Lemon Coconut Cheesecake Cookies – Soft, Tangy & Chewy

Lemon Coconut Cheesecake Cookies

Lemon coconut cheesecake cookies are the cookie that went on vacation and came back with a tan and a better personality. Cream cheese in the dough (that is the cheesecake part, not a whole New York slice hiding inside). Lemon zest, not just a sad squeeze of juice. A roll in shredded coconut so every edge chews. Soft centers. Thick, not pancake.

This is the batch I make when I want lemon but I am tired of shortbread, and I want coconut but I do not want to frost a cake. One mixer. Chill the dough so the cream cheese does not melt into cookie puddles. Bake until the edges just kiss gold. If they look โ€œdoneโ€ like a chocolate chip cookie, you waited too long. These stay pale. Pale is correct. Pale is cheesecake.

If you want melt-in-your-mouth lemon without coconut, Lemon Meltaways are the powdered-sugar cousins. Coconut in cake form is Coconut Milk Cake. Mini lemon custard energy: Baby Lemon Impossible Pies.

Why Cream Cheese Spreads (and Why Zest Beats Juice)

Cream cheese is water plus fat plus tang. Water in cookie dough is spread. Fat is tenderness. Tang is why these taste like cheesecake and not like โ€œlemon sugar cookies that joined a gym.โ€ Softened cream cheese mixes smooth. Cold cream cheese stays as lumps that bake into greasy craters. Whipped tub cheese is aerated and salty in a different way. Use the brick.

Chill is not a suggestion. Forty-five minutes in the fridge lets the butter and cream cheese firm up so the balls hold a dome. Skip the chill and you get lemon coconut lace. Still edible. Not the photo. Not the chew.

Lemon flavor lives in the zest oils. Juice is acid and water. Two tablespoons of juice brightens the dough. A cup of juice makes soup. Zest two lemons (about 1 tablespoon packed). Yellow only. White pith is bitter and will make people ask if you used cleaning spray.

Coconut inside the dough soaks a little moisture, which helps thickness. Coconut on the outside toasts in the oven and tastes like a macaroon shook hands with a cheesecake. Sweetened shred is the grocery default and browns nicely. Unsweetened is drier and less sticky for rolling. Either works. Do not use coconut flour. That is a different, thirstier ingredient and it will drink your dough.

Baking powder for a little lift. A pinch of baking soda for browning. Too much soda and they taste like pretzels. One egg binds. Two eggs make cakey puffs.

  • Prep Time: 20 minutes
  • Chill Time: 45 minutes
  • Bake Time: 11โ€“13 minutes per sheet
  • Total Time: about 1 hour 20 minutes
  • Yield: 24 cookies

Tray & Mixer

You need:

  • Hand mixer – or a wooden spoon and optimism
  • Mixing bowl
  • Microplane or fine zest grater
  • Cookie sheets + parchment
  • 1.5-tablespoon scoop – or a heaping tablespoon
  • Shallow bowl – for the coconut roll

No mixer? Beat the butter and cream cheese with a spatula until it looks like frosting. Your arm will know it did something.

Zest List

  • Unsalted butter – 1/2 cup (113g), soft
  • Full-fat cream cheese – 4 oz (113g), brick, soft – not whipped tub
  • Granulated sugar – 3/4 cup (150g)
  • Large egg – 1, room temp
  • Lemon zest – 1 tbsp packed – about 2 lemons
  • Fresh lemon juice – 2 tbsp
  • Pure vanilla extract – 1 tsp
  • Coconut extract – 1/4 tsp, optional
  • All-purpose flour – 2 cups (250g) – spoon and level
  • Baking powder – 1/2 tsp
  • Baking soda – 1/4 tsp
  • Fine sea salt – 1/2 tsp
  • Sweetened shredded coconut – 1 cup (80g) in the dough, plus 3/4 cup (60g) for rolling

Optional glaze:

  • Powdered sugar – 3/4 cup (90g)
  • Lemon juice – 1โ€“2 tbsp

Zest tip: Zest first, juice second. The other order is how you try to grate a deflated lemon and question your life. Coconut tip: If the shreds are long, chop them once so rolling is even and nobody gets a three-inch coconut beard.

Mix, Fill, Bake

1. Beat the cheesecake base.

Butter and cream cheese on medium until smooth, 1โ€“2 minutes. No lumps. Sugar, 1 minute, a little fluffy. Egg, zest, juice, vanilla, coconut extract if using. It may look slightly curdled from the juice. Keep going 15 seconds. Flour, baking powder, baking soda, salt on top. Mix on low until just combined. Fold in 1 cup coconut. Dough is soft. That is cream cheese being cream cheese.

2. Chill. Cover. Fridge 45 minutes (up to 24 hours). If you scoop now, they flatten. If you freeze the balls, add 1โ€“2 minutes in the oven later.

3. Heat and roll.

Oven 350ยฐF (175ยฐC). Parchment on two sheets. Scoop 1.5-tablespoon balls. Roll in the extra coconut. Place 2 inches apart. They spread a little. They should not hold hands.

