucks, which is a phrase I have earned.

🌅 Sheet & Bowl for Easy Healthy Breakfast Bars
Five simple tools for thick, sliceable bars: one pan, one bowl, and no mixer required.
Pyrex Bakeware 8-Inch Square Cake Pan
The 8×8 pan keeps the middle thick; a 9×13 makes thin bars. Same mix, bake 16 to 20 minutes, cut 16.
Reynolds Kitchens Unbleached Parchment Paper Roll
Parchment with overhang lets the whole slab of bars lift out of the pan in one piece before cutting.
Pyrex 4.5-Quart Sculpted Glass Mixing Bowl
One sturdy bowl is all the mixing you need; this recipe needs no mixer at all.
OXO Good Grips Silicone Everyday Spatula
A fork or a spatula mixes the dough and spreads it evenly into the corners of the pan.
Victorinox Fibrox Pro 8-Inch Chef’s Knife
A sharp knife cuts the slab into 16 clean bars once it has cooled and set.
Morning List
- Old-fashioned rolled oats – 2 cups (180g) – not instant, not steel-cut
- Natural peanut butter or almond butter – 1/2 cup (130g), stirred
- Maple syrup or honey – 1/3 cup (80ml)
- Ripe banana – 1 medium, mashed (about 1/2 cup / 120g)
- Large egg – 1
- Pure vanilla extract – 1 tsp
- Ground cinnamon – 1 tsp
- Fine sea salt – 1/4 tsp
- Chia seeds or ground flax – 2 tbsp
- Optional mix-ins – 1/3 cup total: chopped walnuts, pumpkin seeds, raisins, or dark chocolate chips
Oat tip: 2 cups means 180g. A packed mug of oats is more than that and the bars come out dry. Banana tip: Brown spots are good. Green bananas do not mash and they taste like starch.
Mix, Press, Bake
1. Heat and line. Oven 350 F (175 C). Parchment in the 8×8, extra hanging over two sides.
2. Wet mix.
Mash the banana in the bowl. Stir in peanut butter, maple or honey, egg, vanilla, cinnamon, and salt until it looks mostly even. Streaks of nut butter are fine. Dry clumps of banana are not.
3. Oats. Add oats and chia. Stir until every flake looks damp. Fold in mix-ins if you are using them. The mix should be thick and sticky, not pourable. If it looks dry and crumbly, add 1 tablespoon maple or a splash of milk. If it looks wet like batter, add 2 tablespoons oats.
4. Press.
Scrape into the pan. Wet your fingers or use a spatula. Press hard, especially corners. Loose mix bakes into crumbs, not bars.
5. Bake and cut. 22 to 26 minutes. Edges brown. Center springs back a little and still looks soft. Cool in the pan 15 minutes, then lift the parchment. Cool another 15 minutes. Cut 12.
Hot bars crumble. Cold bars cut. I know waiting is annoying. The first one you cut too soon teaches you.
Chewy oats, maple, a little salt. Coffee. Or the car, one-handed, over a napkin.
Grab Cold
These are breakfast. Fruit on the side if you want. Yogurt if you want more protein.
Overnight oats in a jar: Coconut Cream Pie Overnight Oats. Spoon dessert that is actually protein: Cottage Cheese Chia Pudding. Cookies with the same banana-oat idea: Healthy Banana Oatmeal Cookies.
Oats (gluten unless certified GF), egg, and peanuts or almonds if you used those butters. Say nuts. Honey is not for babies under 1 year. Maple is fine there, but these still have egg.
Bake Riffs
Nut-free: Sunflower seed butter. Same amount. It can turn a little green with baking soda; we are not using soda, so you are fine.
No banana: 1/2 cup unsweetened applesauce. Slightly wetter. Add 2 extra tablespoons oats if it looks loose.
Higher protein: Stir in 1 scoop unflavored or vanilla protein powder and 2 extra tablespoons milk so it is not dusty.
Chocolate chip: 1/3 cup dark chips. Still breakfast if you say it is.
Apple cinnamon: 1/2 cup finely chopped apple, squeezed dry, plus an extra 1/4 tsp cinnamon.
9×13 thin: Same recipe, 16 to 20 minutes, 16 rectangles. Better for a crowd. Easier to overbake.

This is breakfast, not a 90-calorie rice cake. Maple and banana are the 9 grams of sugar. Chips push it up. Twelve bars from an 8×8 is a week of grab-and-go if you do not eat two on Sunday night.
Week Box
Fridge: Airtight, 5 days. Best on day 1 and 2. Day 5 is drier. Ten seconds in the microwave helps.
Room temp: 2 days in a cool kitchen. Summer counters make them greasy.
Freezer: Wrap individually, 2 months. Thaw in the fridge overnight or 20 minutes on the counter. Pack frozen. It will be ready by the time you sit down.
Cool completely before boxing. Warm bars sweat, then go soggy.
Parchment between layers if you stack them. They stick.
Crumb Bar Traps
Instant oats. Mush. Rolled.
Packed extra oats. Dry. 180g.
Skipping the binder. Crumbs, not bars. Banana plus nut butter plus egg.
Stir-the-jar peanut butter, not stirred. Oil slick on top, dry paste below. Stir the jar.
Baking until crisp. Hockey pucks. Pull while the center looks a bit soft.
Cutting hot. Crumble city. Thirty minutes.
No parchment. You will leave breakfast in the pan.
Green banana. Starchy, will not mash.
Calling them sugar-free. Maple and honey are sugar. They are just not white sugar.
If you make these healthy breakfast bars, say whether you went maple or honey. Maple tastes like breakfast. Honey tastes a little floral. I use maple because the bottle is already open for oatmeal.

Ingredients 01
2 cups = 180g. A packed mug is more and bars come out dry. If mix looks crumbly, add 1 tbsp maple or splash milk; if wet like batter, add 2 tbsp oats. Brown-spotted banana mashes and tastes sweet; green banana = starch. Stir the nut butter jar — oil on top, paste below.

How to Cook 02
Oven 350°F / 175°C. Line 8×8 with parchment overhang on 2 sides. 9×13 makes thin bars — same mix, 16–20 min, cut 16.
Mash banana in bowl till smooth. Stir in ½ cup nut butter + ⅓ cup maple/honey + 1 egg + 1 tsp vanilla + 1 tsp cinnamon + ¼ tsp salt till mostly even. Streaks of nut butter fine; banana lumps not.
Add 2 cups oats + 2 tbsp chia/flax. Stir till every flake looks damp. Fold in ⅓ cup mix-ins if using. Thick, sticky — not pourable. Dry? 1 tbsp maple. Wet? 2 tbsp oats.
Scrape into pan. Wet fingers or spatula — press hard, corners too. Loose mix bakes into crumbs, not bars. Flat and even so middle and edges bake together.
Bake 22–26 min: edges brown, center springs back a little and still looks slightly soft. They firm as they cool. Cool 15 min in pan, lift parchment, cool 15 more. Cut 12 bars. Hot = crumble city. Overbake = hockey pucks.
Notes 03
Old-fashioned rolled. Instant = paste. Steel-cut = hard unless soaked (defeats easy). 2 cups is 180g — packed mug = dry bars.
Brown spots good; green = starch that won’t mash. No banana? ½ cup applesauce + 2 tbsp extra oats if loose. Honey not for babies <1 yr.
Banana + nut butter + egg. Skip all three = granola that never met. Natural butter must be stirred; sunflower butter works nut-free (no soda here, so no green).
2 tbsp chia/flax is enough. 4 tbsp = dry seedy slab. Maple + honey hold water so bars stay chewy day 3 — cut maple to 2 tbsp and they won’t stick without extra banana.
Pull while center looks slightly soft. They firm cooling. Crisp top = pucks. Cool 30 min total — hot bars crumble. Press hard or they stay crumbly.
Fridge 5 days (best 1–2), room temp 2 days, freezer 2 mo wrapped. Cool completely before boxing or they sweat soggy. 9×13 = 16 thin bars, 16–20 min, easier to overbake.