4. Bake pale.

11โ€“13 minutes. Edges set and barely gold. Centers look soft and slightly puffy. Coconut toasts. If the whole cookie is brown, it is a lemon biscuit now. Cool on the sheet 5 minutes, then a rack. They firm as they cool. That is the cheesecake set, not you underbaking forever.

5. Glaze if you want. Whisk powdered sugar and lemon juice to a thick drizzle. Zigzag. Let it set 15 minutes. Or skip it and eat them warm like a person with no patience. I respect both.

Tangy, coconut-chewy, soft middle. Room temp is the cheesecake moment. Warm is gooey. Cold from the fridge is a different, fudgier lemon. I do not judge the fridge people.

Eat Cool

Iced tea. Or coffee if you like lemon with bitter. These are not a milk-dunk cookie unless you like coconut in your glass.

Lemon people already know Lemon Meltaways. Cake people who want coconut without rolling 24 balls: Coconut Milk Cake. If you need a fork dessert, Baby Lemon Impossible Pies bake themselves into layers.

Contains wheat, dairy, eggs, and coconut (tree nut for some labels). Say coconut out loud. It is not a surprise ingredient. Extra napkins. Shreds travel.

Cookie Riffs

Lime coconut: Swap lime zest and juice. Vacation cookie. Same chill.

Lemon glaze only, no roll: Skip the outer coconut if someone hates the texture. Keep coconut in the dough.

Thumbprint: Press a thumb, fill with lemon curd after baking. Messy. Popular.

White chocolate chips: 1/2 cup folded in. Sweeter. Still chill.

Toasted coconut roll: Toast the rolling coconut 5 minutes at 325ยฐF first. Deeper flavor. Watch it. Coconut burns while you check your phone.

Gluten-free: 1:1 GF baking blend, same weight. Dough may need an extra tablespoon if it is sticky. Still chill.

Cookies. Twenty-four is a tray, not a suggestion to eat twenty-four. Glaze adds about 15 kcal. The โ€œtasterโ€ that was three cookies is also not in the table.

Jar Days

Room temp: Airtight, 3 days. Softest on day one. Coconut stays chewy.

Fridge: 5 days. Firmer, more cheesecake. 10 seconds in the microwave if you want the middle soft again.

Freezer: Baked cookies 2 months, or freeze scooped balls and bake from frozen + 1โ€“2 minutes. Roll in coconut before freezing so it sticks.

Do not leave them on a hot counter in July. Cream cheese dough gets greasy. A tin is not optional.

Travel: Cool completely. Parchment between layers. Warm stacked cookies become one coconut brick. Romantic. Hard to share.

Flat Cookie Traps

Skipping the chill. Pancakes. 45 minutes.

Whipped tub cream cheese. Soft, salty, spread. Brick.

Cold cream cheese lumps. Soften. Beat with butter first.

Only lemon juice, no zest. Weak perfume. Zest is the flavor.

Packed flour. Dry, cakey. Spoon and level 250g.

Baking until brown. Dry. Pull pale.

Coconut flour instead of shreds. Thirsty disaster. Shreds only.

Greased dark pan, no parchment. Extra spread and dark bottoms. Parchment.

Old baking powder. No lift. If it does not fizz in hot water, buy a new tin.

If you make these lemon coconut cheesecake cookies, tell me if you went glaze or naked coconut. The glaze people want shine. The coconut-roll people want chew. I roll, then drizzle anyway. I am not well, and the tin is empty by Thursday.

03
Heat and roll

Heat to 350ยฐF (175ยฐC). Parchment on 2 sheets. Scoop 1.5-Tbsp balls. Roll in ยพ cup coconut in shallow bowl. Place 2 inches apart โ€” they spread a little, they should not hold hands.

Notes 03

๐Ÿง€Why cream cheese spreads

Water + fat + tang. Soft brick mixes smooth, cold brick = greasy lumps/craters. Whipped tub is aerated and salty. Room-temp brick is the cheesecake, not a slice hiding inside.

๐ŸงŠChill is not optional

45 min firms butter + cream cheese so balls hold a dome. Skip = lace. Freeze scooped balls and bake +1โ€“2 min. Still roll in coconut before freezing so it sticks.

๐Ÿ‹Zest beats juice

Zest oils = perfume. Juice = acid + water. 2 tbsp brightens, a cup makes soup. Zest 2 lemons (~1 tbsp packed), yellow only โ€” white pith is bitter cleaning-spray vibes.

๐ŸฅฅCoconut inside + outside

1 cup in dough soaks moisture for thickness. ยพ cup roll toasts like macaroon-cheesecake handshake. Sweetened shred browns nicer. Donโ€™t use coconut flour โ€” it drinks your dough.

โฑ๏ธBake pale

11โ€“13 min, edges barely gold. Centers soft/puffy, firm as they cool. Brown all over = dry. Too much soda = pretzel taste. Parchment, not greased dark pan.

โœจJar days & riffs

Room temp 3 days, fridge 5, freezer 2 mo. 10 sec microwave softens fridge chew. Riffs: lime zest/juice, thumbprint curd, ยฝ cup white chips, toasted-coconut roll, 1:1 GF blend.
